1 clove garlic, minced
1 teaspoon chili powder
¼ teaspoon cayenne pepper
1 pod cardamom seeds
½ teaspoon water, or as needed
1 teaspoon vegetable oil
¼ cup rice wine vinegar
½ cup sugar
1 mango - peeled, seeded, and chopped
¼ teaspoon salt
½ teaspoon cilantro
2 teaspoons lemon juice
1 fresh jalapeno pepper, minced
1 ½ cups unsweetened applesauce
3 pineapple rings, chopped
1 pinch white pepper
⅓ cup soy sauce
⅓ cup rice wine vinegar
6 pork chops

Steps:

  • With a mortar and pestle, mash together the garlic, chili powder, cayenne, and cardamom seeds. Mix in enough water to form a paste.
  • Heat the oil in a saucepan over medium heat. Stir in spice paste, and cook until it begins to bubble, about 30 seconds. Stir in vinegar; cook without boiling for 2 minutes. Stir in sugar until it dissolves. Mix in mango, salt, cilantro, lemon juice, and jalapeno; simmer 20 minutes. Stir in applesauce and pineapple; simmer 10 minutes more. Season with white pepper. Place in a bowl, cover, and refrigerate until ready to use.
  • To prepare marinade, mix 2/3 cup of the salsa with soy sauce and 1/3 cup vinegar. Place pork chops in a large resealable plastic bag, and pour marinade over chops. Seal tightly, and place in the refrigerator for 1 hour.
  • Prepare grill for medium-high heat. Drain marinade from bag, and heat in a saucepan until boiling.
  • Lightly oil grill grate. Place pork chops on the hot grill. Cook 10 minutes, or to desired doneness, turning once and basting occasionally with the boiled marinade.
  • Warm remaining salsa over medium-low heat. Serve pork chops topped with the salsa.

1 large pork tenderloin, silverskin removed
freshly ground black pepper, to taste (I always use mixed peppercorns)
1 1/2 tbsp. olive oil
1 large mango, peeled and diced (reserve 1/4 cup) (Footnote)
1 cup pineapple, diced (reserve 1/4 cup)
1 tbsp. ghee butter
1 large habañero pepper, seeded, ribs removed and finely chopped
1 red pepper, finely chopped (roughly the same amount than the habañero)
2 large cloves garlic, pressed
1 tbsp. fresh ginger, finely chopped
2 tbsp. honey
1 pinch ground Himalayan sea salt
1/4 cup 35% heavy cream

Steps:

  • Preheat oven to 375ºF.
  • Remove the silverskin from the tenderloin and season generously with freshly ground black pepper; set aside.
  • In an ovenproof skillet over medium-high heat, add oil and when it gets hot, add pork tenderloin. Cook one side until brown, about 1 1/2 minutes.
  • Flip the meat over and transfer to the preheated oven. Cook for 18 to 20 minutes or until the internal temperature reaches 140ºF to 145ºF.
  • Remove from the heat and transfer the pork onto a cutting board. Cover loosely with foil to rest and set aside.
  • While the pork is cooking, using a juicer, add pineapple and mango; process and set aside - the recipe calls for a total of ¾ cup.
  • Remove the fat from the skillet with a paper towel using tongs.
  • Set the heat to medium and add ghee; scrape the bottom of the pan to dislodge any brown bits.
  • When it gets hot, add habanero and red peppers; sauté until soft, about 2 minutes. Add garlic and ginger; sauté for 1 minute. Add juice mixture and season with honey and salt; whisk until blended. Add cream, whisk and bring to a simmer.
  • Reduce the heat to medium-low and simmer until the liquid reduces by half, about 12 to 15 minutes.
  • Just 5 minutes before the end, add the reserved finely chopped mango and pineapple; stir and cook until warm.
  • Slice the pork and place on warm serving plates. Spoon the sauce over and sprinkle on chopped cilantro, if desired. Serve with potatoes and steamed veggies.

