I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

1/2 cup butter (or margarine)
1 1/4 cups sugar
1 teaspoon vanilla
2 eggs (beaten)
3 ripe bananas, smashed (about 1 cup)
1/4 cup milk
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2-1 cup chopped pecans (optional) or 1/2-1 cup walnuts (optional)

Steps:

  • Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
  • *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!

¾ cup light brown sugar (I used coconut palm sugar)
1 3⁄4 cups flour
1 tsp baking powder
1⁄2 tsp salt
3 medium bananas, mashed
2 eggs, beaten
3⁄4 cup macadamia nuts, roughly chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a loaf pan.
  • In a bowl, mix together butter and sugar until creamy.
  • In a separate bowl, whisk together flour, baking powder and salt.
  • Blend dry ingredients with creamed butter/sugar mixture.
  • Add mashed bananas, eggs and nuts.
  • Pour into loaf pan. Bake for 55-60 minutes or until a knife comes out clean.
  • Cool bread in pan for 10 minutes, remove from pan to wire rack. Cool completely before slicing.

1/4 cup buttermilk

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a 9 1/2 by 5 1/2-inch loaf pan.
  • In a large mixing bowl, sift flour, whole-wheat flour, baking powder, and baking soda. Reserve.
  • In the bowl of an electric mixer, food processor, or blender, add eggs, butter, buttermilk, lemon juice, bananas, sugar, and salt.
  • Mix or blend until smooth. Slowly add dry ingredients. Fold in nuts. Pour batter into pan and bake 1 hour and 25 minutes or until toothpick inserted comes out clean.

Being sugar free and grain free and made with real, unprocessed ingredients, it's a healthy, guilt free snack or treat that supports good gut health. I add buttery and health promoting macadamias for that extra special touch adding an element of texture and flavour as well as good, healthy fats your body will love.

3 large free range eggs
1 1/2 cups mashed overripe banana
1 tbsp macadamia nut oil
1 - 2 tbsp rice malt syrup or honey
1 cup macadamias
1/2 cup macadamias , roughly chopped
1 cup almond meal
1 tsp baking powder
1 tsp cinnamon

Steps:

  • Pre-heat your fan-forced oven to 175°C.
  • In a mixing bowl whisk eggs with mashed banana, macadamia oil and rice malt syrup.In a blender or food processor (I use my Vitamix)
  • pulse 1 cup macadamia nuts to a ground nut meal consistency (some texture is ok).
  • Add ground macadamias, almond meal, baking powder and cinnamon to wet mixture and combine.
  • Stir through remaining macadamia nuts.
  • Pour into a lined loaf tin and bake in oven for 40-45 minutes or until cooked through and lightly golden.

1/2 cup Nikki's Coconut Butter - Macadamia Nut Cookie
1/2 cup macadamia nuts
1 banana, peeled
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
pinch of salt
1/4 teaspoon baking soda
1/4 teaspoon baking powder
2 eggs
couple tablespoons of coconut oil (to grease baking dish)

Steps:

  • Preheat oven to 375 degrees.
  • Place macadamia nuts in a food processor and pulse until broken down into a chunky meal.
  • Place all other ingredients in the food processor and puree until smooth.
  • Now grease a bread pan with the coconut oil. You could also use an8×8 glass baking dish, the bars will just come out thinner and not have to cook as long.
  • Pour batter in the baking dish, smooth out, and place in oven.
  • Bake for 25-30 minutes, until top is browned and inside is cooked through. Patience child.
  • Let cool. Cut into your preference size bars. I cut mine into 8 bars.

