Number Of Ingredients 17

DRY RUB:
1 1/2 to 2 pounds baby back ribs, cut into 2-rib sections
3 tablespoons paprika (I reduced to 2-1/2 tablespoons)
2 tablespoons brown sugar, packed
2 teaspoons chili powder
1 teaspoon salt
2 teaspoons black pepper
1/4 teaspoon cayenne pepper
SAUCE:
1 tablespoon vegetable oil
1 onion, chopped fine
2 garlic cloves, minced
1 cup ketchup
1/2 cup water
1/4 cup molasses
2 tablespoons cider vinegar
2 tablespoons Dijon mustard

Steps:

  • Rub: Combine the ingredients and rub mixture evenly over the ribs. Sauce: Heat oil in the pressure cooker pot over medium heat until shimmering. Add the onion and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Stir in ketchup, water, molasses, vinegar and mustard. Stir to combine. Cook for one minute (my additional step) Measure out and reserve one cup of the sauce. Arrange the ribs upright in the pot, with meaty sides facing outward, then pour reserved sauce over the ribs. Lock the pressure cooker lid in place and bring to high pressure over medium-high heat. As soon as the pot reaches high pressure, reduce heat to medium-low and cook for 30 minutes adjusting heat as needed to maintain high pressure. Note: I set my electric pressure cooker to medium-high for 15 minutes, then let it do a natural pressure release for 15 minutes. Our ribs turned out perfectly. For a slow cooker, cook for 6 to 8 hours. Before serving: Preheat the broiler with the rack 6-inch below the flame. Remove ribs (meaty side up), with tongs, onto a foil-lined baking sheet with a baking rack set on top. Skim off the excess fat from the sauce, in the pot. Simmer the sauce until it is thickened, about 10 minutes, to equal about 2 cups. Brush the ribs with some of the sauce, flipping them over and brushing both sides. Starting with the meaty side up, broil until browned and sticky, for 2 to 3 minutes per side. Watch closely, as the sauce has sugar and can burn! Turn over a few times, adding additional sauce-- for a total of 10 to 15 minutes. Yum!

2 lbs baby back ribs
2 cups of your favourite barbecue sauce

Steps:

  • Place the metal rack in your cooker and add 1/2 cup of water (I used 1 cup as the manufacturer of my electric cooker recommends).
  • If your cooker is large enough you can bend the racks around in a circle. Otherwise cut into sections and stand them upright in the cooker.
  • Lock the lid in place.
  • Bring to 15psi (high pressure in electric cooker) and cook for 12 minutes.
  • Remove from heat and use quick release method to depressurize.
  • When pressure drops, carefully open lid and use long tongs to remove ribs.
  • Cover with sauce by dipping in sauce in a shallow pan, or basting well as you broil or BBQ the ribs to complete.

This is a quick, easy way to cook country style pork ribs. I've adapted this recipe from "Pressure Perfect" by Lorna Sass.

4 lbs country-style pork ribs
1 (12 ounce) bottle beer, of your choice
1 cup water
2 tablespoons cider vinegar or 2 tablespoons red wine vinegar
1 cup bottled or homemade barbecue sauce

Steps:

  • Pour the beer, water and vinegar into a 6-quart or larger pressure cooker; add ribs, arranging them so none are right on top of each other, though they do not have to be submerged in the liquid to cook properly.
  • Lock the lid in place and heat to high pressure over high heat, then lower heat so that pressure is maintained; cook 15 minutes and then turn off the heat and release the pressure (I carefully place the cooker in the sink and run cold water over the side of it, this releases the pressure quickly).
  • Carefully remove the lid, tilting the cooker away from you to allow the steam to escape.
  • Heat your oven to 400°; transfer ribs to a foil-lined baking pan and brush the barbecue sauce on all sides of the ribs; roast until browned and crisp on top, about 10 minutes; turn the ribs over, brush with more sauce and roast about 5 more minutes.
  • Serve with more sauce, if you like.

SWEET DRY-RUB BABY BACK RIBS - 6-QT ELECTRIC PRESSURE COOKER

Tried and True, just a hint of heat. I have adapted my dry rub from from Ribs, Chops, Steaks, & Wings by Ray Lampe, and my electric pressure cooking directions from Gracie Cooks! blog. We found the original rub recipe to have way too much salt, and we reduced the cayenne pepper so toddlers wouldn't be overwhelmed. I like to keep the ribs out of the bottom liquid as much as possible, and I top it with a fresh BBQ sauce (or Heinz's Kansas City BBQ sauce was even easier and quite yummy) for finishing off the ribs either in the oven or on the grill. The pressure-cooked unglazed ribs can be frozen - we tend to make as many slabs as our P.C. can hold. Afterwards, strain the liquid, defat, and use as a marinade for a rump roast. Removing the membrane that covers the inner part of the ribs and removing excess fat accounted for most of my prep time. In the Instant Pot, it only took 15 minutes to reach pressure, and 20 for the pressure to come down naturally. (The posted "Cooking Time" is the amount of time at High Pressure (11 psi). I think it is most convenient to cook the ribs ahead and just worry about "finishing" them when you are ready to eat.