1 boneless pork shoulder butt roast (about 3 pounds)

1 tablespoon paprika
2 teaspoons kosher salt
1 boneless pork shoulder (Boston butt), about 3 pounds, excess fat removed
1/4 cup vegetable oil
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
2 tablespoons peeled and minced fresh ginger
1 onion, finely minced
1 serrano pepper, thinly sliced (seeds discarded if youdon't like it spicy)
Kosher salt
2 cups mango puree
1/2 cup fresh lime juice
1/4 cup apple cider vinegar
1/4 cup Worcestershire sauce
2 tablespoons molasses
Kosher salt and freshly ground black pepper
Brioche rolls, split
Bread and butter pickles

Steps:

  • For the rub: Combine the brown sugar, paprika and salt in a small bowl and massage it into the pork shoulder until well coated. Set aside while you make the BBQ sauce. You could do this a day ahead and keep refrigerated until ready to use.
  • For the BBQ sauce: In a large saucepan, warm the oil over low heat until hot and shimmering. Add the cumin and fennel seeds; they should splutter upon contact, be careful! Once the spluttering subsides, add the ginger, onions, serrano and a little salt to taste. Saute until they soften, but don't let them get any color. Add the mango puree, lime juice, vinegar, Worcestershire sauce and molasses. Simmer about 5 minutes. Taste and season.
  • Add the pork shoulder to the saucepan, coating it with the sauce. Cover, and gently simmer until the pork falls apart easily, stirring and turning often, about 3 hours.
  • Remove the pork from the saucepan and shred it using 2 forks. Return it to the sauce and stir to coat with the sauce. Put a generous spoonful of the pork inside a brioche bun, top with a few slices of pickle and serve. Prepare to have your loved one swoon over you!

  • 2. Meanwhile, chop mango first to determine the equal amount needed for pineapple. In a juicer, add pineapple and mango; process and set aside (should have around ¾ cup). After removing pork tenderloin from the pan, remove fat with paper towel using tongs.
  • 3. Return skillet on medium heat and add butter; scrap the bottom of the pan to dislodge brown bits. When hot, add habanero and red peppers; sauté until soft, about 2 minutes. Add garlic and ginger; sauté for 1 minute. Add juice mixture and season with honey and salt; whisk until blended. Add cream, whisk and bring to a simmer. Reduce heat to medium-low and simmer until liquid reduces in half, about 12 to 15 minutes. Just 5 minutes before the end, add the finely chopped mango and pineapple; stir and cook until warm.
  • 4. Slice pork and place in warm serving plates. Spoon sauce over pork and sprinkle fresh cilantro on top. Serve with potatoes and steamed veggies

2 boneless pork chops
garlic powder
pepper
goya sazon (two packets)
1 medium onion sliced thin
1 medium sized ripe mango
2 to 3tablespoons of pineapple juice
2 good squirts of lime juice

Steps:

  • 1. Trim excess fat from pork chops
  • 2. Season both sides of chops with garlic powder, pepper and one packet of goya sazon.
  • 3. Heat oil in skillet until hot. Add Chops and sear on both sides.
  • 4. Remove chops from stove. Season onions with same seasoning (only use 1/4 packet of sazon) Cook in small skillet with olive oil until tender but still crisp.
  • 5. Cut chops into cubes, reseason and return to skillet. Continue cooking on medium heat until they are cooked through and tender.
  • 6. Add onions to pork and stir fry for a few minutes more.
  • 7. Remove from stove and keep warm.
  • 8. Meanwhile cut mango in chunks and put in blender. Pulse till they are crushed. Add pineapple juice and pulse several times. Add two good squirts of lime juice and pulse again. Taste. (should have a sweet yet tart flavor) Add another squirt of lime juice if needed. Pour into small bowl to use for dipping pork in.
  • 9. I served mine up with some simple homemade stuffing (pepperidge farms italian stuffing cubes, chicken broth, onions, salt pepper and garlic powder) and mixed veggies with a butter and garlic sauce.

  • Preheat oven to 425 degrees F (220 degrees C).

2 teaspoons seasoned salt
2 teaspoons ground black pepper

1 package fresh pork tenderloin (2 loins)
1/2 cup soy sauce
1/2 cup white wine
1/2 cup fresh orange juice
1/4 cup ketchup
3 tablespoons peeled and chopped fresh ginger
4 to 5 peeled garlic cloves
2 tablespoons brown sugar
1/2 cup mango jam, recipe follows
1/4 cup Asian sweet chili sauce
1 cup chopped fresh sweet mango
1/3 cup sugar
1 tablespoon fresh lime juice
1 cup sushi rice
Cooking spray
1 tablespoon slivered pickled ginger
1 tablespoon fish sauce
1 tablespoon chili garlic sauce
2 tablespoons vegetable oil, plus 1 tablespoon

1 peeled and cored fresh pineapple

Steps:

