THAI PORK
This Thai basil pork recipe is easy and slightly spicy and made with ground pork, fish sauce, soy sauce, garlic, shallots, Thai chiles, and basil. A quick weeknight dinner that's cheaper and better than takeout.

Steps:
- Heat a large wok or skillet over medium-high heat for 1 minute. Carefully swirl in the oil and heat until it becomes runny and starts to shimmer but doesn't begin to smoke. Reduce the heat to medium. Add the garlic and shallots and cook, stirring, until the garlic is lightly golden and fragrant, 15 to 30 seconds.
- Increase the heat to medium-high and stir in the pork, using the edge of your spoon or spatula to break up the clumps. Stir and cook until the meat has just lost its blush of pink, 1 to 2 minutes.
- Reduce the heat to medium and toss in the chiles. Add the oyster sauce, fish sauce, soy sauce, and sugar and stir to coat the meat evenly. Stir in the basil and cook until the basil is wilted and the pork is cooked through, another 30 to 60 seconds.
- Move to a serving dish and, if desired, sprinkle with a pinch of black pepper. Serve hot with freshly steamed rice.

PORK WITH SPICY THAI BASIL SAUCE
This dish will put some fire in your belly to perk you up. Adjust the hotness by adding or leaving out the chilies. This sauce also works well with beef or chicken.

SPICY BASIL PORK (PAD GKAPROW MU)
I love very spicy food and found this recipe on a thai travel site. Pork and basil just go so well together. This is very hot and spicy dish BUT you can adjust how many peppers you put in. You can also lower the heat level by removing the seeds of the peppers. Great with rice to help cool the heat.

- Place a cast iron skillet on the stove top over medium heat. A regular stainless steel pan also works well. I am kind of obsessed with my cast iron so it is my go-to pan of choice
- Once hot, add the ground pork to the pan. Make sure to stir every few minutes until the pork is evenly browned. Try to get the pork a little crispy with some deep brown. This gives the dish some depth
- Once the onions are about half way cooked, about five minutes, add the coconut aminos and lime juice. Stir to coat all of the pork. Some of the liquid will evaporate. This is okay. Season with salt and pepper
