EASY BEAN SALAD
This bean salad recipe is easy to make and easy to share. It is tangy and made with fresh herbs, four different types of beans, and vegetables!

Steps:
- Place all of the ingredients for the dressing into a mason jar. Cover and shake until all the ingredients are combined. Set aside.
- Next, add all of the ingredients for the salad into a large bowl and toss.
- Drizzle the salad dressing over the salad and toss until all the ingredients are covered in dressing.
- Place the salad into the refrigerator for 30-45 minutes to chill.
- Toss, salt and pepper to taste, and serve the salad immediately after.

BLT BEAN SALAD
All the flavors of a classic BLT sandwich come together in this hearty bean salad. The homemade herb-mayo dressing adds freshness while the crisp bacon and croutons add a welcomed crunch. It's a great way to use up those pantry beans in a summery salad you'll want to enjoy all year round.

- Preheat the oven to 400 degrees F.
- Toss the bread, olive oil, a pinch of salt and several grinds of pepper on a rimmed baking sheet until combined, then spread into an even layer. Bake until the croutons are golden brown and well toasted, tossing halfway through, 10 to 12 minutes.
- Meanwhile, add the bacon to a medium skillet and cook over medium heat, stirring occasionally, until crisp and well browned, about 5 minutes. Transfer to a paper towel-lined plate with a slotted spoon to drain.
- For the dressing, puree the basil, parsley, dill, mayonnaise, yogurt, lemon juice, 2 teaspoons water, 1/4 teaspoon salt and several grinds of pepper in a food processor until the herbs are finely chopped and dressing is bright green. Taste and adjust the seasoning with more salt and pepper.
- To assemble, add the beans, romaine, tomatoes, half the croutons and half the bacon to a large bowl. Add half of the herb-mayo dressing, then toss to combine. Transfer to a large serving bowl or platter, top with the remaining croutons and bacon and drizzle with the remaining dressing.
EASY 7 BEAN SALAD RECIPE
Steps:
- Over a colander in the sink, drain the cans of beans and rinse well with water. Put the beans in a large bowl.
- Add the onions, red pepper, yellow pepper and celery.
- In a separate container, mix together the vinegar, sugar, mustard powder, salt and pepper and stir until the sugar dissolves. Add the oil and mix.
- Add the dressing to the bean mixture and toss gently until well coated.
- Refrigerate for at least 4 hours to allow the dressing to soak the into the bean salad. Best if you allow to marinate overnight in the fridge, mixing occasionally.
BOB'S BEAN SALAD
Steps:
- In a large bowl, toss red bell pepper, onion, and artichokes together with kidney, pinto, and garbanzo beans. Set aside.
- In a separate bowl, whisk salt and sugar with white and balsamic vinegars until completely dissolved. Slowly whisk in olive oil. Adjust seasoning as desired.
- Pour dressing over bean mixture, and toss to coat. Cover and refrigerate at least one hour before serving. Serve chilled.

- Rinse and drain beans in a colander. Transfer to a large bowl with lid.
- Stir onion and bell pepper into beans.
- Dissolve sugar in water for 1 minute in microwave safe measuring cup.
- Whisk in remaining ingredients until combined.
- Pour over beans and toss to coat evenly.
- Allow to marinate 4 or more hours.
