The cilantro- and lemon-laced tahini sauce is a perfect bold partner for potatoes in this Middle-Eastern-style potato salad recipe. The green tahini sauce is also great tossed with roasted carrots or broccoli.

3 pounds small new potatoes, scrubbed
2 tablespoons kosher salt plus 1/2 teaspoon, divided
1 bunch fresh cilantro, coarsely chopped
1/2 cup tahini (see Tip), at room temperature
¼ cup lemon juice
2 tablespoons water at room temperature, plus more as needed
2 tablespoons chopped fresh parsley
2 teaspoons extra-virgin olive oil

Steps:

  • Place potatoes in a large pot, add 2 tablespoons salt and cover with cold water by about 2 inches. Bring to a boil. Reduce heat and simmer until tender, about 15 minutes. Let the potatoes cool to room temperature in the water, 1 1/2 to 2 hours. Drain and cut the potatoes in half.
  • Combine cilantro, tahini, lemon juice and water in a food processor (or blender); process until very smooth, adding additional room--temperature water by the tablespoon as needed for a smooth sauce.
  • Toss the potatoes in a large bowl with the tahini sauce, parsley and the remaining 1/2 teaspoon salt. Drizzle with oil just before serving.

1/3 cup olives or 1/3 cup vegetable oil
1 large onion, finely chopped (1 cup)
3 garlic cloves, finely chopped
3 lbs waxy boiling potatoes, peeled and sliced
1 cup fresh spinach, finely shredded
1/4 cup fresh parsley, chopped
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper

Steps:

  • In a heavy saucepan heat the oil and saute the onion until tender but not browned. Add the garlic and cook, stirring for 3 minutes. Add the potato slices and enough hot water to barely cover.
  • Bring to a boil, cooking slowly for 15 minutes or until the potatoes are barely tender but holds its shape.
  • Add spinach, parsley, salt and pepper and reheat for 5 more minutes. Serve hot with cooking liquid.

4 large Yukon Gold potatoes, peeled and cut into 2-inch pieces
Kosher salt
8 tablespoons butter, cold, cut into pats
2 tablespoons all-purpose flour
1 cup milk, scalded
3/4 to 1 cup shredded Monterey Jack cheese
1/4 cup grated Parmigiano-Reggiano
1 poblano chile, roasted, and then peeled, seeded and finely diced
Freshly ground black pepper
1/2 to 3/4 cup cream, warmed
Chopped fresh cilantro, for garnish

Steps:

  • Put the potatoes in a large pot with 2 tablespoons of salt and cover by a few inches of cold water. Bring to a boil, cover and cook until a paring knife inserted in the center meets no resistance.
  • Meanwhile, heat 2 tablespoons of the butter in a medium saucepan over medium heat. Whisk in the flour and cook 1 minute. Whisk in the hot milk and increase the heat to high, cooking until the milk has thickened and the flour taste has been cooked out, about 5 minutes. Remove from the heat and whisk in the Monterey Jack cheese until smooth and melted. Stir in the Parmigiano-Reggiano and poblano chile and season with salt and pepper.
  • Drain the potatoes well, and then return to the pot over low heat to dry out. When the potatoes turn white and become dry, pass them through a ricer into a large glass bowl. Gently combine the potatoes with the remaining 6 tablespoons butter and the warm cream, using a wooden spoon. Season with salt and pepper.
  • Make a well in the middle of the potatoes and fill with the cheese sauce. Garnish with cilantro and serve.

4 large baking potatoes
2 tablespoons butter
2 tablespoons thinly sliced green onions
2 tablespoons all-purpose flour
½ cup milk
½ cup half-and-half
salt to taste
¼ cup half-and-half
1 tablespoon butter
¾ cup grated Parmesan cheese, divided
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Arrange potatoes on a baking sheet.
  • Bake potatoes in the preheated oven until tender, about 1 hour.
  • Melt 2 tablespoons butter in small pot over medium heat. Add green onions; cook until soft, about 4 minutes. Stir in flour until well blended, about 1 minute. Pour in milk and 1/2 cup half-and-half gradually, stirring sauce constantly. Season with salt and cook until sauce is thickened, 10 to 15 minutes.
  • Cut a slice from the top of each baked potato and scoop the pulp into a bowl. Mash pulp until no lumps remain. Add 1/4 cup half-and-half and 1 tablespoon butter; blend together with an electric mixer. Stir in 1/2 cup Parmesan cheese and pepper until fully combined.
  • Fill baked potato skins with the mashed pulp mixture; make a well on top of each potato. Fill wells with onion sauce. Sprinkle 1/4 cup Parmesan cheese on top.
  • Turn on the broiler. Return stuffed potatoes to the oven and broil until golden brown; about 15 minutes.

1 1/2 pounds fingerling potatoes or baby potatoes (scrubbed)
1 tablespoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
2 cups fresh cilantro leaves + a few more leaves for garnish
3 tablespoons olive oil
2 tablespoons freshly-squeezed lime juice
1 serrano pepper (seeded and roughly minced)
2 large cloves garlic (roughly minced)
1 tablespoon red wine vinegar
1/8 teaspoon kosher salt + more to taste
1/4 teaspoon granulated sugar or honey (if not vegan, optional)

Steps:

  • Boil the potatoes: Scrub the potatoes and place them in a large pot of salted water. Place on the stove over high heat and bring to a boil. Cook for 8-10 minutes, until just fork tender (they shouldn't be 100% cooked). Remove from heat and run under cold water. Set aside to cool the rest of the way.
  • Make the mojo verde: Add all ingredients to the bowl of a small food processor. Puree. Taste and add additional salt if desired. If it seems too acid, you can add a bit of sugar or honey as noted in the ingredients to tame it. Note: I have made the sauce in my blender as well, but I find there's not quite enough sauce to blend well. Another option is to double or triple the sauce and then refrigerate the remainder for later on.
  • Grill the potatoes. Preheat your grill on medium-high, about 450 degrees Fahrenheit. Slice the potatoes in half and place in a medium bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss gently.
  • Lay potatoes flat-side down on the grill. Cook until browned, about 3 minutes. Carefully flip and cook for another 3-4 minutes on the other side. Test with a fork to make sure they're tender. Transfer potatoes from grill back to the bowl. Pour the sauce over the top. Toss to coat. Sprinkle with additional cilantro leaves and serve.
