EASY BEAN SALAD



Easy Bean Salad image

This bean salad recipe is easy to make and easy to share. It is tangy and made with fresh herbs, four different types of beans, and vegetables!

1/4 cup apple cider vinegar
2 tablespoons olive oil
½ tablespoon honey
2 tablespoons lime juice
1 tablespoons fresh garlic (minced)
½ teaspoon ground cumin
½ teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1-15 oz. can pinto beans (drained and rinsed)
15 oz. can black beans (drained and rinsed)
15 oz. can large butter beans (drained and rinsed)
15 oz. can great northern beans (drained and rinsed)
1 bell pepper (diced (any color works))
1 small red onion (minced)
1 tablespoon lime zest
¼ cup chopped fresh cilantro
2 tablespoons chopped fresh parsley

Steps:

  • Place all of the ingredients for the dressing into a mason jar. Cover and shake until all the ingredients are combined. Set aside.
  • Next, add all of the ingredients for the salad into a large bowl and toss.
  • Drizzle the salad dressing over the salad and toss until all the ingredients are covered in dressing.
  • Place the salad into the refrigerator for 30-45 minutes to chill.
  • Toss, salt and pepper to taste, and serve the salad immediately after.

All the flavors of a classic BLT sandwich come together in this hearty bean salad. The homemade herb-mayo dressing adds freshness while the crisp bacon and croutons add a welcomed crunch. It's a great way to use up those pantry beans in a summery salad you'll want to enjoy all year round.

2 slices whole-wheat sandwich bread, cut into 1/2-inch pieces
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
4 slices thick-cut bacon (about 4 ounces), sliced into 1/4-inch-thick pieces
1/2 cup fresh basil leaves
1/4 cup fresh parsley leaves
1/4 cup fresh dill
3 tablespoons mayonnaise
3 tablespoons plain yogurt
1 1/2 tablespoons fresh lemon juice
One 15-ounce can Great Northern or cannellini beans, drained and rinsed
1 heart of romaine, cut into bite-size pieces
1 cup cherry tomatoes, halved

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the bread, olive oil, a pinch of salt and several grinds of pepper on a rimmed baking sheet until combined, then spread into an even layer. Bake until the croutons are golden brown and well toasted, tossing halfway through, 10 to 12 minutes.
  • Meanwhile, add the bacon to a medium skillet and cook over medium heat, stirring occasionally, until crisp and well browned, about 5 minutes. Transfer to a paper towel-lined plate with a slotted spoon to drain.
  • For the dressing, puree the basil, parsley, dill, mayonnaise, yogurt, lemon juice, 2 teaspoons water, 1/4 teaspoon salt and several grinds of pepper in a food processor until the herbs are finely chopped and dressing is bright green. Taste and adjust the seasoning with more salt and pepper.
  • To assemble, add the beans, romaine, tomatoes, half the croutons and half the bacon to a large bowl. Add half of the herb-mayo dressing, then toss to combine. Transfer to a large serving bowl or platter, top with the remaining croutons and bacon and drizzle with the remaining dressing.

1 can Chickpeas (Garbanzo Beans)
1 can White Beans (Cannellini Beans)
1 can Butter Beans (Lima Beans)
2 can Borlotti Beans (or Romano Beans)
2 cans sliced Green Beans
2 cans sliced Yellow Wax Beans
2 Red Onions chopped finely
1 Red Pepper diced (Capsicum)
1 Yellow Pepper diced (Capsicum)
4 sticks Celery diced
3 cups vinegar
3 cups sugar
1 1/2 teaspoon dry Mustard powder
1 1/2 teaspoon salt
1 teaspoon white pepper
6 tablespoons vegetable oil

Steps:

  • Over a colander in the sink, drain the cans of beans and rinse well with water. Put the beans in a large bowl.
  • Add the onions, red pepper, yellow pepper and celery.
  • In a separate container, mix together the vinegar, sugar, mustard powder, salt and pepper and stir until the sugar dissolves. Add the oil and mix.
  • Add the dressing to the bean mixture and toss gently until well coated.
  • Refrigerate for at least 4 hours to allow the dressing to soak the into the bean salad. Best if you allow to marinate overnight in the fridge, mixing occasionally.

1 medium red bell pepper, chopped
⅓ medium onion, chopped
1 (6 ounce) jar marinated artichoke hearts, drained and chopped
1 (12 ounce) can kidney beans, drained and rinsed
1 (12 ounce) can pinto beans, drained and rinsed
1 (12 ounce) can garbanzo beans, drained and rinsed
2 ounces crumbled feta cheese
¼ cup olive oil
⅛ cup white vinegar or white wine vinegar
⅛ cup balsamic vinegar
1 teaspoon salt
1 teaspoon sugar

Steps:

  • In a large bowl, toss red bell pepper, onion, and artichokes together with kidney, pinto, and garbanzo beans. Set aside.
  • In a separate bowl, whisk salt and sugar with white and balsamic vinegars until completely dissolved. Slowly whisk in olive oil. Adjust seasoning as desired.
  • Pour dressing over bean mixture, and toss to coat. Cover and refrigerate at least one hour before serving. Serve chilled.

15 ounces kidney beans

16 ounces green beans
16 ounces wax beans
1 small red onion, diced
1 green bell pepper, chopped
1/4 cup water
2 tablespoons sugar
1/2 cup balsamic vinegar
1/4 cup oil
1 teaspoon oregano
1/2 teaspoon garlic, minced

Steps:

  • Rinse and drain beans in a colander. Transfer to a large bowl with lid.
  • Stir onion and bell pepper into beans.
  • Dissolve sugar in water for 1 minute in microwave safe measuring cup.
  • Whisk in remaining ingredients until combined.
  • Pour over beans and toss to coat evenly.
  • Allow to marinate 4 or more hours.
