2 trout fillets, each weighing about 140g/5oz
a small knob of fresh root ginger , peeled and chopped
1 small garlic clove , chopped
1 small red chilli (not bird's eye), seeded and finely chopped
grated zest and juice of 1 lime
3 baby pak choi , each quartered lengthways
2 tbsp soy sauce

Steps:

  • Nestle the fish fillets side by side on a large square of foil and scatter the ginger, garlic, chilli and lime zest over them. Drizzle the lime juice on top and then scatter the pieces of pak choi around and on top of the fish. Pour the soy sauce over the pak choi and loosely seal the foil to make a package, making sure you leave space at the top for the steam to circulate as the fish cooks.
  • Steam for 15 minutes. (If you haven't got a steamer, put the parcel on a heatproof plate over a pan of gently simmering water, cover with a lid and steam.)

Steamed Fish With Lime and Garlic Recipe (ปลากะพงนึ่งมะนาว) image

Pla kapong neung manao (ปลากะพงนึ่งมะนาว), or Thai steamed barramundi fish with lime sauce, is a favorite seafood dish for many Thais. Make this recipe at home and you're in for a real steamed fish!

Number Of Ingredients 10

1 whole barramundi, about 1 - 2 kilos (or whatever size you can get), guts and gills already removed
5 stalks lemongrass, bottom half only, smashed, and cut into chunks
1 cup good chicken stock or fish stock (fresh or canned)
2 Tbsp finely chopped palm sugar
8 Tbsp lime juice
6 Tbsp fish sauce (here's my preferred fish sauce)
2 heads of garlic, chopped
Thai chilies to taste, finely chopped
20 - 25 sprigs cilantro, chopped
1- 2 stalks Chinese celery, cut into 1-inch pieces

Steps:

  • Make sure your fish is scaled and gutted, and then score the fish with 3 diagonal incisions on each side of the fish. Cut off the top halves of the lemongrass, bruise, and stuff the lemongrass into the cavity of the fish. Steam the fish over high boiling water for about 10 - 15 minutes depending on the size of your fish.
  • In a saucepan, heat the chicken stock until it comes to a boil, and then toss in the sugar, reduce heat, and boil until the sugar is completely dissolved. Pour the mixture into a bowl and set aside.
  • Mince the garlic, chilies, and cilantro, and mix into the chicken stock soup, along with fish sauce and lime juice. Stir gently and then taste test. Make sure it's sour, and balanced with a hint of sweetness.
  • When the fish is fully steamed, transfer it to a serving platter (with edges to keep in the soup), garnish with a bed of Chinese celery, and place the fish on the platter. Gently scoop on all the sauce over the fish, putting most of the garlic and chilies on the top of the fish.
  • Make sure you eat with steamed rice!

THAI STEAMED FISH IN COCONUT SAUCE

Steamed fish fillets with fragrant Thai coconut sauce

4 5-ounce skinless white fish fillets such as halibut, snapper or flounder
2 tablespoons cooking oil, divided
2 large shallots, 1 chopped (1/4 cup) and one thinly sliced
1 1/2 tablespoons chopped ginger root
1 stalk of lemon grass, tough outer layers removed, roughly chopped
1 small thai red chili (substitute a red jalapeño) seeded and chopped
1/2 cup coconut milk from a can (shake can well to mix before opening)
2 teaspoons Thai fish sauce
15 springs of cilantro, leaves separated from stems, divided (you'll use leaves for the garnish and some of the stems to make the sauce)
Coarse salt
Freshly ground black pepper
Serve with hot steamed white rice (I recommend jasmine rice)

Steps:

  • Heat 1 tablespoon of oil over medium heat in a small skillet. Add chopped shallot, ginger, lemon grass and chili. Stir-fry for 3 minutes or until fragrant and lightly colored. Scrape into a small food processor or blender. (don't wash skillet - you'll use it for the topping) Add coconut milk, fish sauce and 8 stems of cilantro. Process for 30 seconds or so, until everything is finely blended into a thick sauce.
  • *Arrange the fish fillets in a single layer on a heatproof plate or glass pie pan. Spread the coconut sauce evenly over the fish fillets. Place plate in a steamer and turn the heat to high. Once the water is boiling, cover tightly and steam fish for 6-8 minutes or until it's just opaque. Test with a knife. If the knife goes in easily, with no resistance, the fish is done. Remove from heat and remove cover.
  • While the fish is steaming, line a plate with a paper towel. Heat remaining tablespoon of oil in the skillet over medium-high heat. When hot, stir-fry the shallots until browned, 3 minutes of so. Transfer to paper towel lined plate. Add the cilantro leaves and fry them for just a few seconds. Transfer them to the plate.
  • Carefully (I used two spatulas) transfer fish fillets to four plates.(I like to plate them over a bed of rice) Sprinkle with a tiny pinch of salt and a generous sprinkling of pepper. Scatter fried shallots and cilantro on top. Spoon extra sauce over the rice.

250 g ocean trout fillets (per person)
2 kaffir lime leaves, roughly chopped (or 5 cm of lemongrass root)
2 cm knob fresh ginger, chopped into matchsticks
2 garlic cloves, chopped roughly
1 bunch fresh coriander, chopped with 5 cm of root stalk left intact (with roots)
2 small chilies, chopped with seeds
3 spring onions, cut into wedges
1/4 cup soy sauce
1 tablespoon fish sauce
1/2 teaspoon sesame oil
1 liter boiling water

Steps:

  • in a double boiler, pour the water, soy sauce, fish sauce and sesame oil. bring to the boil.
  • add the ginger, garlic, sping onions, coriander roots, continue to boil for 5 minutes to infuse flavours.
  • put a plate big enough to hold the fish into a steaming basket, which will sit on top of the broth mixture.
  • place the fish on plate, skin side up.
  • cover the skin with the chopped corriander (leaves and roots) and the chillies.
  • put steaming basket on top of the broth and cover. allow to steam for 10-12 minutes depending on how well cooked you like your fish.
  • strain the stock and set aside. garnish the fish with boiled ingredients. season with salt and pepper.
  • reduce some of the broth and serve over fish.
  • best served with steamed jasmine rice.
