BANANA CHOCOLATE CHIP MUFFINS

Steps:
- Preheat oven to 375F and line a muffin tin with papers.
- Combine flour, salt, baking soda, and sugar in a bowl then whisk together and set aside.
- Mash bananas in a large bowl, add the egg, melted butter, and vanilla then mix to combine.
- Add the dry to the wet and fold together with a spatula until almost combined. Add the chocolate chips and continue mixing until distributed and the batter is combined.
- Distribute the batter to the muffin tin and top with additional chocolate chips if desired.
- Bake at 375F for 17-20 minutes or until a toothpick comes out clean from the center.

BANANA OATMEAL MUFFINS

- Preheat the oven to 375F. Line a 12-cup muffin pan with paper liners.
- In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.
- In a medium bowl, whisk together the milk, oil, eggs, and vanilla until well combined. Stir in the mashed banana. Pour the milk mixture into the oat mixture and stir together until well combined. Stir in the chocolate chips, if using. Divide the batter among the paper liners. (They will be very full.) Sprinkle with extra oats and cinnamon, if desired.
- Bake for 18 to 22 minutes or until golden brown and the centers feel firm. Let the muffins cool in the pan for a few minutes, then remove and continue cooling on a wire rack.

- Combine first 4 ingredients. Beat butter and sugar in large bowl with mixer until blended. Add bananas, sour cream and eggs; mix well. Add flour mixture; mix just until moistened. Stir in nuts.
- Spoon into 16 paper-lined muffin cups.
- Bake 22 to 24 min. or until toothpick inserted in centers comes out clean. Cool in pans 5 min. Remove to wire racks; cool slightly or to room temperature.