1/2 cup granulated sugar
1/2 cup lightly packed brown sugar

Steps:

  • Preheat your oven to 350 F, and spray a 9x5-inch loaf pan with nonstick cooking spray.
  • In a medium bowl, whisk together the mashed bananas, sugars, coconut oil, milk, egg, and vanilla. In a separate large bowl, whisk together the flour, baking soda, salt, and cinnamon. Pour the wet ingredients into the dry ingredients, and blend well with a spatula, just until the streaks of flour remain. The batter will not be smooth.
  • Add most of the chocolate chunks, macadamia nuts, and coconut flakes, reserving a handful for decoration, and stir well. Pour the batter into the prepared loaf pan, and sprinkle the top with the reserved chocolate, nuts, and coconut. Bake at 350 F for 55-65 minutes. Turn the bread halfway through baking, and cover with a loose tent of foil if the top seems to be getting too dark. 2 cups heavy cream
2 loaves challah, cut into one-inch cubes
1 cup macadamia nuts, chopped
9 tablespoons unsalted butter
1/2 cup light brown sugar, packed
3/4 teaspoon cinnamon, ground
6 firm-ripe bananas, peeled and cut crosswise into 3/4-inch thick slices
1/4 cup granulated sugar
1 1/4 cups whole milk
1 1/2 cups heavy cream
1 vanilla bean, split and seeded
10 ounces white chocolate, chopped
2 tablespoons sugar
2 tablespoons cornstarch
6 egg yolks
3 tablespoons heavy cream

Steps:

  • Butter a 10 x 14-inch baking dish with 1 tablespoon of the butter and set aside.
  • Melt the remaining 8 tablespoons butter in a large skillet over medium heat. Add 1 cup of the brown sugar and the cinnamon and cook, stirring, until the sugar dissolves, about 2 minutes. Add the bananas and cook on both sides, turning, until the bananas start to soften and brown, about 3 minutes. Remove from the heat and let cool.

  • In a separate mixing bowl, whisk together the 2 tablespoons sugar, cornstarch and egg yolks in a mixing bowl. Stir until smooth. Gradually add the 3 tablespoons of heavy cream. Add one fourth of the hot milk mixture to the egg yolk mixture. Pour this back into the cream mixture in saucepan.
  • Cook over a gentle heat, whisking continuously to avoid scorching. Cook until the sauce begins to thicken. Remove from heat and pour the sauce back into the mixing bowl through a fine mesh strainer over white chocolate. Mix until chocolate is melted and sauce is smooth. Cool over an ice bath, stirring occasionally (makes 5 cups).
  • To serve, scoop the pudding onto dessert plates. Top each serving with a small scoop of ice cream, drizzle with sauce, and serve immediately.

1/2 cup water
1 1/2 cups sugar
3 eggs
1 1/4 cups oil
1 3/4 cups flour
1 1/4 cups bananas, over-ripe and mashed
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup macadamia nuts, chopped
1 1/4 cups crushed pineapple, drained

Steps:

  • Mix oil and sugar together thoroughly. Add bananas, eggs and water.
  • Sift dry ingredients and blend into mixture. DO NOT over-mix.
  • Dust macadamia nuts with flour.
  • Fold dusted nuts and pineapple into mixture.
  • Lightly grease and paper line 3 mini loaf pans.
  • Pour batter into loaf pans.
  • Bake at 350 for 1 hour or until firm.

These are delicious with macadamia nuts, but are also very good with the more traditional pecans or walnuts. This recipe is less sweet than some muffin recipes - which I think makes them perfect for breakfast. Try them plain, or cut in half and toast in a toaster oven with butter.

1 cup mashed banana (2 to 3 medium)
1/2 cup vegetable oil
1/3 cup milk
1/3 cup chopped macadamia nuts (or walnuts or pecans)
1 egg
1 cup whole wheat flour
1 cup white flour
1/3 cup packed brown sugar
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Heat oven to 400. Grease muffin cups, or line with paper baking cups.
  • Beat mashed banana, oil, milk, nuts, and egg with a spoon in a medium bowl.
  • Stir in remaining ingredients just until moistened (batter will be lumpy, so don't be tempted to overbeat).
  • Spoon batter into muffin pan.
  • Bake about 20 minutes at 400, just until golden brown. Immediately remove from cups.
