The is a German casserole recipe made vegetarian given to me by my good German friend, Nicola Wieland. I'm thankful she took the time to translate this recipe for me. Enjoy!

14 ounces sauerkraut, canned
800 g potatoes
1 (12 1/2 ounce) can vegetarian sausages (you can also use a larger can if you want more sausage in the casserole)
1 large onion, chopped
1 1/2 tablespoons canola oil
1 teaspoon cumin
salt, to taste
3 1/2 ounces sour cream

Steps:

  • Boil the potatoes with the skins on them until they are cooked, but not too soft (maybe about 10-15 minutes).
  • Skin the potatoes and cut in slices.
  • Cut the sausages in long slices.
  • In a pan heat the oil and cook the onion a few minutes, then add sauerkraut and seasoning. Saute for a couple more minutes then set aside.
  • Spray 8x8 cooking dish with cooking spray and lay in alternating layers the potatoes, then sausages, then sourkraut.
  • In a small bowl whip the sour cream with salt according to your taste and then pour/spread over the top.
  • Bake it in the oven at medium heat for around a 1/2 hour.

6 medium potatoes (about 2 pounds, peeled and halved)
1 1/2 teaspoons salt
5 tablespoons butter (unsalted, divided)
1/2 cup heavy cream (approximately)
1 medium onion (minced)
1 (1 pound) can sauerkraut (well drained)
1 cup of water
Optional: salt (to taste)
Optional: black pepper (freshly ground, to taste)

Steps:

  • In a large saucepan or stockpot, bring enough water to cover the potatoes to a boil. Add 1 1/2 teaspoons salt to the boiling water.
  • Cook the potato halves in boiling water until tender. Drain well, return to heat, and dry well, being careful not to burn them.
  • Put the potatoes through a ricer and into a bowl. Beat in 3 tablespoons of butter and enough of the cream to make the potatoes creamy and fluffy.
  • In a saucepan, melt the remaining butter and cook the onion over medium heat until soft. Do not brown.
  • Blend in the drained sauerkraut and water. Cover and simmer 35 minutes, stirring occasionally so the sauerkraut does not burn. Add small amounts of water if necessary.
  • When all the water has cooked off and the sauerkraut is tender, blend the sauerkraut well with the mashed potatoes.
  • Season with salt and pepper, if desired, and serve the potato-kraut very hot.

14 ounces kielbasa, diced
1 onion, diced
2 stalks celery, diced, plus 1/4 cup celery leaves, roughly chopped

1 14.5-ounce can sauerkraut, drained and rinsed
Kosher salt and freshly ground pepper
1/2 cup heavy cream
2 tablespoons spicy brown mustard
1/4 cup fresh dill, roughly chopped

Steps:

  • Melt the butter in a large wide pot or Dutch oven over medium heat. Add the kielbasa and cook, stirring occasionally, until golden and crisp, 3 to 5 minutes. Remove with a slotted spoon to a plate, leaving the drippings in the pot.
  • Add the onion, diced celery and potatoes to the pot and cook, scraping up any browned bits with a wooden spoon, until the onion and celery are softened, about 5 minutes. Add the caraway seeds and sauerkraut and cook, scraping up any remaining browned bits, 1 to 2 more minutes. Add 6 cups water, 1/2 teaspoon salt and a few grinds of pepper. Cover and bring to a boil. Uncover, reduce the heat to a rapid simmer and cook until the potatoes are tender, 15 to 20 minutes.
  • Stir together the heavy cream and mustard in a small bowl. Once the potatoes are tender, reduce the heat to medium low and whisk the heavy cream mixture into the soup. Return the kielbasa to the pot. Increase the heat to medium and simmer until thickened slightly, 3 to 5 minutes. Season with salt and pepper.
  • Divide the soup among bowls. Top with the chopped celery leaves and dill.

Inspired by food I grew up eating. The sauerkraut and fennel makes this potato dish a very European-tasting side that goes great with sausage. Just be sure to squeeze out all that liquid from the kraut.

