Quesadillas with Sausage and Peppers image

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil
8 ounces sweet Italian sausage, casings removed
2 bell peppers (any color), sliced
1 small onion, sliced
2 cloves garlic, finely chopped
1 teaspoon dried oregano
Kosher salt and freshly ground pepper
1 1/3 cups marinara sauce
4 large flour tortillas (burrito-size)
1 8-ounce bag shredded mozzarella cheese (about 2 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon and stirring occasionally, until browned and mostly cooked through, about 5 minutes.
  • Add the bell peppers, onion, garlic, oregano, 1/2 teaspoon salt and a few grinds of pepper to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 15 minutes. Add 1/3 cup each marinara sauce and water and cook, stirring, until the vegetables are lightly coated and the skillet is mostly dry, 3 to 5 minutes. Transfer to a medium bowl and carefully wipe out the skillet.
  • Lay the tortillas on a work surface. Top one side of each tortilla with 1/4 cup mozzarella, 1/2 tablespoon Parmesan, one-quarter of the sausage-and-peppers mixture and another 1/4 cup mozzarella and 1/2 tablespoon Parmesan. Fold the tortillas over the filling and gently press.
  • Brush the tortillas with the remaining 1 tablespoon olive oil. Working in two batches, cook the quesadillas in the reserved skillet over medium heat until browned, about 2 minutes per side.
  • Warm the remaining 1 cup marinara sauce in a small saucepan or the microwave. Cut the quesadillas into wedges. Serve with the sauce for dipping.

MASHED POTATO QUESADILLA

Mashed Potato Quesadilla image

I had something like this at a restaurant last night and I had to try to duplicate it at home! It reminds me of a perogies! I think that this recipe can really be played up with just about anything you like with potatoes! This can be a super fast meal if you use the heat and serve bacon and premade mashed potatoes!

Provided by MrsB

Categories     World Cuisine Recipes     Latin American     Mexican

Time 31m

Yield 4

Number Of Ingredients 8

2 cups mashed potatoes
6 slices cooked bacon, crumbled
¼ cup sliced green onions
8 flour tortillas
2 cups shredded Cheddar cheese
2 tablespoons softened butter
1 cup salsa
¼ cup sour cream

Steps:

  • Stir together the mashed potatoes, bacon, and green onions. Spread the mashed potato mixture onto one side of half of the tortillas, spreading to within 1/2 inch of the edges. Sprinkle the shredded cheese on top of the mashed potatoes and top with the remaining tortillas. Lightly butter each side of the quesadillas.
  • Preheat a large skillet over medium heat. Place a quesadilla into the preheated pan, and cook until golden brown and crispy, then turn over, and continue cooking on the other side until browned, 2 to 3 minutes per side. Repeat with remaining quesadillas. Serve with salsa and sour cream.

SAUSAGE AND POTATO QUESADILLAS

Sausage and Potato Quesadillas image

Spicy sausage meets mellow potatoes in this cheesy favorite.

Categories     potato     sausage     and     quesadillas

Yield 4

Number Of Ingredients 9

1 lb. fresh chorizo or other sausages
1 tbsp. plus 1 teaspoon cooking oil
1 baking potato (about 1/2 pound)
3/4 tsp. hot paprika
1/4 tsp. salt
12 6-inch flour tortillas
1/4 c. Chopped red onion
1/2 c. Cilantro leaves
1/2 lb. Monterey Jack

Steps:

  • Heat the oven to 425°F. In a large nonstick frying pan, cook the sausage over moderately high heat, breaking it up with a fork, until browned, about 5 minutes. With a slotted spoon, remove the sausage from the pan. Pour off the fat from the pan.
  • Heat the 1 tablespoon oil in the pan over moderate heat. Add the potato, 1/2 teaspoon of the paprika, and the salt and cook, stirring occasionally, until tender, about 10 minutes.
  • Put four of the tortillas on a work surface. Put half of the sausage, potato, onion, cilantro, and cheese on the tortillas, spreading the ingredients all the way to the edge, and top with four more tortillas. Repeat with the remaining sausage, potato, onion, cilantro, and cheese and cover with the remaining four tortillas.
  • Brush the tops of the quesadillas with the remaining 1 teaspoon oil and sprinkle with the remaining 1/4 teaspoon paprika. Put the quesadillas on a baking sheet and bake until the cheese melts, about 5 minutes. Cut into wedges and serve.
  • Wine Recommendation: Many Portuguese reds have rustic personalities that will suit the mood of this dish well. The rich, hefty wines from the Dao or Douro regions are your best bets, but even the medium-bodied reds from elsewhere in Portugal have enough substance to stand up to chorizo.

EASY SAUSAGE EGG & CHEESE BREAKFAST QUESADILLA

Easy Sausage Egg & Cheese Breakfast Quesadilla image

This is a fairly easy and tasty recipe. To save time I cook the breakfast sausage in advance and freeze 1/2 cup portions in small baggies and just take one out the night before making. Feel free to add or omit anything you like but keep in mind the more items inside the heavier it is and not as easy to flip in the frying pan. I like it just the way it is but you might like to serve with hot sauce or salsa. Cook & prep times are approximate. Hope you enjoy!

Provided by SkyGlitter

Categories     Breakfast

Time 25m

Yield 2 serving(s)

Number Of Ingredients 7

2 large burrito-size flour tortillas
1/2 cup cheese, grated (I prefer colby)
4 eggs, scrambled & cooked
salt (to taste)
fresh ground black pepper (to taste)
1/2 cup breakfast sausage, cooked, crumbled & drained
2 teaspoons oil (for frying)

Steps:

  • Brown the sausage, drain & set aside.
  • Scramble & cook the eggs, set aside.
  • Grate the cheese while heating the oil in a large non-stick pan.
  • Place one tortilla in the pan with 1/2 the cheese spread out evenly.
  • Add the scrambled eggs spreading out evenly and then the sausage.
  • Season with salt & pepper to taste.
  • Add remaining cheese spreading out evenly (the cheese is the glue that holds this together) and top with the other tortilla.
  • Cover with lid and cook for about 5 minutes or until browned then flip and brown the other side.
  • Remove to a plate and cut into 6 pieces and eat with fingers!
