POTATO, SPINACH AND CHEESE EGG CASSEROLE



Potato, Spinach and Cheese Egg Casserole image

A hearty vegetarian breakfast casserole that's perfect for brunch! This Potato, Spinach and Cheese Egg Casserole is also an easy make ahead breakfast.

1 tablespoon unsalted butter (or olive oil)
½ cup finely chopped onion
½ cup chopped bell pepper
3 cups baby spinach (chopped)
1 large russet potato
5 ounces pepper jack cheese (1 ¼ cups shredded (see note))
2/3 cup plain Greek yogurt (see note)
¾ cup milk
12 large eggs
½ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13-inch baking dish with cooking spray. Set aside.
  • Melt the butter in a medium skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened (2-3 minutes). Transfer the onion and peppers to the baking dish.
  • Add the spinach to the skillet and cook, stirring, for about 1 minute until it wilts slightly. Transfer spinach to the baking dish.
  • Peel the potato. Chop the potato into ½-inch pieces, or shred using a box grater. Add potato to the baking dish with the other vegetables. Add the grated cheese and stir to mix.
  • In a large bowl, whisk together the Greek yogurt and milk until smooth. Add the eggs, salt and pepper to the bowl and whisk until well combined. Pour the egg mixture into the baking dish and stir gently to evenly distribute the vegetables and cheese.
  • Cover with foil and bake for 45 minutes. Uncover and bake for 10-20 more minutes, until eggs are set. Serve warm or at room temperature.

3 tablespoons unsalted butter, plus more, softened, for brushing
1 onion, chopped (2 cups)
Kosher salt and freshly ground pepper
1 pound curly-leaf spinach, thick stems removed, sliced (8 packed cups)
2 teaspoons fresh thyme leaves
1 pound Yukon Gold potatoes, peeled and cut into a 1/2-inch dice (3 cups)
1 1/2 cups whole milk
12 large eggs
Scant 1/4 teaspoon freshly grated nutmeg
6 ounces fontina, coarsely grated (2 cups)

Steps:

  • Preheat oven to 375°F. Brush a 2-quart baking dish with butter. Melt butter in a large skillet over medium-high heat. Add onion and 1/2 teaspoon salt; cook, stirring occasionally, until golden in places, 5 to 7 minutes. Add spinach and thyme; cook until spinach wilts and darkens slightly, about 5 minutes. Add potatoes and milk; season with pepper.
  • Simmer until milk thickens and reduces slightly and potatoes are easily pierced with the tip of a knife but still retain their shape, about 5 minutes. Remove from heat; let cool completely. Meanwhile, in a large bowl, whisk eggs with 1 1/2 teaspoons salt and nutmeg. Stir cooled potato mixture and half of cheese into eggs.
  • Transfer to prepared baking dish and cover with parchment-lined foil. (If assembling the day before, wrap the dish with plastic wrap and refrigerate until ready to bake). Bake casserole, covered, 30 minutes. Uncover, sprinkle evenly with remaining half of cheese, and continue baking until set and golden brown in places, 15 to 25 minutes more (if the top is browning too quickly, tent with foil). Let cool slightly before serving.

1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup sour cream
¼ cup butter
2 tablespoons chopped green onions
2 teaspoons salt
¼ teaspoon black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
  • In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.
  • Bake for 15 minutes. Top with cheese and bake 5 minutes longer.

1 pound bulk lean turkey breakfast sausage
1-3/4 cups sliced baby portobello mushrooms, chopped
4 cups fresh spinach, coarsely chopped

1 cup 2% milk
Dash seasoned salt
2 cups shredded cheddar cheese
6 cups frozen potato crowns

Steps:

  • Preheat oven to 375°. In a large skillet, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles. Add mushrooms and spinach; cook until mushrooms are tender and spinach is wilted, 2-4 minutes longer., Spoon sausage mixture into a greased 13x9-in. baking dish. This is one of my old stand-by recipes from the More with Less Cookbook. It's a good one for those nights when I don't really feel like cooking. I suppose this is meant to be a side dish, but I always up the amounts a bit and serve it as a meatless main dish. The original recipe calls for the addition of dill seed and chives, but I never use them for our family.

4 large potatoes
1/3-1/2 cup sour cream
1 teaspoon salt
1 dash pepper
2 -4 tablespoons butter (optional)
milk
1 cup cooked frozen spinach, well drained and chopped (I just use frozen, thawed and pressed dry)
1/2-1 cup grated cheddar cheese
1/2 teaspoon dill seed (optional)
2 teaspoons chives (optional)

Steps:

  • Peel, cook and mash potatoes.
  • Add sour cream, salt, pepper (and butter if desired).
  • Mix in enough milk to bring it to your favorite mashed potato consistency.
  • Add spinach (and seasonings if desired).
  • Place in casserole dish and top with grated cheddar cheese. (sometimes I also mix a bit of the cheese in with the potatoes before topping).
  • Bake in 350 oven for 20-30 minutes.
  • We like to serve this with corn, which usually ends up mixed in with all the rest.

Steps:

  • Position a rack in top third of oven; preheat to 350°F. Whisk eggs, cream, 1 1/2 teaspoon salt, and 3/4 teaspoon pepper in a large bowl; set aside.
  • Melt 1 tablespoon butter in a 12" cast-iron or nonstick ovenproof skillet over medium heat. Add sausages and cook, turning often, until browned all over, about 10 minutes. Transfer to a plate. Add leeks to skillet. Season with salt; cook until wilted, about 5 minutes. Transfer to a small bowl.
  • Melt 3 tablespoons butter in same skillet over medium heat. Add potatoes, spreading out in an even layer. Cook without stirring until bottom and edges are crisp and golden brown, about 10 minutes. Slide potato pancake onto a large plate. Invert onto another large plate. Melt 1 tablespoon butter in skillet. Slide potato pancake into skillet, browned side up; cook until bottom is golden brown, about 10 minutes.
  • Scatter spinach, leeks, and sausages over potato pancake, each in an even layer. Season with salt and pepper, then pour in egg mixture. Sprinkle both cheeses over.
  • Bake until casserole is puffed and golden brown, 35-40 minutes. Serve warm or at room temperature.

Steps:

  • Set oven to 350 degrees Grease a shallow 2-quart casserole dish.
  • Squeeze as much as the water as possible from the spinach; set aside.
  • Peel and shred the potatoes.
  • Mix potatoes with the eggs, melted butter, salt, pepper, onion, parsley and dill.
  • Transfer half of the potato mixture into the bottom of a greased casserole dish.
  • Top with the spinach, then sprinkle the crumbled feta cheese over the spinach.
  • Top with the remaining potato mixture.
  • Cover, and bake for 30 minutes.
  • Remove the casserole from the oven, uncover, and sprinkle with Parmesan cheese, and dot with 2-3 Tbsp butter.
  • Bake uncovered for 25-30 minutes longer.
