ACHIOTE PORK TORTA - (SANDWICHES)

These are out of this world! I made these to take to the San Francisco Giants game today. Although the Giants didn't win, we left full and happy! The meat in these is very flavorful and gets a nice color from Achiote paste. From my favorite cookbook Baja: Cooking From the Edge.

3 large garlic cloves, minced
2 tablespoons white vinegar, plus more to thin the marinade if necessary
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lime juice
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
3 1/2 ounces achiote paste (available in Latin markets- it comes in a small, dark-red brick)
10 fresh cilantro stems
2 lbs boneless pork butt or 2 lbs pork shoulder
6 large soft white sandwich buns or 6 large a baguette
sliced asadero cheese (I used provolone) or chihuahua cheese (I used provolone)
shredded lettuce or cabbage
sliced ripe roma tomato
naked guacamole (see Naked Guacamole)
sliced red onion
pickled jalapeno pepper
hot salsa (optional) or other salsa (optional)

Steps:

  • In a blender or food processor, combine the garlic, vinegar, juices, salt, and cumin. Pulse until well combined. Crumble in the achiote and pulse to combine into a very soft paste; add more vinegar by the tablespoon to loosen it up if necessary. Blend in the cilantro.
  • Cut the meat into lenghtwise slices 1/2 to 3/4 inch thick. Lay the meat between two sheets of plastic wrap and pound to an even thickness of 1/4 inch. Coat the slices generously with the paste and refrigerate for at least 6 hours and no more than 12 hours.
  • Half an hour before cooking, clrean the grill thoroughly with a brush and wipe it down with an oil-dampened rag. Preheat the grill on high.
  • Remove the meat from the marinade and shake off as much of the paste as possible. Place the meat on the grill, close the lid, and grill for 5 to 7 minutes on each side, checking often to make sure the meat doesn't burn or cook too quickly; if it does, move it to a cooler part of the grill. The meat is done perfectly when it has an internal temperature of 145 degrees. Do not overcook or the meat will dry out. (I used my George Foreman grill and just made sure to wipe it with a paper towel between batches) Set the meat aside, loosely covered with foil.
  • To serve, split the rolls and toast on the grill, then layer from the bottom up: cheese, meat, lettuce, tomatoes, guacamole, onion, jalapenos, and salsa. Skewer with a couple of toothpicks and cut in half.

1¼ pounds boneless pork shoulder (pork butt), cut into 4 equal pieces
Kosher salt
½ white onion, divided
2 garlic cloves
2 bay leaves
¼ medium green cabbage, shaved into thin strips
½ cup crema or sour cream
6 teleras or French rolls
1½ cups (12 ounces) shredded Jack cheese
1½ avocados
1½ cups (12 ounces) frijoles pinquitos refritos or store-bought refried pinto beans, warmed
:::For the Adobo for the Chilorio: :::
3 dried ancho chiles, stemmed and seeded
1 dried pasilla chile, stemmed and seeded
2 dried mulato chiles, stemmed and seeded
¾ cup white vinegar
Leaves from ½ bunch flat-leaf parsley
5 garlic cloves
1 tablespoon dried oregano
1½ teaspoons ground cumin
Kosher salt
¼ cup lard, rice bran oil, or canola oil
1 to 2 jalapeños, stemmed and coarsely chopped
2 large or 4 medium tomatillos, husked and rinsed
1 teaspoon kosher salt

Steps:

  • Make the pork: Season the pork all over with salt. Place the pork in a small pot and add enough water just to cover; season the water with salt and add half of the onion, the garlic, and the bay leaves. Bring to a boil, then reduce to a simmer and let cook until the meat is very tender, about 1 hour. Drain the meat and discard the liquid. Shred the meat into thin pieces (you will have about 3 cups). The pork can be made in advance and refrigerated up to 2 days.
  • Meanwhile, make the adobo. In a small heatproof bowl, cover all of the dried chiles with boiling water; let sit until softened, about 20 minutes. Remove the chiles (reserve the soaking water) and add to a blender with the vinegar, parsley, garlic, oregano, cumin, and a generous pinch of salt; blend until a very smooth paste forms, adding a little of the soaking water only if needed to help blend.
  • In a small pot, heat the lard until hot, then stir in the adobo (be careful, as it may splatter). Turn the heat down to very low and let cook, stirring occasionally, until darkened and aromatic, about 10 minutes. Stir in the shredded pork and cook for 5 minutes more to heat through. Taste and adjust the salt as needed (you can also add a little water or some of the soaking water if needed to slightly thin the consistency).
  • In a small blender or molcajete, quickly make the salsa jalapeño: Add the jalapeños, tomatillos, and salt and blend or grind until relatively smooth.
  • Thinly slice the remaining piece of white onion. In a medium bowl, mix the sliced onions and shaved cabbage with the crema and a pinch of salt, and toss to coat.
  • When ready to serve, preheat the oven to 350°F. Cut the rolls in half and place cut side up on a baking sheet. Sprinkle the top half of each roll with ¼ cup (2 ounces) of the Jack cheese, then bake the rolls until the cheese is melted and the bottoms are toasted, 6 to 8 minutes.
  • Cut the avocados into quarters, then thinly slice. Spread ¼ cup of the refried beans on the bottom half of each roll. Divide the pork among the rolls (about ½ cup each), then drizzle each with some of the salsa jalapeño to taste. Top with the sliced avocado and the cabbage slaw and serve.

