Potatoes Au Gratin With Gruyere Recipe image

Add some decadence to your weeknight meal with this potatoes au gratin recipe, topped off with Gruyere cheese for extra richness.

Provided by Catherine Brookes,Tasting Table Staff

Categories     side dish

Time 1h10m

Number Of Ingredients 7

46 ounces medium-sized potatoes, peeled
1 cup milk
2 cups heavy cream
2 large cloves garlic, peeled
1 ¾ cups grated Gruyere cheese
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 375 F.
  • Slice the potatoes into thin rounds - less than ¼ inch in thickness.
  • Add the milk, cream, and whole garlic cloves to a large saucepan and heat on a burner at medium until simmering, stirring frequently with a wooden spoon.
  • Add the sliced potatoes to the pan and let them simmer in the garlic infused milk/cream for 5 minutes, and move the potatoes around in the pan frequently with a wooden spoon to prevent them from sticking to the bottom.
  • Using a large slotted spoon, remove the potatoes from the pan and add about half of them to a large, ovenproof baking dish. Spread the potatoes out in an even layer.
  • Remove the rest of the potatoes from the pan and set them aside.
  • Remove the garlic cloves from the pan and pour about half of the cream mixture evenly over the top of the potatoes in the oven dish.
  • Sprinkle salt and pepper over the potatoes, then sprinkle half of the grated cheese evenly over the top.
  • Add the remaining potatoes on top in another layer, then add the cream, salt and pepper, and cheese once again.
  • Bake the potatoes for 45 to 50 minutes, or until they are bubbling and golden on the top.
  • Remove the dish from the oven and let it rest for several minutes, then serve, optionally sprinkled with fresh chives.

butter pastry dough for a single-crust 12-inch tart
1/2 pound Jack or Gruyère cheese, shredded (about 2 cups)

  • Serve tart warm or at room temperature.

POTATO, ONION AND GRUYERE GALETTE

Potato, Onion and Gruyere Galette image

Use only low starch, waxy potatoes as all others will become mealy. And a low sulphur sweet onion like Walla Wall, Vidalia or Maui works great. The crust is crisp and cheesy and the center is tender and buttery without being overly rich. It makes a wonderful lunch or dinner served with a side salad.

BAKED TOMATO, GRUYèRE & POTATO GRATIN

Baked tomato, gruyère & potato gratin image

Layer up sliced potatoes and tomatoes with a cheesy, creamy sauce, then top with walnuts and breadcrumbs for a vegetarian bake

Provided by Sarah Cook

Categories     Dinner, Lunch, Main course, Supper

Time 1h40m

Number Of Ingredients 12

a few knobs of butter , plus extra for greasing
4-5 thyme sprigs
200g gruyère , grated
100g parmesan (or vegetarian alternative), finely grated
500ml pot double cream
300ml vegetable or chicken stock
1 ½kg large potatoes , thinly sliced (on a mandolin if you have one)
8 round shallots or 4 banana shallots, thinly sliced
3 fat garlic cloves , finely chopped
100g walnuts , chopped
650g mixed tomatoes , sliced
5 tbsp dried breadcrumbs

Steps:

  • Heat oven to 180C/160C fan/gas 4. Generously grease a large, deep, ovenproof dish. Strip the leaves from 3 of the thyme sprigs. Mix the gruyère with all but 2 tbsp of the grated parmesan, then mix the double cream with the stock.
  • Start layering up the sliced potatoes with sprinklings of the shallots, garlic, thyme leaves, cheese and most of the walnuts, plus plenty of seasoning. Drizzle a little of the cream mixture over each layer too. When you've layered in half of those ingredients, top with half of the tomatoes. Continue layering the rest of the ingredients, finishing with the last of the cream. Top with the remaining tomatoes, then sprinkle over the breadcrumbs, the remaining parmesan and walnuts, and enough thyme to look pretty. Add a few more knobs of butter, then cover with foil.
  • Bake the gratin for 1 hr 15 mins, then remove the foil and bake for a further 40 mins until golden and crispy on top, and a knife poked into the centre of the potatoes slides in easily. Leave to rest for 10-15 mins, then serve.

POTATO, TOMATO AND CHEESE TART

Potato, Tomato and Cheese Tart image

Thinly sliced Yukon Gold potatoes make a wonderful savoury crust in this recipe, filled with layers of melted cheese, and plum tomatoes. For the best flavor, a full-fat Gruyere cheese is blended with reduced fat cheese, To make the dish even lighter, you can use only reduced fat cheese. Serve this dish with a salad of crisp lettuce and slices of crusty Italian bread.

RED ONION, GRUYèRE & ROSEMARY FOUGASSE

Red onion, gruyère & rosemary fougasse image

This flat, round fougasse loaf is very popular all over France and is a cousin of the Italian focaccia

Provided by Mary Cadogan

Categories     Side dish

Time 2h10m

Yield Makes 2, serves 3-4 (1 loaf)

Number Of Ingredients 10

1 red onion
1 tbsp olive oil , plus a little extra
100g gruyère
few rosemary sprigs
coarse sea salt
7g sachet easy-blend yeast or 15g fresh yeast
500g strong white bread flour, plus extra for dusting
2 tsp salt
1 tsp sugar
2 tbsp olive oil

Steps:

  • Tip the flour into a mixing bowl. For easy-blend dried yeast, stir this into the flour. For fresh yeast, crumble it and rub into the flour as you would with butter when making pastry. Add the salt and sugar.
  • Boil the kettle and measure 100ml into a jug. Top up with cold water to the 300ml mark. Test the temperature with your finger - it should feel perfectly hand-hot. Add the oil.
  • Make a well in the centre of the dry ingredients and pour in the liquid all at once. Mix quickly using your hands or a wooden fork to make a soft and slightly sticky dough. Wipe the dough around the bowl to pick up any loose flour.
  • Sprinkle the work surface with flour and tip out the dough. Knead by stretching it away from you, then folding it in half towards you and pushing it away with the heel of your hand. Give it a quarter turn and repeat, developing a rhythm.
  • When the dough is smooth, put it back into the mixing bowl, cover with a tea towel and leave to rest for 1 hr (no need to find a warm place). The dough is ready when it springs back when you press it with your finger.
  • Thinly slice the onion and gently cook in the oil until softened, about 5 mins. Cut the gruyère into small cubes. Chop half the rosemary.
  • Tip the dough onto a lightly floured surface and lightly knead in the onion and chopped rosemary.
  • Using a sharp knife, cut the dough in half. Roll or press out one piece of dough to a rectangular shape about 20cm x 25cm, then transfer to a baking sheet lined with non-stick paper. Make a large diagonal cut across the centre of the dough almost to the ends. Make three smaller diagonal cuts either side of the large cut to make a leaf shape.
  • Repeat with the other piece of dough. Stick gruyère cubes and rosemary sprigs into the dough at intervals, then sprinkle with a little flour and sea salt. Heat oven to 240C/220C fan/gas 8. Leave the loaves to prove for 20 mins then bake for 13-15 mins until golden. Serve warm with soups and starters.