4 tablespoons butter
6 red potatoes, cut into chunks
1 onion, chopped
1/2 fennel bulb, chopped
3 celery ribs, chopped
4 carrots, peeled and chopped
2 cups sauerkraut, very WELL-DRAINED
fresh cracked pepper
sea salt, to taste

Steps:

  • Preheat oven to 400°F.
  • Heat the butter in a heavy pot over medium heat. Add the potatoes, and brown them a bit for 10 minutes, while sitrring every now and then. Add salt and pepper to taste.
  • Add the onion, fennel, celery and carrots to the pot; stir and cook for 5 minutes longer. I add just a bit of salt & pepper here too.
  • Remove from heat and stir in the sauerkraut. Tranfer mixture to a greased or sprayed 9x13" casserole dish.
  • Bake for one hour, and stir every 15 minutes so everything gets nicely browned and nothing burns. I add a small bit of salt and pepper every time I stir as well.
  • Remove from oven and let cool for at least 10 minutes before serving.

1 tablespoon oil
1 (8 ounce) container sour cream (I do not care for low fat)
3 cups all-purpose flour
1/4 teaspoon salt
1 tablespoon baking powder
2 tablespoons unsalted butter
1/3 cup chopped onion
1 1/2 cups sauerkraut, drained and minced
1/8 teaspoon salt
1/8 teaspoon white pepper
3 tablespoons unsalted butter
1/2 cup chopped onion
6 red potatoes, peeled and mashed about 2 cups
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • Prepare the sauerkraut filling by melting the butter in a skillet over medium low heat. Stir in the onion, and cook until light brown, about 20 minutes. Add the drained sauerkraut and cook for an additional 5 minutes. Season to taste with salt and pepper, then remove to a plate to cool.
  • For the mashed potato filling, melt the butter in a skillet over medium heat. Stir in the onion, and cook over medium low heat until light brown, about 20 minutes. Stir into the mashed potatoes, and season with salt and white pepper.
  • To make the dough, beat together the eggs, oil and sour cream until smooth. Sift together the flour, salt, and baking powder; stir into the sour cream mixture until dough comes together. Knead the dough on a lightly floured surface until firm and smooth. Divide the dough in half, wrap half in plastic wrap then roll out the other half to 1/8 inch thickness. Cut into 3 inch rounds using a biscuit cutter.
  • Place a small spoonful of the filling into the center of each round. Moisten the edges with water or egg wash, fold over, and press together with a fork or pinch with fingers to seal.
  • Bring a large pot of lightly salted water to a very slow boil add 6-8 perogies at a time (do not crowd them) and cook for 3 to 5 minutes or until pierogi float to the top. Remove and drain.
  • Serve with melted butter and carmelized onions spooned over the top.
  • Or serve with horsesradish and sour cream.

  • Brown hamburger, drain if needed.

  • spread sauerkraut top of hamburger, ya it is like raking hay, use your hands,do not over fill there is potatoes yet to go.
  • Spread Mashed potatoes over the top, and to the edges, to "seal in", this will bubble. Cut with wet knife in center to vent steam.
  • Add butter or marg on top if you wish.
  • Bake 350 for about 45 min, or until top browns.
  • Sis likes hers with bo-Mondy? this is a spice, Brother likes his with cheddar or mozzarella cheese melted on top.
  • This is a one pan clean up, but you can do it in a deep cass. dish also.
  • All ingredients depend on your pan size. This is easy to "make bigger", as more company comes in the door.

I grew up in a polish neighborhood and this recipe made pierogi that taste like the 'real thing'! You have to be ready to prepare and cook for a bit, but the end results are worth it! This is a great dish to make and only cook half, freezing the rest. This recipe is from Kitchn.com.

3 cups all-purpose flour, plus extra as needed
1 teaspoon salt
1 large egg
1/4 cup sour cream
3/4 cup water
1 lb potato (I prefer red-skinned, but russet or yukon golds are fine)
2 tablespoons sour cream
1/4 teaspoon salt
1 cup drained sauerkraut
2 cups shredded sharp cheddar cheese
3 tablespoons butter
1 small yellow onion, sliced thinly

Steps:

  • To make the dough, whisk together the flour and salt in the bowl of a standing mixer (or regular mixing bowl). Whisk together the egg, sour cream, and water until combined, and then pour over the flour. Stir together the liquids and the flour with a wooden spoon or spatula until a shaggy dough is formed.
  • Knead the dough in the mixer on low speed with the dough hook attachment until the dough is very smooth and soft, about 5 minutes. Alternatively, knead by hand against the counter for 8 minutes. If the dough seems very sticky after a few minutes of kneading, add a tablespoon of flour at a time until it starts coming together into a smooth ball. Cover and set aside to rest on the counter while you make the filling.
  • To make the filling, scrub the potatoes clean, cut into 1-2" chunks and place them in a 2- or 4-quart sauce pan. Cover with an inch or two of water and set over high heat. When the water comes to a boil, reduce the heat to medium-low and simmer until the potatoes are tender when pierced by a fork, 6 to 10 minutes.
  • Transfer the potatoes to a mixing bowl with a slotted spoon. Remove the peels if desired (I like to leave them on!). Mash the potatoes into large chunks with a potato masher or a dinner fork. Add the sour cream and salt, and continue mashing until the potatoes are smooth. Add the sauerkraut and cheese, and stir to combine. Taste and add more salt if needed.
  • Shape the filling into 1" balls (roughly the diameter of a quarter) and arrange them on a dinner plate. Pre-shaping the filling makes it easier and quicker to shape the pierogi.
  • Sprinkle a baking sheet generously with flour. Set this near your workspace.
  • Divide the pierogi dough in half, working with one half at a time and keeping the other half covered. Sprinkle your work surface with flour and roll out the pierogi dough to 1/8" thick. Stop occasionally to lift the dough and make sure it's not sticking to the work surface; use more flour as needed. If the dough shrinks back as you roll, let it sit for 5 minutes and then roll again.
  • Use a 3" biscuit cutter or drinking glass to cut the dough into rounds. Gather the scraps and set them aside.
  • To shape the pierogi, hold one of the rounds of dough in the palm of your hand and set a ball of filling in the middle. Fold the round in half, pinching it closed at the top and then working your way along the sides to form a half-moon shape. Make sure the edges of the dough are completely sealed. Set the pierogi on the floured baking sheet.
  • Continue to shape pierogi with the remaining rounds of dough. Lay them close together on the baking sheet, but don't let them touch. Roll out the second half of the dough, and cut and shape the pierogi as described. When finished, roll the scrapes and continue to make as many pierogi as you can. You should end up with roughly 4 dozen pierogi.
  • At this point, the pierogi can be boiled and served right away or frozen. To freeze, place the sheet pan of pierogi in the freezer and freeze until solid. Transfer the frozen pierogi to a freezer container and freeze for up to three months. Pierogi can be cooked straight from the freezer.
  • When ready to cook the pierogi, melt the butter in a large skillet over medium heat. Add the onions and cook until the onions are translucent, very soft, and beginning to brown, 8 to 10 minutes. Push the onions to the edges of the pan where they will stay warm and continue to caramelize.
  • Meanwhile, bring a large pot of water to a boil. Salt generously. Working in batches, add 10 or so pierogi to the boiling water and stir to make sure they don't stick to the bottom. Cook the pierogi until all the pierogi have floated to the surface and then 1 to 2 minutes longer to make sure the filling gets hot - 8 to 10 minutes total.
  • Transfer the pierogi to the pan with the onions. Turn the heat to medium-high. Cook the pierogi without moving until they are golden and crispy on the bottoms, 2 to 3 minutes. If you're cooking more batches, transfer the pierogi to a serving dish. Once all the pierogi have been boiled and crisped, scrape the onions over the pierogi and gently stir to coat the pierogi with butter and onions. Serve immediately while hot.
  • If you are cooking a lot of them, have more onion sliced and ready to brown in butter. Once the original onion has been depleted or gets too browned, start again with the fresh onion.

Found this recipe in an old cookbook about 20 years ago. It had no name of contributor. It was called, simply, Old Sauerkraut Dish. My family,mostly, likes Sauerkraut and even the ones who didn't liked this!It was easy and cheap and became a fast "go to" dish. Great because the kids could easily make it, if need be.

3 lb lean ground beef
3 can(s) sauerkraut, very well drained
6 c prepared mashed potatoes
1 c diced onions
1 tsp salt, or to taste
1/2 tsp pepper, or to taste

3 c frozen corn, or can divide lg bag, still frozen
3 c shredded cheese, your pick

Steps:

  • 1. Pre-heat oven to 350, and spray 2 casseroles , a 9x13 and 9x9 with non stick spray. Set aside.
  • 2. Brown ground beef with chopped onion and seasonings. Drain and divide between the 2 casserole dishes.
  • 3. Top with frozen corn, then add the layer of sauerkraut again divided into the pans.
  • 4. Mix 1 cup of cheese into the potatoes. If the potatoes are not seasoned, season with salt and pepper and garlic. You can use instant mashed potatoes, I often do.
  • 5. Spread the potatoes, onto both dishes and top with remaining cheese.
  • 6. Bake until bubbly and cheese is well melted. Serve with salad of choice for a hearty meal. Seldom had any leftovers. : < ((
