SAMBAL UDANG (PRAWN SAMBAL)
Sambal Udang (Prawn Sambal) is a fiery side dish often served as a side dish to perk up any rice meal. A must-try for the spicy food fan.

Steps:
- Blend all spice paste ingredients with ⅓ cup (80ml) water until smooth.
- Place asam jawa in a small metal strainer over a bowl. Pour 1 cup (240ml) hot water over asam jawa. Stir and press down asam jawa with a spoon to dissolve.
- In a medium sized pot, heat vegetable oil. Add ground spice paste and kaffir lime leaves. Stir fry for 8 to 10 minutes until fragrant.
- Pour strained tamarind juice into the pot. Stir to combine. Place lid on the pot and allow sauce to come to a boil. Reduce heat and continue to simmer for 3 to 5 minutes.
- Remove the lid. Add shrimps (prawns), sugar, and salt. Stir to get all ingredients well mixed.
- Place lid back onto the pot and continue to simmer for 3 minutes.
- Turn off stove. Dish into a serving bowl.

- Mix the pounded ingredients with the chilli paste and salt.
- Heat oil in saucepan.
- Fry pounded ingredients until fragrant.
- Add prawns.

- Serve hot with steamed white rice.

- In a medium bowl, combine the sambal oelek, lime juice, olive oil, sugar, garlic, ginger, mirin, fish sauce and sesame oil. Whisk well to combine. Allow the marinade to sit at room temperature for at least 1 hour and up to 4 hours.
- Place the shrimp in a 1-gallon resealable plastic bag, and add all but 1 /2 cup of the marinade to the bag. Allow the shrimp to marinate at room temperature for 1 hour.
- Preheat a grill to medium-high and oil the grill.
- Place the shrimp on the grill and cook until they are just cooked through, 2 to 2 1/2 minutes per side. Transfer the cooked shrimp to a large bowl. Add the reserved 1/2 cup marinade, the cilantro and the mint and toss well to combine. Transfer the shrimp to a large serving bowl or platter, and serve immediately.

Times are estimated. PLEASE NOTE - I have omitted vegetable oil for deep frying for to put in with the quantity you would require would put the nutritional value way out as obviously you do not digest all that oil otherwise food.com was rejecting the recipe.

- Cook eggs in boiling water for 7 minutes and then chill in iced water until cool enough to handle and peel.
- For the prawn paste , pound the shallot, garlic and ginger in a mortar and pestle to a paste and then add prawns a little at a time, pounding well and moistening the pestle with fish sauce at regular intervals (doing this inparts the flavour into the mix but does not over moist the mix).
- When the mixture becomes thick and pasty, pick up the paste with your hand and throw it into the mortar repeatedly and with force, until it feels light in your hand (this action lightens the mix).
- Take each egg and roll first in flour, then beaten egg and with wet hands form the prawn paste around the eggs to totally enclose it and then dip the coated eggs into flour and then beaten eggs and then panko crumbs.
- Set to one side (in fridge ) and make sambal paste or you could make sambal paste first or even the day before (this is personal opinion).
- For the sambal - fry the shallots, garlic, chilli and ginger in the oil until soft and then add the fish sauce, kecap manis and palm sugar and cook for 5 minutes.
- Add the coconut and cook for a further 2 minutes until the liquid has absorbed and then stir the through the chopped coriander,.
- Deep fry at 170C for about 5 minutes until golden brown and then remove with a slotted apoon and drain on paper towel.
- Serve the sambal with halved or quartered scotch eggs.

Steps:
- In a large frying pan on medium-high heat, add olive oil, stir in curry powder and cook stirring for about 2 minutes.
- Add minced ginger and cook for another 2 minutes.
- Add onion, celery and garlic; cook and stir until onion is translucent, about 3 minutes.
- Add shrimp or prawns and cook for 2 to 3 minutes or until prawns have just turned pink, (DO NOT OVERCOOK SHRIMP OR PRAWNS).
- Add sour cream and coconut cream and bring to boil, stirring continuously until smooth.
- In a small bowl, mix together tapioca starch and cold water until smooth.
- While sauce is boiling, add tapioca starch mixture in small amounts, stirring continuously until sauce thickens to the consistency of gravy.
- Serve over cooked rice, pasta of your choice, crisp pappadams or freshly cooked naans.
- Adjust Sambal Oelek to suit your taste.
- You can substitute and use whipping cream instead of coconut cream.

Steps:
- Put all the ingredients for the fishcakes, except the oil, in a food processor with seasoning and blitz until really well blended. Shape into 12-18 round patties, then chill for up to 1 day until ready to serve.
- Wash the food processor, then blitz all the sambal ingredients together to make a bright green, wet paste. Season and chill.
- When ready to serve, fry the fishcakes in the oil for a few mins on each side until golden - they will be firm, like Thai fishcakes rather than those made with potato. Pile onto a platter with a bowl of the sambal to serve with drinks, or plate up and serve as a starter.
