1 tablespoon vegetable oil
4 (6 ounce) pork tenderloins
1 (16 ounce) package sauerkraut, drained
1 cup water
6 fluid ounces apple juice
2 teaspoons fennel seed
12 red new potatoes, halved

Steps:

  • Heat oil in a pressure cooker over medium heat; brown pork tenderloins in the hot oil, about 5 minutes per side. Distribute sauerkraut around the pieces of pork and pour in water and apple juice; sprinkle with fennel seeds.
  • Cover pressure cooker and bring to full pressure; cook for 15 minutes. Remove from heat and release the pressure according to manufacturer's instructions. Place potatoes into the cooker, reseal, and bring back up to full pressure over medium heat; cook at full pressure for 5 more minutes. Remove from heat, release pressure, and serve.

4 pounds (~1.8 kg) pork shoulder picnic (cut into 4 - 8 pieces)
1 tablespoons (15ml) olive oil
2 tablespoons (25g) brown sugar
2 teaspoons (5g) chili powder
2 teaspoons (4g) black pepper
1 teaspoon (2.4g) onion powder
1 teaspoon (2.8g) garlic powder
1 teaspoon (2.3g) cinnamon powder
1 teaspoon (3g) kosher salt
½ teaspoon (1g) cumin seed (, ground)
½ teaspoon (1g) fennel seed (, ground)
¼ teaspoon (0.5g) cayenne pepper
1 medium onion (, minced)
3 garlic cloves (, minced)
1 cup (250ml) ketchup
½ cup (125ml) water
⅛ cup (31ml) maple syrup
⅛ cup (31ml) honey
2 tablespoons (30ml) apple cider vinegar
2 tablespoons (30ml) Dijon mustard
1 tablespoon (12.5g) brown sugar

Steps:

  • Rub Pulled Pork Dry Rub: Mix all the dry rub ingredients and rub it all over the pork shoulder picnic pieces. Then, put the pork shoulder picnic in the fridge for 30 minutes to overnight.
  • Heat up Pressure Cooker: Heat up your pressure cooker (Instant Pot: press Sauté button). Make sure your pot is as hot as it can be when you place the pork shoulder meat into the pot (Instant Pot: wait until the indicator says HOT).
  • Optional Step - Brown Pork Shoulder (See Tips): Add 1 tbsp (15 ml) olive oil into the pot. Ensure to coat the oil over the whole bottom of the pot. Add the pork shoulder pieces into the pot. Brown the pork shoulder on all sides. Remove and set aside.
  • Add BBQ Sauce and Deglaze: Pour in half of the Pulled Pork BBQ Sauce and deglaze the bottom of the pot. Then, add in the remaining BBQ sauce mixture.
  • Pressure Cook Pork Shoulder (See Tips): Place all the pork shoulder pieces into the pot. If you left the skin on, make sure the skin side is facing up. Close lid and pressure cook at High Pressure for 60 minutes (see notes). Turn off the heat and fully Natural Release (roughly 15 minutes).
  • Fork Tender Check: Open the lid carefully. Take one piece of pork shoulder out and see if you can shred through the meat easily with two forks. If it is not fork-tender, cook for an additional 10 to 20 minutes at High Pressure, fully Natural Release.
  • Shred Pork & De-Fat the Sauce: Use some cool Pulled Pork Shredder Claws or two regular forks to shred the pork shoulder meat. Use a fat separator to separate the fat from the BBQ sauce.
  • Season, Reduce, Serve: Reduce the BBQ sauce to your desired thickness. Taste the BBQ sauce and add in additional brown sugar or kosher salt if desired. Place the pulled pork back into the BBQ sauce. Mix well and serve!

1/4 cup plus 2 tablespoons water, divided
1/4 cup balsamic vinegar
1 tablespoon minced fresh rosemary
3 garlic cloves, minced

  • In a small bowl, whisk brown sugar, 1/4 cup water, vinegar, rosemary, garlic and soy sauce; set aside. Select saute or browning setting on a 6-qt. electric pressure cooker. 1-2 cups Apple Juice
Seasoning of choice (I like the already marinated tenderloins)

Steps:

  • If you have the Insta-rack. Wrap the tenderloins around the rack. If not, you can wrap around the pot or the trivet. May be awkward but can be done.
  • If you do happen to have the Insta-rack, you can add your white potatoes to the skewers. If they are large potatoes, I cut them in half.
  • Add apple juice to the pot.Set rack in pot and set to High Pressure for 18 minutes.
  • Let Natural release for 3 minutes. Then do a manual quick release.
  • Remove from pot and then set all on a platter to serve. Pour the Apple juice from pot over pork. ENJOY!

