BASIC GRANOLA RECIPE

This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

3 cups rolled oats
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon (see Cook's Notes)
1/2 teaspoon kosher salt
1/3 cup honey (see Cook's Notes)
1/4 cup canola oil (see Cook's Notes)
1 teaspoon vanilla extract (see Cook's Notes)
1/2 cup coarsely chopped almonds (see Cook's Notes)
1/2 cup dried cranberries (see Cook's Notes)

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

4 ½ cups rolled oats
2 cups whole wheat flour
1 ¼ cups honey
¾ cup wheat germ
½ cup chopped raw cashews
½ cup chopped raw almonds
⅓ cup vegetable oil
¼ cup flaked coconut
2 tablespoons brown sugar
1 teaspoon vanilla extract
1 teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix oats, flour, honey, wheat germ, cashews, almonds, vegetable oil, coconut, brown sugar, vanilla, and salt together in a large bowl; spread onto a baking sheet.
  • Bake in preheated oven for 15 minutes, stir, and increase heat to 325 degrees F (165 degrees C). Continue cooking until the granola is golden brown, about 10 minutes more. Cool granola completely before storing in an air-tight container.

Number Of Ingredients 10

4 cups old-fashioned oats
1/3 cup honey or molasses
1/4 cup canola oil
1 teaspoon vanilla extract
1 cup chopped nuts
3/4 cup uncooked oat bran cereal
1 cup sweetened shredded coconut
1 cup raisins
1 cup chopped dates
Optional: Yogurt and fresh fruit

Steps:

  • Spread rolled oats on a 15x10x1-in. baking pan. Bake at 350° for 5 minutes. Stir; bake 5 minutes longer or until toasted. Meanwhile, combine honey and oil in a small saucepan. Cook and stir over medium heat for 2-3 minutes or until heated through. Remove from the heat; stir in vanilla. Remove oats from oven; toss with nuts, bran and coconut. , Pour hot honey mixture over oat mixture; toss well. Return to oven and bake 20-25 minutes, stirring every 6 minutes. Remove from oven. Stir in raisins and dates. Cool. Store in an airtight container. Serve with yogurt and fresh fruit of your choice if desired.

6 cups rolled oats
1 cup freshly ground flax seed meal
1 cup steel-cut oats
1 cup oat bran
½ cup wheat germ
1 cup chopped pecans
¾ cup agave nectar
½ cup canned pumpkin
½ cup brown sugar
½ cup water
2 tablespoons canola oil
2 tablespoons vanilla extract
2 teaspoons pumpkin pie spice
1 teaspoon sea salt
1 cup finely chopped dates
1 cup miniature chocolate chips

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Line baking sheets with parchment paper.
  • Mix rolled oats, flax seed meal, steel-cut oats, oat bran, wheat germ, and pecans in a large bowl. Whisk agave nectar, pumpkin, brown sugar, water, canola oil, vanilla extract, pumpkin pie spice, and sea salt in a separate bowl, stirring until brown sugar and salt are dissolved. Pour liquid ingredients over rolled oats mixture and stir to coat. Spread mixture on prepared baking sheets.
  • Bake in the preheated oven for 1 hour, stirring every 20 minutes. Stir dates into granola and continue baking until granola is lightly golden brown, 20 to 30 more minutes, stirring once. Let cool completely and mix miniature chocolate chips into granola. Store in an airtight container.

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

2 tbsp vegetable oil
125ml maple syrup
2 tbsp honey
1 tsp vanilla extract
300g rolled oats
50g sunflower seed
4 tbsp sesame seeds
50g pumpkin seeds
100g flaked almond
100g dried berries (find them in the baking aisle)
50g coconut flakes or desiccated coconut

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Mix the oil, maple syrup, honey and vanilla in a large bowl. Tip in all the remaining ingredients, except the dried fruit and coconut, and mix well.
  • Tip the granola onto two baking sheets and spread evenly. Bake for 15 mins, then mix in the coconut and dried fruit, and bake for 10-15 mins more. Remove and scrape onto a flat tray to cool. Serve with cold milk or yogurt. The granola can be stored in an airtight container for up to a month.

Some ideas: Substitute nuts for dried fruit or berries; use half almonds and half broken pecans; use half pecans and half dried cherries; omit the coconut and replace with the same amount of oats. You get the idea. This makes more than the recipe lets on, so you may have to use two cookie sheets. Enjoy!
