POTATOES AND EGGS AU GRATIN
My family absolutely loves this gives a new twist to potatoes This recipe takes about 50 min to make start to finish

- 1. In a covered pan cook whole potatoes in enough boiling salted water to cover until almost tender,20 to 25 min: drain peel and slice ( should be about 3 cups) In sauce pan cook onion in 1 tbsp butter till tender.Blend flour,stir in sour cream,shredded cheese,milk parsley,salt paprika and pepper.Cook and stir over low heat till cheese melts.Combine sour cream mixture and sliced potatoes. In a 1 1/2 quart casserole spread 1/2 the potato mixture,top with egg slices and tomato wedges.Spoon remaining potato mixture on top. Toss bread crumbs with melted butter sprinkle atop.Bake 350 for 15min or till bubbly

This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.

- Preheat the oven to 350 degrees F.
- Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
- Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
- In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

- Preheat oven to 350 degrees F.
- In a large sauce pot over medium-high heat, add butter. Stir in the flour until pasty. Add milk; stir to remove lumps and let cook for 6 minutes until it gets thick. Lower heat and add the cheese, bouillon, nutmeg and black pepper. Whisk until well combined and sauce thickens, approximately 4 minutes. Remove from heat.
- In a bowl, combine butter, panko and smoky paprika. Stir well.
- Place potatoes into a casserole dish. Pour cheese over potatoes and sprinkle au gratin on top. Wrap with foil and bake in oven for 35 to 45 minutes. Remove foil and cook for 10 minutes uncovered. Allow to sit for 10 minutes.

- Peel and slice the potatoes about 3-5mm thick.
- Add to a saucepan and cover with water, bring to the boil and reduce to a simmer for 7- 10minutes, they should be JUST cooked.
- Grease a 25x25 cm square baking dish with butter.
- Well drain the potatoes and pour into the dish, let cool for 20 minutes.
- In a bowl, mix the other ingredients in and pour over the almost cold potatoes. More butter can be dotted over the top if desired.
- Bake at 180oc for 25 minutes.

GRATIN OF POTATOES, HAM, EGGS & ONIONS (JULIA CHILD)
Another yummy-sounding recipe that I am posting for safekeeping. This is baked in an 11-12 inch baking dish or skillet about 2 inches deep or individual baking dishes about 6 inches in diameter.

- Adjust oven rack to upper third of oven and preheat oven to 375 degrees F.
- Cook the onions in the oil and butter over low heat for about 5 minutes, til tender but not browned.
- Raise heat slightly, stir in ham, and cook a moment longer.
- Beat eggs in a mixing bowl with garlic, herbs, cheese, cream or milk, and seasonings.
- Add in the ham and onions; mix.
- Peel and coarsely grate potatoes. Squeeze the water out of the grated potatoes, a handful at a time.
- Stir potatoes into egg mixture. Check seasoning. (May be prepared in advance up to this point.).
- Heat the butter in the baking dish. When it foams, add potato and egg mixture. Place dots of butter on top.
- Bake 30-40 minutes, or until top is nicely browned. Serve directly from the baking dish or skillet.

- Cook potatoes in boiling water 20 min. or just until tender; drain. Cover with cold water; cool.
- Meanwhile, melt butter in medium saucepan on medium heat. Add onions; cook and stir 2 min. Blend in flour and salt; cook 1 min. Gradually stir in milk; cook 5 min. or until thickened, stirring constantly. Add 1-1/4 cups cheddar; cook and stir 1 min. or until melted. Stir in mustard.
- Heat oven to 375°F. Peel potatoes; cut into 1/4-inch-thick slices. Layer alternately with cheese sauce in 2-qt. casserole sprayed with cooking spray, ending with sauce.
- Bake 25 to 30 min. or until heated through. Top with remaining cheeses; bake 5 min. or until melted.

- Spray a large, deep loaf pan with non-stick oil spray.
- Layer frozen potatoes and cheese, making three layers, and ending with cheese.
- Pour cream or half& half evenly over all.
- Cover pan with foil and seal well.
- Bake at 375 for 1 hour, removing foil for last 15 minutes.
- I don't usually add salt before baking as most cheddars are fairly salty.
- This can be varied by using different cheeses such as swiss, blue, smoked gouda, etc.
- You can also use plain hash browns if you don't like the onion/green pepper taste.
- I've never made this using the low-fat/non-fat versions of cheese or cream, but I wouldn't recommend subbing them.
- The glory of this recipe is its decadence.