Break out the napkins: this dish literally means "drowned sandwich" in Spanish, because it's drenched in a rich, spicy sauce. A delicious labor of love, this torta is stuffed with carnitas, a beloved Mexican pork dish in its own right.

2 pounds pork shoulder, cut into 1½-inch cubes
1/2 large white onion
3 cloves garlic
5 black peppercorns
2 bay leaves
1 tablespoon fine sea salt, divided, plus more to taste
1/2 cup lard, rendered from about ½ lb bacon or fatty pork, may substitute vegetable oil or unsalted butter
1 orange, quartered
2 tablespoons olive oil
1/2 large white onion, chopped
1 clove garlic, peeled
2 chiles, minced, such as serranos
8 plum tomatoes, quartered, may substitute one 18-oz. can of whole tomatoes
1 teaspoon tomato paste
1 cup Water, omit, if using canned tomatoes
1 teaspoon black peppercorns
5 whole cloves
5 allspice berries
1 tablespoon red pepper flakes
1 teaspoon ground cumin
1 teaspoon dried oregano, preferably Mexican
2 bay leaves
2 tablespoons distilled white vinegar
1 tablespoon fine sea salt, plus more to taste
3 rustic baguettes, preferably Mexican birotes or bolillos
1 cup refried black beans, see Refried Black Beans recipe
1 ripe avocado, sliced
Pickled red onions, see Yucatán-Style Pickled Red Onions recipe

Steps:

  • Carnitas: Heat a Dutch oven over medium-high heat. Add pork cubes in an even layer, fat-side down, followed by onion, garlic, peppercorns, bay leaves, and ½ tablespoon salt. Add lard. Squeeze juice from orange wedges into the pot, then add the squeezed orange wedges. Reduce heat to low and cook, uncovered, for 1½ hours, stirring occasionally to make sure the pork cooks evenly.
  • Remove and discard the orange peels, big pieces of onion, and bay leaves. Increase heat to medium-high and continue cooking for 1 more hour, stirring more regularly as the fat renders out and the pork begins to look shredded and browned. When pork is fully cooked, taste for seasoning and add more salt as needed. Meanwhile, make the Salsa Ahogada.
  • Salsa Ahogada: In a large pot over medium heat, heat the olive oil until hot but not smoking. Add onion, garlic clove, and chiles; cook until onions are translucent, 8-10 minutes. Then add tomatoes, tomato paste, and water (omit if using canned tomatoes). Stir, then simmer until the tomatoes are cooked, 10-15 minutes. Meanwhile, preheat a comal or skillet over medium heat. When comal is hot, add peppercorns, cloves, allspice, and chile flakes to the hot comal. Toast for 30 seconds, stirring constantly to distribute the heat and prevent burning. After 30 seconds, remove from heat and add cumin, oregano, and bay leaves to the hot pan; keep stirring. (The residual heat will toast the additional spices.) Set aside to cool for 8-10 minutes. Then finely grind the spices and set aside.
  • Ladle the cooked onion-tomato mixture into a blender, along with the ground spices, vinegar, and salt. Blend on medium speed to purée, 10-15 seconds. Place Salsa Ahogada back into the Dutch oven and simmer over low-medium heat for 10 minutes, or until salsa has thickened and reduced by about one-third. Remove and discard any tomato peels that have floated to the top. Taste for seasoning and add more salt as needed. Keep the Salsa Ahogada warm until ready to assemble and serve tortas. Makes about 4 cups. (Note: Salsa Ahogada can be made 1-2 days ahead and stored in the refrigerator in a lidded container.)
  • Assemble Torta Ahogada: Preheat broiler. Slice baguette/rolls lengthwise and broil, cut-side up, until toasted, 3-5 minutes. Meanwhile, chop or shred Carnitas into small pieces. Spread about ¼ cup of the refried beans on one half of the toasted baguette, then top with about ⅓ of the Carnitas. Add sliced avocado in an even layer. Spread a lighter coat of beans on the other baguette half and place on top to make a sandwich. Slice into thirds and arrange on a rimmed serving plate or flat-bottomed bowl, cut-sides down. "Drown" the sandwich in Salsa Ahogada by ladling it all around and on top; garnish with pickled red onions. Assemble the other sandwiches and serve immediately (with lots of napkins!).
