1/2 teaspoon ground cardamom
1/4 teaspoon pepper
4-1/2 cups cubed peeled sweet potatoes (about 1-1/2 pounds)
4 teaspoons olive oil, divided
2 pork tenderloins (3/4 pound each)
4 large tart apples, peeled

Steps:

  • In a small bowl, combine the salt, cinnamon, cardamom and pepper. Place sweet potatoes in a large bowl. Sprinkle with 1 teaspoon spice mixture and 3 teaspoons oil; toss to coat. , Arrange potatoes in a single layer in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 425° for 10 minutes., Rub the remaining oil over pork; rub with remaining spice mixture. Place over the sweet potatoes. Bake for 15 minutes. , Cut each apple into eight wedges. turn pork; arrange apples around meat. Bake 15 minutes longer or until a thermometer reads 160°.

Pork and apples are the perfect pair in this quick and easy sheet-pan meal. With little prep time and minimal clean up, this dinner will become a weeknight favorite.

4 small parsnips, peeled and halved lengthwise (large pieces quartered)
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
5 sprigs fresh thyme
1 Honeycrisp apple
Pinch ground cinnamon
Two 1-inch-thick, bone-in pork chops (1 to 1 1/4 pounds total)
1 tablespoon Dijon mustard
1/2 teaspoon herbes de Provence
Fresh parsley leaves for garnish

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Place the parsnips in the center of the baking sheet and drizzle generously with olive oil, sprinkle with salt and pepper and toss with 3 sprigs of thyme. Spread the parsnips into an even layer leaving an empty space on both sides. Roast until the parsnips become tender and begin to brown in spots, about 20 minutes. Use tongs to give the parsnips another toss.
  • Remove the baking sheet from the oven and push the parsnips closer together in the center of the pan. Core the apple and cut it into 1/2-inch-thick slices. Place the apples on one side of the parsnips, drizzle with olive oil and sprinkle with the cinnamon. Pick the leaves from the remaining 2 sprigs thyme and sprinkle them on top of the apples. Lay the pork chops on the other side of the parsnips and brush with the Dijon mustard. Sprinkle each chop with the herbes de Provence and a pinch of salt and pepper.
  • Return the baking sheet to the oven and roast until the apples are soft, the parsnips are completely tender and golden brown, and the pork chops read an internal temperature of 145 degrees F, about 20 minutes more. Divide evenly between two plates, top the apples with the parsley leaves and serve.

1 lb pork tenderloin
1/2 cup real maple syrup
1 tablespoon fresh lemon juice
1/4 cup chopped pecans, toasted

Steps:

  • Heat oven to 425°F. Spray large, rimmed sheet pan with cooking spray.
  • In large bowl, mix melted butter, sage, salt and pepper. Add sweet potatoes, apples and onion; toss to coat. Using tongs or slotted spoon, transfer to pan in single layer. 1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/8 teaspoon black pepper
1 large sweet potato, in 1-inch slices (peeled or not)
2 teaspoons olive oil, divided
1 (3/4 lb) pork tenderloin
2 large tart apples, peeled

Steps:

  • Preheat oven to 425 degrees F, then coat the inside of a 9"x9" baking pan with nonstick cooking spray.
  • In a small bowl, combine salt, cinnamon, cardamom & pepper.
  • In a large bowl, place the sweet potato slices & sprinkle them with just 1/2 teaspoon of the spice mixture & just 1 1/2 teaspoons of the oil, then toss to coat.
  • Arrange the sweet potato slices in a single layer in the prepared baking pan, then bake uncovered for 10 minutes.
  • Meanwhile, cut the pork tenderloin in half, then rub the remaining oil over the pork, before coating it with the remaining spice mixture.
  • Place the coated pork halves over the sweet potato slices & bake for 15 minutes.
  • Meanwhile, cut each apple into 8 wedges, & when the pork has baked for 15 minutes, turn the pork over & arrange the apples around the meat.
  • Bake another 15 minutes longer or until a meat thermometer reads 145 degrees F ~ That's my reading, but if you're a traditionalist, you'll want it to read 160 degrees F!

2 1/2 lbs pork loin, butterflied
3 sweet potatoes, peeled and cut in 2-inch pieces
2 apples, granny smith, cut into thick wedges
2 onions, medium, cut in half and then thin sliced
1/2 cup apple cider
1/2 cup white wine
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
2 tablespoons fresh parsley
2 teaspoons ground ginger
1 bay leaf
6 tablespoons maple syrup
5 ounces herb cheese spread
1/2 cup pecans, fine chopped
1/2 cup dried cranberries, chopped
1/8 cup cornstarch, to thicken the sauce
salt and pepper
3 tablespoons olive oil, to saute

Steps:

  • Stuffing -- Mix the cranberries, pecans and herb cheese and spread on the inside of the pork loin along with a little salt and pepper and tie up with kitchen twine. Season the loin well with salt and pepper and pan saute in a large pan in olive oil until lightly brown on each side and transfer to a crock pot.
  • Vegetables -- To the crock pot add the potatoes, apples, onions and then top with all the herbs, seasoning, maple syrup, cider and white wine. Cover and cook 10-12 hrs on low, or 7-9 on medium high.
  • Once done, remove and let set before slicing. I take the vegetables out and transfer to a bowl and cover. I like to add a little corn starch to some sauce to make a slurry to lightly thicken the sauce. This is optional.
  • Top the pork loin with the vegetable mixture and a little gravy for a great dinner.
