Apple bran muffins are easy to make with ingredients that you probably already have in your pantry. Low in fat and high in fiber - they make a great breakfast for your whole family!

1 1/2 cups whole wheat flour
2/3 cup wheat bran
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon fine salt
3 tablespoons butter flavored olive oil (a extra light olive oil would work too)
1/4 cup plain nonfat Greek yogurt
1/2 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup milk
1 1/2 cups chopped Granny Smith apples
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 375°F and line 12 muffin cups with liners, or lightly spray with cooking spray.
  • Whisk dry ingredients in a medium bowl, set aside.
  • Using a mixer, beat oil, yogurt, and sugar on high until combined. Beat in eggs and vanilla until combined. With mixer on low, alternate adding flour mixture and milk (about half of each at a time). Fold in chopped apples.
  • Divide into prepared muffin cups and sprinkle tops with turbinado sugar. Bake for 20-25 minutes.

This is one of my favorite bran muffin recipes, handed down from my mom. I made a few tweaks to make it even healthier. Add some raisins for a touch of sweetness.

½ cup brown sugar
½ cup applesauce
¼ cup canola oil
1 egg
1 teaspoon vanilla extract
¾ teaspoon salt
1 cup whole wheat flour
1 cup natural wheat bran
3 tablespoons ground flax
1 teaspoon baking soda
½ teaspoon baking powder
1 cup milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
  • Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
  • Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.

Number Of Ingredients 14

2 large golden Delicious apples, peeled and chopped
1/2 cup butter, cubed
3 cups All-Bran
1 cup boiling water
2 cups buttermilk
2 eggs, lightly beaten
2/3 cup sugar
1 cup raisins
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt

Steps:

  • In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

¾ cup bran cereal (such as General Mills® Fiber One®)
1 cup whole wheat flour
1 tart apple, peeled and diced
1 tablespoon brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon salt
1 ½ cups cold apple cider
½ cup applesauce
2 eggs
2 tablespoons vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray two 24-cup mini muffin tins with cooking spray.
  • Place bran cereal in the bowl of a food processor; process until ground to a flour-like consistency. Transfer to a large bowl. Add flour, apple, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt; toss to combine.
  • Mix together apple cider, applesauce, eggs, vegetable oil, and vanilla extract in a separate bowl. Add flour mixture to the apple cider mixture and gently mix until combined; batter will appear runny. Allow to rest while baking soda and apple cider cause batter to thicken and double in size, 1 to 2 minutes.
  • Scoop a small amount of batter into the prepared muffin cups.
  • Bake in the preheated oven until tops spring back when lightly pressed, 10 to 12 minutes. Allow to cool before eating.

These muffins are rather dense and chewy and totally delicious! Lots of fiber and not too sweet. You can add raisins (1 C) and/or chopped nuts (1/2 C) and you can add some ground cloves (1/2 tsp) and/or ground nutmeg (1/4 tsp.) along with the cinnamon. Makes 2 dozen regular muffins or 4 dozen mini muffins.

1 1/2 cups all bran cereal
1 cup buttermilk
1/3 cup canola oil
2 eggs
1 cup sugar
2 apples, peeled, cored and grated
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon kosher salt or 1/2 teaspoon table salt
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Mix the cereal, buttermilk, oil, eggs and sugar in a medium bowl.
  • Add the grated apple and mix together. (If using raisins and/or chopped nuts, add them at this time.) Let the apple mixture sit while you measure the dry ingredients.
  • In a large bowl measure the flour, baking powder, salt and spices. Mix together with a wire whisk.
  • Pour the apple mixture into the dry ingredients and mix with a wooden spoon just until all the dry ingredients are moistened. Mixture will be lumpy.
  • Prepare muffin tins with spray release and fill muffin cups a little more than half full.
  • Bake regular size muffins about 15 to 18 minutes and mini or "gem" muffins about 13 minutes. Let muffins sit in pans for 2 to 3 minutes before gently turning out onto a baking rack to cool.
  • These freeze very well.

3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon baking soda

1-1/2 cups 2% milk
4 eggs
2/3 cup packed brown sugar
1/2 cup canola oil
2 teaspoons vanilla extract
3 cups All-Bran
2 cups shredded peeled tart apples
1 cup chopped walnuts
1 cup raisins

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl, combine the milk, eggs, brown sugar, oil and vanilla. Stir into dry ingredients just until moistened. Fold in remaining ingredients., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 cup whole wheat flour
3/4 cup wheat bran
1/2 cup sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon baking powder

1/2 cup vanilla yogurt
1/2 cup unsweetened applesauce
1/4 cup canola oil
1/2 cup grated apple
1/2 cup raisins
1 teaspoon grated orange zest

Steps:

  • In a bowl, combine the first six ingredients. In another bowl, whisk the egg, yogurt, applesauce and oil. Stir into dry ingredients until just moistened.
