Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

The flavor of this pot roast is wonderful. The pressure cooker seems to force the seasoning right into the meat and vegetables. Sunday dinner after church in the south was fried chicken, but in the MidWestern U.S. region, it was potroast. YUM.

3 lbs chuck roast
1 tablespoon Season-All salt
1 tablespoon olive oil
1 cup peeled baby carrots
1 cup chopped celery
1 cup sliced onion
1 3/4 cups water
1/4 cup Worcestershire sauce
5 medium potatoes, peeled and cut in half lengthwise
1/2 teaspoon pepper
2 teaspoons beef bouillon powder or 2 teaspoons beef base
2 bay leaves

Steps:

  • Coat roast with SeasonAll.
  • In a non-stick pan (I use my pressure cooker base for this), brown meat in olive oil, on high, on all sides to sear in juices.
  • Add carrots, celery and onions when meat is nearly browned.
  • Add water and Worcestershire sauce.
  • Place potato halves on top of roast and add pepper, beef bouillon powder and bay leaves.
  • Lock pressure cooker lid in place and bring to pressure over medium-high heat.
  • Adjust heat to stabilize pressure at about medium pressure.
  • Cook for one hour.
  • Release pressure naturally - don't use quick release.
  • As all pressure cookers are different, test meat and fork the potatoes to make sure they are done.
  • If not, add water, if necessary, and return to pressure.
  • When done, release pressure and serve.

1 1/2 lb Red potatoes (quartered)
3/4 large white onion (quartered)
2 cups baby carrots
6 oz white mushrooms (sliced (can go up to 8 oz))
6 garlic cloves
2 tbsp olive oil
2 tsp kosher salt
1 tsp granulated sugar
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
4 cups beef or vegetable stock
1/2 cup marsala wine
2 roma tomatoes (diced)
1 carrot (chopped)
2 celery stalks (chopped)
1/4 large white onion (chopped)
2 garlic cloves
1/4 cup dijon mustard
4 tbsp butter
2 tbsp tomato paste
2 bay leaves
2 tsp granulated sugar
2 tsp Italian seasoning
1 tsp kosher salt
3 tbsp cornstarch (optional)

Steps:

  • Preheat oven to 325 degrees. Toss together the salt, garlic powder, onion powder, sugar, and black pepper. Pat the beef dry with paper towel and season the beef on all sides with the spice mixture.
  • Heat 1 tbsp olive oil in a large Dutch oven and sear the roast to form a mice crust. Remove the meat and add the last tablespoon of olive oil to the pot. Sear the other side until crusted. About 5 minutes per side. Remove from the pan and set aside on a rimmed dish.

1/2 tsp. salt
1/4 tsp. pepper
1 bottle (8 oz.) KRAFT Classic CATALINA Dressing, divided
2 large onions, sliced
2 lb. Yukon Gold potatoes (about 12), peeled, cut into 2-inch chunks
8 carrots (1 lb.), peeled, cut into 1-inch pieces
1-1/2 to 2 cups water
2 Tbsp. chopped fresh parsley

Steps:

  • Season meat with salt and pepper; cook in 1/4 cup dressing in Dutch oven on high heat 6 to 8 min. or until browned on both sides. Add onions; cook 5 to 6 min. or until caramelized, stirring occasionally.

1 boneless beef chuck-eye or other chuck roast (3 to 4 pounds)
2 teaspoons pepper
2 teaspoons salt, divided
2 tablespoons canola oil
2 medium onions, cut into 1-inch pieces
2 celery ribs, chopped
3 garlic cloves, minced
1 tablespoon tomato paste
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 bay leaves
1 cup dry red wine or reduced-sodium beef broth
2 cups reduced-sodium beef broth
1 pound small red potatoes, quartered
4 medium parsnips, peeled and cut into 2-inch pieces
6 medium carrots, cut into 2-inch pieces
1 tablespoon red wine vinegar
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 325°. Pat roast dry with a paper towel; tie at 2-in. intervals with kitchen string. Sprinkle roast with pepper and 1-1/2 teaspoons salt. In a Dutch oven, heat oil over medium-high heat. Brown roast on all sides. Remove from pan., Add onions, celery and 1/2 teaspoon salt to the same pan; cook and stir over medium heat 8-10 minutes or until onions are browned. Add garlic, tomato paste, thyme and bay leaves; cook and stir 1 minute longer., Add wine, stirring to loosen browned bits from pan; stir in broth. Return roast to pan. Arrange potatoes, parsnips and carrots around roast; bring to a boil. Bake, covered, until meat is fork-tender, 2-2-1/2 hours., Remove roast and vegetables from pan; keep warm. Discard bay leaves; skim fat from cooking juices. On stovetop, bring juices to a boil; cook until liquid is reduced by half (about 1-1/2 cups), 10-12 minutes. Stir in vinegar and parsley; season with salt and pepper to taste., Remove string from roast. Serve with vegetables and sauce.

4 ounces pancetta, cut in half-inch cubes
3 tablespoons flour
Salt and freshly ground black pepper
3 1/2 pounds boneless beef rump roast, in one piece
2 medium onions, chopped
3 medium carrots, peeled and chopped
1 stalk celery, chopped
4 cloves garlic, peeled and minced
2 cups fruity red wine, like Beaujolais
3 tablespoons tomato paste
2 tablespoons fresh thyme leaves
1 bay leaf
1 1/2 cups veal or beef stock
1/2 cup pitted black French or Italian olives
1/2 cup pitted green French or Italian olives
1 tablespoon chopped parsley

Steps:

  • Preheat oven to 300 degrees.
  • Place pancetta in a 5- to 6-quart ovenproof casserole dish, and saute over medium heat until it is browned. Remove pancetta, leaving fat in pan. Set pancetta aside.
  • Season flour with salt and pepper, dust beef roast with flour and brown it in casserole over medium-high heat. Remove it from casserole, and set aside. Drain all but a film of fat from pan.
  • Add onion, carrots, celery and garlic, and cook, stirring, over medium heat until they have softened. Add red wine, and cook over medium-high heat until reduced to about one cup. Stir in the tomato paste. Return beef to pan, and add thyme, bay leaf and stock. Bring to a simmer, cover and place in oven for 3 hours, or until meat is very tender.
  • Remove meat from casserole. Skim any excess fat from the liquid, place casserole over medium-high heat and reduce liquid until it has thickened somewhat.
  • Slice pot roast in 1/2-inch-thick slices, and return them to casserole in the sauce. Scatter olives, reserved pancetta and parsley over meat, and serve. The recipe can be prepared a day in advance through Step 4 and refrigerated overnight.
