THREE CHEESE LASAGNA RECIPE
Three cheese lasagna with mozzarella, parmesan, and ricotta cheeses. This classic meatless lasagna makes an easy and tasty dinner.

Steps:
- Add garlic and onion to a skillet with a splash of olive oil. Cook over medium high heat for around 10 minutes, until onion is soft. Add sauce, stir, and set aside
- In a bowl, stir to combine the freshly grated parmesan cheese, ricotta cheese, oregano, egg, and fresh parsley.
- Grease a 9 X 13 casserole dish with cooking spray
- Add 1/3 cup sauce to the bottom of the dish and spread it out
- Add 3 lasagna noodles
- Place 1/2 cup of the ricotta mixture and spread out over the noodles
- Add 1 cup of the sauce and spread out over the top
- Sprinkle on 1/2 cup of mozzarella cheese
- Add the next layer: 3 noodles, 1/2 cup ricotta, 1 cup of sauce, and 1/2 cup of mozzarella
- For the final layer, add 3 noodles, the rest of the ricotta, the rest of the sauce, and the remaining 1 cup of mozzarella over the top
- Cover with foil and bake at 375 degrees for 50 - 60 minutes, until hot and bubbly
- For crispy edges and top, remove foil for the last 5 minutes (optional)

RUSTIC THREE CHEESE LASAGNA

Steps:
- Turn your oven on to a broiler/grill setting and set the rack 6" away from the top.
- Slice the eggplants 1/2" thick, arrange on a baking sheets and lightly brush with olive oil or spray with a low calorie spray. Broil for 5-6 minutes on one side, turn the slices over brush with olive oil and broil for 4 minutes longer. Set aside.
- Turn the oven temperature to 350F/180C.
- Mix your Beef Ragu with tomato passata or crushed tomatoes in a medium bowl, season with more salt if needed. Take a ladleful of the sauce and spread on the bottom of a baking dish in a thin layer.
- Then lay your lasagna sheets in one layer, cover with more sauce and grated parmesan, then eggplant layer, reserving 3-4 slices for the top and parmesan, another pasta layer and sauce, finishing with the third layer of lasagna sheets and the sauce.
- Cover the top with torn mozzarella ball, grated smoked gouda, sliced tomatoes, reserved eggplant slices and basil leaves. Sprinkle remaining parmesan on top.
- Cover with tin foil and bake for 30 minutes, uncover and bake for 15-20 minutes longer till cheese is bubbly and golden. Let it stand for 15 minutes before cutting in squares.

- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 10-12 minutes or until meat is no longer pink; drain. Stir in pasta from the dinner mix, contents of seasoning mix, water, tomatoes, spinach, mushrooms and onions. Bring to a boil. , Reduce heat; cover and simmer 10-13 minutes or until pasta is tender. Stir in cottage cheese and Parmesan cheese. , Transfer to two greased 8-in. square baking dishes. Sprinkle with mozzarella cheese. Cover and freeze one casserole for up to 3 months. , Cover and bake the remaining casserole 15-20 minutes or until bubbly and cheese is melted. , To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). - Preheat oven to 375 degrees. Spray baking pan with non-stick cooking spray.
- Brown meat with onion and garlic. Drain grease off.
- In medium bowl, beat eggs, Stir in ricotta, 2 cups of mozzarella and the Parmesan.
- Spoon half jar of sauce on bottom of pan; layer with 2 sheets lasagna noodles, half ricotta mixture and browned meat, and remaining sauce from first jar. Add 1 cup of mozzarella. Layer 2 sheets lasagna noodles, remaining ricotta mixture and browned meat, and half of the second jar of sauce. Top with 2 sheets, remaining sauce and 1 cup of mozzarella.
- Bake, covered with foil until bubbly, 50-60 minutes. Uncover and continue cooking until cheese is melted, about 5 minutes. Let stand 15 minutes before cutting.

Steps:
- Cook lasagna noodles per pkg; preheat oven to 350°F.; grease a 13 X 9 baking dish.
- In a small bowl, combine the tomato sauce, garlic and oregano.
- In a separate bowl, combine the broccoli, carrot, ricotta cheese and parmesan cheese, mixing well.
- Drain the noodles.
- Spread 1/2 cup of the tomato sauce mixture in the bottom of the baking dish; place 3 lasagna noodles on top.
- Spread 1/2 of the broccoli mixture over the noodles; spread 1/2 cup of the tomato sauce mixture over the broccoli mixture; place 3 lasagna noodles on top.
- Spread the remaining broccoli mixture on the noodles; top with 1/2 cup of the tomato sauce mixture.
- Top with the remaining noodles; then the remaining tomato sauce; then all the mozzarella cheese.
- Bake in the preheated 350°F oven for 45 minutes or until bubbling.
- Remove from the oven and place on a wire cooling rack; let cool/settle for 15 min before you cut and serve.

- Preheat the oven to 425°. In a large pot of boiling salted water, cook the lasagna noodles until almost tender, about 5 minutes. Drain and transfer the noodles to a bowl of cold water and let stand for 2 minutes, then drain. Pat the noodles dry. Transfer to a bowl and toss with olive oil.
- In a medium skillet, heat 1 tablespoon of the olive oil. Add the Italian sausage, cover and cook over moderate heat, turning once, until browned all over. Add the water, cover and simmer until the sausage is just cooked through, about 4 minutes.
- In a large skillet, heat the remaining 2 tablespoons of olive oil. Add the garlic and cook over low heat until golden, about 3 minutes. Add the tomatoes with their juices and cook over moderate heat for 10 minutes, stirring occasionally. Add the sausage and its poaching liquid and simmer for 4 minutes. Transfer the sausage to a plate. Simmer the sauce over moderate heat until thickened, about 12 minutes. Coarsely break up the sausage and season the sauce with salt and pepper.
- In a well-buttered, 9-by-13-inch ceramic baking dish, arrange 3 lasagna noodles in different directions in the dish, leaving about 2 inches of overhang. Spoon a scant 1/4 cup of the tomato sauce over each lasagna noodle and sprinkle with a little grated Parmigiano-Reggiano cheese. Set a piece of mozzarella and Fontina on each lasagna noodle and add a few chunks of sausage. Fold the overhanging lasagna noodles on top of the cheese and sausage. Repeat the process with the remaining lasagna noodles, tomato sauce, mozzarella, Fontina and sausage, sprinkling with a little more Parmigiano-Reggiano cheese. Brush the softened butter on any bare pasta and curly edges and sprinkle with Parmigiano-Reggiano.