2 tablespoons finely ground black pepper

1 teaspoon ground coriander or 1/2 teaspoon dried cilantro
1/4 teaspoon cayenne pepper

4 lbs baby back ribs (2 full racks)
12 ounces Coca-Cola
1/4-1/2 cup barbecue sauce (I like Heinz Kansas City BBQ sauce)

Steps:

  • RUB:.
  • Combine all Rub ingredients in a medium bowl.
  • RIBS:.
  • Using a full cooking sheet, prepare ribs by removing membrane that covers the inside part of the ribs. Also trim off excess fat, if any. (Check YouTube for instructive videos.).
  • Generously coat both sides of both racks of ribs.
  • In 6-quart or larger electric pressure cooker, place roasting rack in inner pot. Pour in Coca Cola. Place each rack of ribs vertically, with meaty side out, and meatier edge on top. (A 6-quart P.C. should accommodate 3 racks, and an 8-quart P.C. should handle 4 racks.).
  • Feel free to sprinkle rest of rub on ribs.
  • Put inner pot into Pressure Cooker base.
  • Secure lid.
  • INSTANT POT: Select MEAT/STEW setting, and increase time to 30 minutes. When cooking has completed, press Off, and unplug. Allow pressure to release naturally (or at least 12 minutes before venting).
  • OTHER ELECTRIC PRESSURE COOKER: Cook on HIGH pressure for 30 minutes, and allow pressure to release naturally.
  • STOVE-TOP P.C.: Please consult your manual. These normally cook at 15 psi instead of 11 psi attained by electric pressure cookers, so cooking times and Natural Pressure Release times will both be shorter. You will have to hang around to make sure the stove-top pressure cooker maintains the right pressure, however.
  • Once pressure cooker has released its pressure, remove the lid. Carefully remove the ribs with tongs. (I move the ribs to a colander to drain as I normally cook them ahead up to this point.).
  • OPTIONAL: Strain the cooking liquid and refrigerate, then remove the top fat layer. It would make a killer marinade for a rump roast. If you don't like that option, discard the cooking liquid as you see fit.
  • FINISHING:.
  • OVEN: Set to BROIL. Put racks meaty side up and glaze with BBQ sauce with a silicone basting brush. Broil for 2-5 minutes or until heated through. If you like, baste again and broil some more.
  • GRILL: Prepare grill. On BBQ mesh grate, place rib racks meaty side up and glaze with BBQ sauce with a silicone basting brush. Heat through. Baste again and heat some more if you wish.

These ribs cook up fast and the meat melts in your mouth! I've only used beef ribs, my husband's preference, but you certainly could substitute pork ribs. The nutritional values would change. I adapted this recipe from a favorite slow cooker recipe. These are very saucy ribs, messy and delicious! My husband calls them AWESOME!

3 lbs beef back ribs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon garlic powder

1 cup beer
12 ounces barbecue sauce

Steps:

  • Cut ribs into serving pieces.
  • Mix spices together to create a dry rub. Apply the dry rub to the ribs.
  • Heat oil in pressure cooker and brown the ribs on all sides.
  • Insert cooking rack in pressure cooker, add beer, and load with ribs, not to exceed manufacturer's maximum fill line.
  • Place over high heat until control jiggles. Reduce heat and cook 35 minutes.
  • Let cooker depressurize naturally. Remove rack from cooker (you can drain some of the liquid if you like thicker sauce) and add barbecue sauce, heat until simmering. Simmer for 10-15 minutes.

2 1/2 cups beef broth
10 dashes Worcestershire sauce
1 large sweet onion (diced)
2 teaspoons dry mesquite marinade
1 teaspoon McCormick's Montreal Brand steak seasoning
1/2 teaspoon mesquite liquid smoke
3 tablespoons garlic (minced)
8 lbs beef ribs (cut into portions)

Steps:

  • Season ribs with salt pepper and paprika.
  • Heat pressure cooker.
  • Use 3 tbsp of oil and brown ribs in pressure cooker.
  • Combine all above ingredients and pour over ribs in pressure cooker.
  • Close cover securely and place pressure regulator on pressure vent pipe and cook 7 minutes with pressure regulator rocking slowly.
  • Let pressure drop of its own accord.
  • Then crisp the ribs on the bbq with your favorite bbq sauce.

  • On the bone side of the ribs, work a butter knife between the membrane and the bone, then grab with a paper towel and pull the membrane off of the ribs. (If it tears while you’re pulling, work the knife under the remaining pieces and pull them off as well.)
