2 large cucumbers, chopped
1 small red onion, sliced
1/2 cup white wine vinegar, divided
2 pounds small red potatoes, halved
2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon celery seed
1/2 teaspoon coarsely ground pepper
1 package (6 ounces) fresh baby spinach
8 bacon strips, cooked and crumbled
1/2 cup snipped fresh dill
1/4 cup olive oil

Steps:

  • In a small bowl, combine the cucumbers, onion and 1/4 cup vinegar. Let stand for 20 minutes., Meanwhile, place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain. Transfer to a large bowl. Drizzle with remaining vinegar; sprinkle with garlic, salt, celery seed and pepper. Cool. , Add the spinach, bacon, dill, oil and cucumber mixture; toss to coat. Serve at room temperature or chilled.

Warm Spinach Potato Salad with Bacon Vinaigrette image

This warm spinach potato salad with a bacon vinaigrette is a perfect salad or side dish recipe of fresh ingredients and flavors!Recipe from Sur La Table.

1 ½ pounds fingerling potatoes (scrubbed and trimmed)
6 slices good quality bacon (thinly sliced crosswise into 1/4 inch strips)
1 large shallot (thinly sliced)
2 medium garlic cloves (thinly sliced)
¼ cup apple cider vinegar
2 Tablespoons whole grain mustard
2 teaspoons granulated sugar
1 teaspoon sea salt (plus more as needed)
freshly ground black pepper
4 cups baby spinach (large stems removed)
2 Tablespoons chopped herbs (flat-leaf parsley, chives, and/or dill)

Steps:

  • Steam the potatoes for about 10 minutes (until tender when pricked with a fork).
  • While the potatoes are steaming, cook the bacon in a large skillet until crispy (about 8 - 10 minutes).
  • When the potatoes are tender transfer to a medium bowl and cover with foil to keep warm.
  • Remove the bacon and place on a paper towel to drain. Use a slotted spoon and leave the bacon grease in the pan.
  • Add the shallot and garlic to the pan and cook in the bacon grease until softened (about 1 minute).
  • Whisk in vinegar, mustard, sugar and salt. Cook until mixture is thickened and reduced by half, about 5 minutes.
  • Remove the skillet from the heat. Taste and adjust seasonings with salt and pepper.
  • Cut each fingerling potato crosswise at a forty-five degree angle into 1/2 inch thick slices.
  • Add the potatoes to the skillet and toss to coat with dressing.
  • Add the spinach, herbs, and cooked bacon and gently toss to coat with dressing.
  • Taste and adjust seasonings once more with salt and pepper.
  • Serve immediately.

I got this recipe from "The Good Egg" by Marie Simmons. She also offers a version with bacon, but I think this is really good without it. I'd guess this doesn't keep too well...I couldn't say for sure, though, because we finished it off pretty fast.

1 1/2 lbs waxy potatoes
4 cups packed rinsed, and trimmed spinach leaves (or just use baby spinach)
6 hard-boiled eggs, peeled and quartered
1 red onion, cut in slivers
10 tablespoons vegetable oil
7 tablespoons cider vinegar
1 tablespoon Dijon mustard

Steps:

  • Place the potatoes in a saucepan and boil, covered, until tender (approx. 25 minutes). Drain and let cool.Peel the potatoes and cut in 1/2-inch pieces.
  • Add potatoes, spinach, eggs, and onion to a serving bowl.
  • Add the oil, vinegar, mustard, and 1 tsp salt to a skillet and cook over low heat, whisking, until very hot.
  • Pour the hot dressing over the salad and toss to blend. Salt and pepper to taste.

