PORTUGUESE SAUSAGE AND BEAN STEW

Steps:
- If using dried beans, add the beans to a large bowl, cover by 2 inches with cold water and let soak for at least 8 hours, or overnight. Drain and set aside. If using canned beans, drain and rinse.
- Add the bacon, if using, to a large, heavy-bottomed pot over medium heat and cook until browned and crisp, about 10 minutes. Remove the bacon and set aside. Discard all but 1 tablespoon of the fat and return the skillet to the stovetop. Add the sausage and cook until browned. With a slotted spoon, remove the sausage to a bowl and reserve.
- Discard all but 1 tablespoon of the fat from the skillet and return to the stove over medium heat. When the fat shimmers, add the onion and garlic, stir to coat in fat, and cook until golden brown, about 4 minutes. Stir in the tomato paste and cook until fragrant, about 30 seconds.
- Add the potatoes and stir to coat in the tomato paste. Add the beans, chorizo, and all remaining ingredients, except the bacon, and bring to a boil over high heat. Reduce the heat to medium-low and simmer until the flavors have melded and the dried beans are cooked through, about 1 to 1 1/2 hours. Crumble the bacon into beans, and season with additional salt, if needed. Remove the bay leaf, transfer the beans to a serving bowl and serve.
SIMPLE CHORIZO AND BEAN STEW

Steps:
- Heat the oil in a large lidded saucepan over a medium-low heat. Add the chorizo and cook until the oil starts to run from the chorizo.
- Add the onion and garlic and cover with the lid. Cook, stirring from time to time, until soft.
- Add the tomatoes and beans, stir well and cover, simmer for 10 minutes. Add a little water if the stew is too thick.
- Add the parsley, season to taste with salt and pepper and stir well.
- Serve in soup bowls, with crusty bread.

- Heat the oil and sauté the whole onion and smashed garlic for several minutes. Add the sliced chorizo to the pan and cook for five minutes. Remove the garlic and then add the remaining ingredients except for the beans and peas to the pan. Cook covered until the potatoes are tender. Drain the canned beans and peas and rinse.
- Remove the whole onion, then add the beans and peas to the pan and toss gently. Cook for several minutes more or until the beans and peas are hot.

- Heat a Dutch oven over medium-high heat. Saute chourico, onion and garlic until onion is tender. Stir in tomato sauce, water and potatoes. Season with red pepper and paprika. Bring to a boil, reduce heat, and simmer 25 to 30 minutes, or until potatoes are tender. Stir in green beans, and simmer 5 to 10 minutes, or until heated through.

Steps:
- SLICE sausage into small pieces.
- DICE red onion.
- Drain canned kidney beans and chickpeas.
- DICE rocket.
- NOTE: Can use spinach too; I like to chop it fine, TRUE!
- HEAT pan, add sausage; cook 2 minutes until soft. NOTE: Can pre grill too for more flavour.
- ADD red onion, cook two minutes.
- ADD Passata and water.
- NOTE: BEST if put flame on low when adding ingredients.
- COVER and cook for 7 minutes.
- ADD beans and cook further minutes.
- STIR in rocket for one minute and serve.
- ENJOY!

- Transfer to paper towels to drain.
- Discard all but 3 tablespoons of bacon drippings.
- Cook onion in bacon drippings over moderate heat, stirring frequently, until golden brown; about 7-9 minutes.
- Add garlic and cook, stirring until it becomes golden.

Cook onion in reserved fat over moderate heat, stirring frequently, until golden, 7 to 9 minutes. Add garlic and cook, stirring, until it begins to turn golden.
- Drain beans and add to onion mixture with remaining ingredients (except bacon). Bring to a boil, then simmer, covered, stirring occasionally, until beans are tender, about 1 1/2 hours. (Older beans will take longer to cook and require more water during cooking.) Crumble bacon into beans and season with salt and pepper before serving.
CHORIZO AND WHITE BEAN STEW
This is a Bon Appetit recipe for rich creamy smokey Chorizo and Bean Stew that tastes like something from a Spanish restaurant. Great with crusty bread to sop up the wonderful juices from the bottom of the dish. I used Turkey Chorizo sausage from Whole Foods, but you can use Italian sausage links. Use the smoked paprika if you can, it adds amazing flavor.

Steps:
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add sausage(whole) and cook, turning occasionally, until browned and through, 15-20 minutes.
- Transfer sausage to a plate.
- Reduce heat to medium.
- Heat remaining 1 tablespoon oil in the same skillet.
- Add onion, garlic and thyme sprig.
- Cook stirring occasionally, until onion is softened 5-8 minutes.
- Add beans and broth and cook, crush some beans with the back of a spoon to thicken the the sauce.
- Cook for 8-10 minutes.
- Season with salt and pepper.
- Add spinach by handfuls and cook until just wilted about 2 minutes.
- Slice chorizo and fold into stew;add water to thin, if desired.
- Divide stew among bowls.
- Drizzle with olive oil and sprinkle with paprika.