1 tablespoon (14.5g) unsalted butter or olive oil
1 cup (250ml) unsalted chicken stock
Salt & black pepper to taste
1 teaspoon (0.5g) dried oregano
1 teaspoon (2g) dried sage
1 teaspoon (1g) dried rosemary
3 (14.6g) garlic cloves (, finely minced)
2.5 tablespoons (22.5g) cornstarch
3 tablespoons (45ml) cold water

Steps:

  • Brown Pork Tenderloin: Heat up Instant Pot using Sauté More function. Wait until it says HOT (~8 mins). Pat dry, then generously season one side of pork tenderloin with salt + black pepper. Drizzle the inner pot with 1 tbsp unsalted butter or olive oil. Then, brown the seasoned side of pork tenderloin. Season the other side with more salt + black pepper. *Pro Tip: Brown 2 sides of pork tenderloin for 2 mins per side.
  • Pressure Cook Pork Tenderloin: Set aside the pork. Add 1 cup (250ml) unsalted chicken stock, then deglaze the bottom of the pot. Turn off the heat briefly. In a small bowl, mix 1 tsp (0.5g) dried oregano, 1 tsp (2g) dried sage, 1 tsp (1g) dried rosemary, and 3 (14.6g) finely minced garlic cloves together. Apply Dry Rub to all sides of the browned pork tenderloin, then place pork in Instant Pot. Pressure Cook at High Pressure for 0 minute, then 15 minutes Natural Release. *Note: 0 minute (zero minute) is not a typo! We're using the heat from "Pressurize" Stage & "Depressurize" Stage to cook the pork tenderloin. We tested various pork tenderloin in Instant Pot to find this best cooking time & method. 1 pork tenderloin, 1.25lb - 1.5lb
2 tablespoons brown sugar
2 teaspoons course ground black pepper (use less to taste preference - see note at bottom)
1 1/4 teaspoons salt
1 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 cup chicken broth
1/2 tablespoon Worcestershire sauce
1 teaspoon Liquid Smoke

Steps:

  • Let pork tenderloin stay in package out of fridge for 15-20 minutes. Remove tenderloin from package and rinse and pat dry. Trim any visible fat. Cut tenderloin into 2 pieces of equal length.
  • Coat each piece with about 1 teaspoon each of olive oil. In a small dish, combine all dry ingredients and mix well. Apply the rub liberally onto meat.
  • Set Instant Pot to Saute mode. When hot, add meat and brown each side for a couple of minutes each. When all sides are browned, press Cancel and remove meat to a plate. Add the chicken stock to the pot and use a wooden spoon to scrape all the bits from the bottom of the pot. Add the Worcestershire sauce and liquid smoke to the chicken broth.
  • Place meat directly into the liquid, secure lid, set the vent to "sealing". Pressure cook (manual) on high pressure for 3 minutes. When cycle is complete, allow pressure to naturally release for 15 minutes. Remove meat to a plate and let sit for 5 minutes before slicing into pieces about 1/4 inch thick.
  • After removing meat, press Cancel, then press Saute. Scoop out 3 tablespoons of the liquid to a separate cup and add 2 tablespoons of corn starch. Mix well until corn starch is dissolved. Slowly pour mixture back into the liquid in the pot. Once it starts to boil, press cancel. Mix well and sauce will thicken into a delicious gravy.

¼ cup fresh cilantro leaves
¼ cup olive oil
¼ cup lime juice
2 cloves garlic, sliced
½ teaspoon red pepper flakes, or to taste
¼ teaspoon salt, or to taste
1 pound pork tenderloin
¾ cup chicken broth
¼ cup lemon juice

Steps:

  • Blend the cilantro, olive oil, lime juice, garlic, red pepper flakes, and salt in a blender until smooth; pour into a large resealable plastic bag. Add the pork tenderloin to the bag and manipulate to assure it's covered with the marinade. Remove as much air from the bag as possible before sealing. Marinate in refrigerator 8 hours to overnight.
  • Stir the chicken broth and lemon juice together in the bottom of a pressure cooker. Lay the tenderloin into the liquid in the slow cooker. Pour the remaining marinade from the bag over the tenderloin.
  • Seal and lock pressure cooker and cook over high heat to build pressure until the indicator sounds. Reduce heat to medium and cook for 25 minutes. Remove from heat and let stand for 5 minutes. Run under cold water to help release the pressure before unsealing the lid. Slice the tenderloin into medallions to serve.

INSTANT POT CHINESE PORK TENDERLOIN

Chinese roast pork is one of my favorite things on earth. And so I decided to create a pork tenderloin remiscient of those flavors while still being super easy to make. Chinese Five Spice is a key player here and it can be found in many markets or online.