A hearty main meal salad that's easily doubled to feed a crowd

500g small new potatoes
2 tbsp pesto sauce
3 tbsp olive oil
1 tbsp white wine vinegar
half a bag washed-and-ready-to-use young leaf spinach
2 roasted red peppers from a jar, drained and cut into strips
2 x 185g cans of tuna , drained and flaked (any kind will do)

Steps:

  • COOK THE POTATOES: Bring a large pan of salted water to the boil. Tip in the potatoes, bring back to the boil and cook for 15-20 minutes until tender.
  • MAKE THE DRESSING: Whisk the pesto with the olive oil and white wine vinegar and season with salt and pepper.
  • BRING IT ALL TOGETHER: Drain the potatoes and, while they are still hot, tip them into a large bowl with the spinach, peppers and dressing. Toss everything together so the heat from the potatoes gently wilts the spinach and the dressing coats all the leaves. Now add the tuna and carefully toss again to keep the tuna in fairly large flakes. Pile on to plates and serve immediately.

Our beetroot are nearly ready to come out, so we're on the hunt for some good recipes. Here's one that I found on Australian dairy company, Pauls' website which I would like to try out. It has a dressing that sounds beautiful, made with orange juice & rind, plain yoghurt and garlic.

3 beetroots, unpeeled, cut into wedges
1 sweet potato, unpeeled, cut into wedges
20 g butter, melted
3 teaspoons brown sugar
1 cup low-fat plain yogurt
1/4 cup orange juice
2 teaspoons orange rind, finely grated
1 garlic clove, crushed
500 g baby spinach leaves
100 g green beans, blanched
2 tablespoons pistachio nuts, chopped, toasted
pepper, to taste

Steps:

  • Place beetroot and sweet potato in baking dish, drizzle over the butter and sprinkle with sugar.
  • Bake at 200°C for 45 minutes, turning occasionally.
  • Combine yogurt, juice, rind and garlic.
  • Arrange the spinach, beans and roasted vegetables on serving plates.
  • Drizzle over the dressing and sprinkle with pistachio nuts and pepper.

Caution! This is quite addictive. I made this wonderful peasant style recipe tonight with some changes from the original. This is my adapted version.

4 large russet potatoes, peeled and diced
3 tablespoons olive oil
6 -8 garlic cloves, thinly sliced
1 -2 teaspoon red pepper flakes
salt and pepper
1 (9 ounce) package microwavable package fresh spinach

Steps:

  • Cook potatoes in boiling salted water until tender and drain in a colander reserving 1/4 cup of liquid.
  • Let potatoes steam 3 minutes, shaking once, then remove to a serving dish.
  • While potatoes are cooking, place oil, garlic and red pepper flakes in a small skillet and cook slowly over low heat until garlic is lightly browned.
  • When potatoes are ready, cook spinach according to package directions.
  • Add spinach, garlic-pepper oil (and some reserved liquid if needed) to potatoes, toss, season with salt and pepper and serve at once.

3 tablespoons extra-virgin olive oil
2 teaspoons coriander seeds
1 teaspoon fennel seed
3/4 teaspoon ground cinnamon
1 1/2 teaspoons sea salt, plus extra for final seasoning
1/2 lb fresh spinach, roughly chopped
1 cup walnuts (raw or toasted)
1/2 cup dried cranberries
goat cheese (optional) or feta cheese (optional)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, toss the chopped sweet potatoes with the olive oil, coriander seeds, fennel seeds, cinnamon, and 1 1/2 tsp of the sea salt, coating evenly.
  • Spread the potatoes in a baking dish and roast them until fork tender or about 25 to 30 minutes. Remove from oven.
  • In a large bowl toss the sweet potatoes with the chopped spinach. The heat from the potatoes will slightly wilt the spinach.
  • Once the potatoes cool, stir in the walnuts, cranberries and goat or feta cheese if using and serve.

I roasted my sweet potato and used spring onions in place of the garlic stems. I also skipped the red pepper flakes and saffron, though I'm sure each would be a fine addition.

  • Let mixture cool then add dill, spearmint, parsley, garlic stems and spinach.
  • Dress with some lemon juice and olive oil.
  • Garnish with a dollop of yogurt and pine nuts.
