Steps:
- Preheat oven to 375.
- Scrub potatoes and slice 1/2" thick slices from end to end.
- Keep each potato together.
- I use individual ramekins to bake them in, but you can use a caserole dish that will hold the potatoes so they don't fall apart.
- Brush some of the oil in the bottom of the ramekins and put one potato in each.
- Spread the slices a little so they are kind of loose.
- Brush the rest of the oil on the potatoes.
- Sprinkle rosemary and salt on top and top with butter.
- Bake 1 hour or until fork tender.
- The whole thing should come right out together and can be served on plates.
- Drizzle remaining oil and butter over top.
POTATO BAKE WITH MOZZARELLA AND ROSEMARY

- Heat oven to 350ºF.
- Cook potatoes in boiling water in saucepan 10 min. or until tender; drain. Cool 10 min. Meanwhile, whisk half-and-half, mustard, egg and pepper in bowl.
- Arrange 1/3 of the potatoes, slightly overlapping, in bottom of 1-1/2 qt. casserole sprayed with cooking spray. Top with 1 tsp. rosemary and 1/3 cup cheese. Repeat layers twice. Pour half-and-half mixture over potato mixture.
- Bake 40 min. or until golden brown.

POTATO WITH MOZZARELLA

- Preheat oven to 350 degrees.
- In a small bowl, mix bread crumbs, olive oil, and a pinch of salt and pepper.
- Peel potatoes and cut in fourths lengthwise. Cover potatoes generously with bread crumb mixture and place slices on thin sheet pan.
- Place potatoes in the oven and cook for 1 hour. Remove potatoes from the oven and sprinkle shredded mozzarella and grated Parmesan on top of the potatoes and place back in the oven for 5 minutes or until cheese is melted and golden brown.
TWICE BAKED POTATOES WITH MOZZARELLA, TOMATO AND BASIL
I love this flavourful variation on the usual twice baked potatoes. It looks bright and colourful too. The pine nuts provide a lovely nuttiness and texture but they can be left out if they are not to your liking.

- Preheat the oven to 350°F or 180°C.
- Bake the potatoes in the oven for about an hour, until the skins are firm and the centre is soft.
- Meanwhile, chop the cherry tomatoes into eighths and set aside. Add the grated mozzarella, chopped basil and pine nuts.
- When the potatoes are cooked, remove from the oven. Halve them lengthways and scoop out the majority of the flesh with a spoon. Be very careful not to tear the skin- leave a quarter inch of flesh still in the skin to provide a firm shell.
- Lightly mash with a fork the flesh that has been removed from the skins. Mix in the cream cheese. Season to taste with salt and pepper.
- Add the mozzarella and tomato mixture to the mashed potato and scoop back into the shells.
- Place on a foil-covered baking tray and bake for 5-10 minutes, until the filling is hot and beginning to turn golden.
- Serve hot!

Steps:
- Heat butter in a large skillet until melted.
- Add onions, rosemary, salt and pepper.
- Cook over low heat until onions are soft and browned slightly about 20 minutes.
- Arrange 1/2 of the potato slices on the bottom of a 10"x 1 1/2" greased pie dish.
- On top of the potatoes add 1/2 the onion mixture.
- Repeat steps 4 and 5.
- Pour half and half over the top.
- Cover with aluminum foil and bake at 350F for 1 hour.
- Uncover and cook for 20 minutes longer.
- Cut into wedges to serve.

Stolen from the Food Lovers Diet Book..this recipe is so simple and so wonderfully delicious. I love it as a meal in itself with a salad but of course it is a fabulous side dish too.

- Preheat the oven to 180 degrees Celsius Grease a 6cm deep 24cm square baking dish.
- Melt the butter in a saucepan over medium heat. Add the flour and cook, stirring constantly for 2 minutes or until bubbly. Remove from the heat.
- Slowly add the milk, stirring constantly until well combined. Return to the heat. Add the rosemary and the garlic, and cook, stirring, until the sauce comes to the boil.
- Add 1 1/2 cups of the cheese and stir in to combine.
- Arrange 1/3 of the potatoes over the base of the baking dish, so that they overlap slightly. Season with salt and pepper. Spoon 1/3 of the sauce over the potatoes. Repeat twice more, then sprinkle with the remaining cheese.
- Bake in the oven for approx 1 hour, or until the potatoes are tender and the top is golden. if the top begins to brown too much, cover with foil.