2 pounds of pork tenderloin (not to be confused with pork loins - that's a totally different cut of meat!)
1 cup of beef broth, divided in half (I used 1 tsp of Beef Better Than Bouillon + 1 cup of water)
1/4 cup of light brown sugar
2 tsp of kosher salt (oh, the irony)
1.5 tsp of Chinese Five Spice, divided into 1 tsp and 1/2 tsp
1/2 tsp of paprika
2 tbsp of soy sauce (I used low sodium)
1 tbsp of cooking sherry
1/4 cup + 1 tbsp of hoisin sauce, divided into 1/4 cup and 1 tbsp
1 tbsp of crushed garlic
1/2 tbsp of crushed ginger (they have this at Costco and it comes in very handy for many other recipes!)
1 tsp of white miso paste (this is totally optional but just adds a little extra flavor to the dish. You can find it online or at many international or asian markets - just ask them!)
1/3 cup of honey
2 tbsp of cornstarch + 2 tbsp of water to form a cornstarch slurry

Steps:

  • Take the pork tenderloin (usually two come in the pack) and slice it into medallions/discs about 1/2-inch thick. Place the pork medallions into a gallon freezer bag and set aside
  • In a mixing bowl, make the marinade by combining 1/2 cup of the beef broth, the brown sugar, kosher salt, 1 tsp of the Chinese Five Spice, paprika, soy sauce, cooking sherry, 1 tbsp of hoisin sauce, crushed garlic, crushed ginger and miso paste (if using). Mix together very well and then pour over the pork in the bag. Press the air out of the bag, seal tightly and place in the refrigerator for 24 hours, flipping once mid-way through (Do NOT skip this step. Trust me - you want that magical sauce seeping into every crevice of that pork).
  • 24 hours later, dump the bag with the pork and all of its marinade into the Instant Pot. Add in the additional 1/2 cup of beef broth, 1/4 cup of hoisin sauce, 1/2 tsp of Chinese Five Spice and 1/3 cup of honey. Mix well and make sure the pork is nice and submerged into the marinade (it is fine if some of the pork protrudes above it)
  • Secure the lid and cook on "Manual" or "Pressure Cook" High Pressure for 8 minutes. Allow a 10 minute natural release and follow with a quick release.
  • When done cooking, use a slotted spoon to transfer the pork to a serving dish. Then, take the sauce from the pot and carefully pour it through a strainer and into a bowl. Allow the strainer to catch all the excess fat from the pork, discard and return the strained sauce back to the Instant Pot
  • Hit "Keep Warm/Cancel" on the Instant Pot and then "Sauté" and adjust to the "High" or "More" setting. Add in the cornstarch slurry and stir well. Allow the sauce to bubble for a minute as this is what causes it to thicken up. After a minute of bubbling, turn the pot off and allow it to simmer down so it's only slightly bubbling. Give it a good stir. The sauce will begin to thicken to that perfect consistency now
  • Using a serving spoon, cascade the sauce over all of the pork and serve! This is the PERFECT companion to my mega-popular Hibachi Fried Rice so if you have a second Instant Pot, make that with it! Or you can just use any regular rice on the stove as well ?

NINJA FOODI SWEET AND SAVORY PORK TENDERLOIN

1.5 pound pork tenderloin (you can cook 2 at a time if you would like. No adjustment in time or recipe is needed. )
21 ounces pork gravy (I used Campbells)
1/2 cup water
6 carrots (cut into 2-3 pieces each)
5 red potatoes (large and cut into 5 or 6 pieces each)
1/2 cup brown sugar
4 tablespoons butter (salted and cut into 8 pieces)
3 sprigs thyme (fresh)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Remove pork tenderloin from package and lightly season with salt and pepper.
  • Cut one inch slits on the top of the pork tenderloin-anywhere between 6 and 8 will work.
  • Spread slits apart slightly and then put a piece of butter in each slit.
  • Place pork tenderloin into Ninja Foodi.
  • Add potatoes and carrots around pork tenderloin.
  • Add brown sugar, try to place in the middle of pork tenderloin.
  • In a separate bowl, add 1/2 cup of water to 2 cans of pork gravy and mix well.
  • Pour pork gravy mixture over the top of the pork tenderloin.
  • Top with sprigs of fresh thyme.
  • Add pressure cooking lid.
  • Seal and set to manual high for 5 minutes.
  • When timer ends, natural pressure release for 10 minutes and then quick release remaining pressure.
  • Remove tenderloin from Ninja Foodi and set aside.
  • Slice, plate and spoon sauce over the pork tenderloin and vegetables.