  • Mango Pork Tenderloin:
  • Combine all the dry rub ingredients in a small bowl.
  • Coat the loins with the dry rub, put them into a resealable plastic bag and refrigerate for 2 hours. Puree the soy sauce, white wine, orange juice, ketchup, ginger, garlic and sugar in a blender until smooth. Add the marinade to the tenderloins, and refrigerate for 4 to 6 hours.
  • Remove the tenderloins from the marinade and allow them to rest at room temperature for 30 minutes.
  • Combine all the ingredients in a nonstick saucepan over medium heat and simmer hard, stirring often, until the mango breaks down and thickens to a jam.
  • Transfer the marinade to a small saucepan over medium heat. Add the mango jam and the sweet chili sauce, and bring to a hard simmer. Reduce the mixture by 1/2 the volume, stirring occasionally, as the sugars can settle and burn. Remove 1/2 of the marinade to a small bowl and set aside for service.
  • Sweet Ginger Rice:
  • Cook the rice according to package directions. Coat the inside of an 8 by 8-inch baking dish with cooking spray.
  • Transfer 2 cups of the warm cooked rice to a mixing bowl. Add the pickled ginger, fish sauce and chili garlic sauce and gently combine. Press the mixture into the baking dish, cover and refrigerate until cooled and set, about 1 hour.
  • (When the pork loins have been put on the grill) gently turn the set rice cake out onto a cutting board. Cut the cake corner to corner to make 4 triangles. Heat the 2 tablespoons of oil in a nonstick skillet over medium heat. Carefully add the 4 rice cakes. If a part of the cake breaks away, gently press it back into shape. Saute on the first side until the cakes have caramelized, about 15 minutes. Carefully turn the cakes over, add 1 tablespoon oil and 1 tablespoon butter. Saute the second side until you can hear the caramelized cakes gently scratching the bottom when the pan is jiggled, about 10 to 15 minutes.
  • Grilled Pineapple:
  • Cut the pineapple lengthwise into logs or wedges, then cut in half and put them into a large bowl. Combine the rum, sugar and cinnamon in a small bowl and pour it over the pineapple. Allow it to sit at room temperature for 1 hour.
  • When the tenderloins have been removed from the grill to rest, grill the pineapple on medium-high heat for a couple minutes per side turning and basting with the rum sauce to achieve caramelized grill marks.
  • Prepare a charcoal or gas grill with 1 side medium-high heat and 1 side medium-low heat. Sear the loins on all 4 sides on medium-high for 3 minutes per side. Move the loins to the medium-low heat side. Baste with the marinade, close grill and cook, basting every 5 minutes, until the loins reach medium-rare or to desired doneness.
  • Remove the loins to a cutting board and cover loosely with foil. Let rest for 15 minutes before carving on the diagonal into 1/4-inch medallions. Transfer the medallions to a serving platter and serve with sweet ginger rice, grilled pineapple and reserved marinade.

3 tbsp. (45 mL) vegetable oil
1 medium white onion, chopped
1 red pepper, chopped
2 cups (500 mL) steamed white rice
2 tbsp. (30 mL) chopped cilantro

Steps:

  • Toss pork chops with VH® Pineapple Cooking Sauce. Refrigerate for 15 minutes. Using a slotted spoon, remove pork chops, reserving sauce. Pat pork chops dry with paper towels.

1/4 cup Pickapeppa Sauce
2 t. mango chutney
2 pork tenderloins

Steps:

  • Preheat oven to 400°. Cover a sheet pan with foil.
  • Mix Pickapeppa and chutney together. Brush all over each tenderloin. Quickly sear each tenderloin in a skillet over medium high heat, and place on the sheet pan.
  • Roast for 20 minutes--basting once more about halfway through--or until a meat thermometer registers 140°. Remove from the pan and tent with foil for at least 5 minutes. Slice and serve with more Pickapeppa and pineapple salsa.

1 lb ground pork
14 egg roll wraps
2 cups broccoli slaw mix
5 green onions
1/4 cup cilantro leaf
2 garlic cloves
1 teaspoon soy sauce
1/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup water
1 cup canola oil
1 cup pineapple chunk
1/4 cup cilantro leaf
1 jalapeno
1 tablespoon hot sauce
2 tablespoons honey

Steps:

  • Mix pork and broccoli slaw in large mixing bowl. I find it easy to mix using my hands.
  • Dice green onions (white and greens).
  • Finely dice cilantro and garlic.
  • For the onions, cilantro and garlic, I use a mini-food chopper. I t makes it a fine dice.
  • Add soy, salt and pepper.
  • Heat oil to medium in a large skillet (or you can bake spring rolls in the oven. Spray each side with cooking spray, place on parchment paper on a cookie sheet. Bake at 350 degrees about 20 minutes until golden. Turn once. Check pork inside spring roll for doneness).
  • Place about 2 T of meat mixture in the center of one egg roll wrapper.
  • Fold in bottom, fold in each side, and bring the top down envelope style. Dip your fingertips in water to seal edges.
  • The egg roll wrapper package will have further instructions for folding.
  • Keep unused wrappers under a damp paper towel while working or they may dry out.
  • This makes about 14-18 spring rolls depending on how much meat you have added.
  • Place 4 spring rolls in hot oil.
  • Cook about 4 minutes per side watching them carefully. Do not burn.
  • Drain on paper towels. Check inside one spring roll for doneness of meat.
  • For sauce:.
  • Drain pineapple well. reserve juice for another use.
  • Using a food processor or mini-chopper, chop pineapple with cilantro.
  • Add jalapeno and chop. I use seeds and all. If you don't want much heat, take the seeds out.
  • Add hot sauce ( I use Sriracha) and honey.
  • Serve with spring rolls and garnish with cilantro sprigs.

1 tsp chili powder
1 tsp smoked paprika

1 6 oz can tomato paste
1/4 tsp each salt and pepper
1 serrano pepper, chopped - make sure you wash your hands well after cutting the serrano pepper!
1 tbsp maple syrup
1 tbsp grapeseed oil
1/2 cup Spicy Pineapple Sauce
4 slices fresh pineapple, chopped
5 Smithfield All Natural Boneless Pork Chops, chopped into bite size pieces
salt and pepper to taste
1 tbsp grapeseed oil
1 onion
1 tsp ginger, freshly grated
1/2 red cabbage, chopped
1/2 green cabbage , chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
1 tbsp black sesame seeds

Steps:

  • Add the coriander, chili powder, smoked paprika and turmeric to a small fry pan and roast them over medium heat for 2-3 minutes. Make sure to stir the spices and keep an eye on them so they don't burn.
  • In a separate pan, saute the onion in the oil, for about 5 minutes. Then add in the ginger and garlic.
  • Toss in the roasted spices, pineapple juice, tomato paste, serrano pepper, maple syrup and salt and pepper and mix well.
  • Then, using an immersion blender, blend all the ingredients up. Or, you can spoon mixture into a blender and pulse till ingredients are broken down. This Spicy Pineapple Sauce can be stored in an airtight container in your fridge for 4-5 days.
  • Toss the bite sized pieces of Smithfield All Natural Boneless Pork Chops with 1/2 cup of the Spicy Pineapple Sauce.

1 tablespoon honey
1 tablespoon rice-wine vinegar
1 lime, juice
1 tablespoon pineapple juice
1 pinch salt
1 jalapeno, minced, optional for heat
1 tablespoon onion, minced optional for heat and sweetness
1 tablespoon fresh herb, minced (cilantro, parsley, chives..)

Steps:

  • Puree mangoes, honey, vinegar, lime juice, pineapple juice and salt in a food processor or blender until smooth. Add any or all of your choice of additional yummy delights. And blend till smooth and incorporated.
  • Sauce can be refrigerated in an airtight glass container up to 1 day.
  • Serve at room temperature with your choice of dippers.

4 (3/4-inch-thick) loin pork chops
2 teaspoons salt
1 3/4 teaspoons black pepper
1 (1-lb) firm-ripe mango, peeled and coarsely chopped
2 tablespoons unsalted butter
1 cup drained canned pineapple chunks (from a 14-oz can)
1 cup mango nectar
1/4 cup packed light brown sugar
2 tablespoons Dijon mustard
4 whole cloves
2 tablespoons olive oil
1 large onion, coarsely chopped
1 garlic clove, finely chopped
1/3 cup fresh cilantro leaves

Steps:

  • Sprinkle both sides of pork chops with 1 teaspoon salt and 3/4 teaspoon pepper (total), then chill, covered, at least 4 hours (to allow seasoning to permeate meat).
  • Purée chopped mango in a food processor until smooth, then force through a sieve into a bowl. Bring mango purée, butter, pineapple, mango nectar, brown sugar, mustard, cloves, and remaining teaspoon each salt and pepper to a boil in a 1 1/2- to 2-quart heavy saucepan, stirring until butter is melted, then simmer, uncovered, stirring occasionally, until thickened, 12 to 15 minutes. Discard cloves.
  • Pat pork chops dry. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chops in 2 batches, about 1 1/2 minutes on each side. Transfer to a plate as browned.
  • Pour off all but about 1 1/2 tablespoons fat from skillet, then cook onion over moderate heat, stirring, until softened, about 3 minutes. Add garlic and cook, stirring, 1 minute. Add sauce and pork chops (with any juices) and simmer, uncovered, turning chops over once, until just cooked through, 6 to 8 minutes. Sprinkle with cilantro.
