This is a very simple and quick dish that combines the standard pork chop with the wonderful flavor of coconut and peanuts. Even the kids loved it.

¼ cup all-purpose flour
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
½ teaspoon salt
2 tablespoons vegetable oil
4 boneless pork chops, about 3/4-inch thick
⅓ cup chicken broth
½ cup coconut milk
2 tablespoons peanut butter
1 tablespoon honey
1 teaspoon ground ginger
¼ teaspoon salt
¼ cup chopped green onion
¼ cup sliced red bell pepper
¼ cup coarsely chopped dry roasted peanuts
¼ cup chopped fresh cilantro

Steps:

  • On a plate, combine the flour, cumin, cayenne pepper and 1/2 teaspoon of salt. Stir to distribute the spices. Coat the pork chops with the flour mixture, and shake off any excess.
  • Heat the oil in a large skillet over medium-high heat. Place the pork chops in the hot skillet, and fry for about 4 minutes per side, until cooked through.
  • While the pork chops cook, stir together the chicken broth, coconut milk, peanut butter, honey, ginger and 1/4 teaspoon of salt. Remove the pork chops to a serving platter, and keep warm.
  • Pour the peanut sauce into the skillet. Cook, stirring constantly for 2 minutes, or until thickened. Pour peanut sauce over the chops, and garnish with green onion, bell pepper, peanuts and cilantro.

12 ounces Chinese chow mein noodles or spaghetti
1/3 cup creamy peanut butter
2 tablespoons rice wine vinegar
1/4 cup soy sauce
3 tablespoons toasted sesame oil
2 carrots, shredded (about 3/4 cup)
1 jalapeno pepper, finely chopped (remove seeds for less heat)
1 bunch scallions, chopped (white and green parts separated)

1 2-inch piece ginger, peeled and minced
4 cloves garlic, minced
12 ounces ground pork
1/4 cup chopped fresh cilantro

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Reserve 1/2 cup cooking water, then drain. Whisk the peanut butter, vinegar, 2 tablespoons each water and soy sauce, 1 tablespoon sesame oil, the carrots and half of the jalapeno in a large bowl. Add the noodles and toss to coat.
  • Meanwhile, heat the remaining 2 tablespoons sesame oil in a large skillet over medium-high heat. Add the scallion whites, ginger and garlic; cook, stirring, until golden, about 2 minutes. Add the pork and cook, breaking up the meat with a wooden spoon, until browned, about 5 minutes. Stir in the remaining 2 tablespoons soy sauce.
  • Transfer the pork mixture to the bowl with the noodles. Add half of the scallion greens and cilantro and toss to coat, adding enough of the reserved pasta water to loosen. Serve topped with the remaining jalapeno, scallion greens and cilantro.

2 pork tenderloin ((pork fillet), 500g/1lb each (Note 1))
1 1/2 tbsp olive oil ((or butter))
3 garlic cloves (, very finely chopped)
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
3 tbsp cider vinegar ((Note 2))
1 1/2 tbsp soy sauce, light or all purpose ((Note 2))
1/2 cup honey ((or maple syrup))

Steps:

  • Preheat oven to 180C/350F.
  • Mix Sauce ingredients together.
  • Mix Rub ingredients then sprinkle over the pork.
  • Heat oil in a large oven proof skillet (Note 3) over high heat. Add pork and sear until golden all over.
  • When pork is almost seared, push to the side, add garlic and cook until golden.
  • Pour sauce in. Turn pork once, then immediately transfer to the oven.
  • Roast 15 - 18 minutes or until the internal temperature is 68C / 155F (Note 4).
  • Remove pork onto plate, cover loosely with foil and rest 5 minutes.
  • Place skillet with sauce on stove over medium high heat, simmer rapidly for 3 minutes until liquid reduces down to thin syrup.
  • Remove from stove, put pork in and turn to coat in sauce.
  • Cut pork into thick slices and serve with sauce!

2 pound boneless pork loin (trimmed of fat and cut into 4 pieces)
2 large red bell peppers (cored, seeded, cut into strips)
1/3 cup prepared teriyaki sauce
2 tablespoons rice vinegar
1 teaspoon dried red pepper flakes
2 cloves garlic (minced (we used freeze dried garlic))
¼ cup peanut butter (use chunky if you want extra peanut pieces)
For serving: Cooked rice (½ chopped green onions, ¼ cup chopped dry-roasted peanuts and 2 limes, cut into 8 to 12 wedges)

Steps:

  • Spray your slow cooker with cooking spray.
  • Put your pork, bell peppers, teriyaki sauce, rice vinegar, red bell pepper flakes and garlic in crock pot.
  • Cover and cook on low up to 8 hrs, until pork is fork tender.
  • Take your pork out of your crock pot and coarsely chop.
  • Add your peanut butter to liquid in your crock pot and stir well to dissolve your peanut butter to make the sauce.
  • Put your chopped pork back in your crock pot and toss until your meat is coated.
  • Serve in shallow bowls over hot rice.
  • Sprinkle with green onions and peanuts.
  • Pass lime wedges.

1/2 cup light coconut milk
1/4 cup smooth peanut butter
2 tbsp soy sauce
1 1/2 tbsp fresh lime juice
1 1/2 tbsp dark brown sugar
1 large clove garlic (minced)
1 tsp ground coriander
1 pork tenderloin (silver skin removed)
Sea salt and freshly cracked pepper (to taste)

Steps:

  • In a measuring cup, whisk the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic, and coriander to make the peanut sauce.
  • Trim the pork of excess fat and remove the silver skin - click up above for instructions. Butterfly the tenderloin by splitting it lengthwise almost but not quite all the way through, so the halves remain attached.
  • Open the tenderloin (like a book) then cover with saran wrap, and pound to a 1/2-inch thickness with a meat mallet. Put the pork tenderloin in a large zip lock bag then pour half the marinade on top (reserving the other half). Squish it around so the meat is evenly coated. Place the meat in the refrigerator and marinate for 4 hours. Remove from the refrigerator 20 minutes prior to cooking to let the meat come to room temperature.
  • Heat a large grill pan coated in cooking spray over medium-high heat. Remove the tenderloin from the marinade then lightly season both sides with sea salt and freshly cracked pepper, to taste. Place the tenderloin in the HOT grill pan then cook for 5 -6 minutes before flipping and cooking for an additional 3-4 minutes, or until the pork is cooked through.
  • Transfer to a carving board and let the meat rest for 5 minutes before slicing and serving the reserved peanut sauce on the side (I heated the sauce up for 20-30 seconds in the microwave before serving). Enjoy.

2 (1 lb) pork tenderloin
salt and pepper
1/2 cup chicken broth
1/2 cup jif creamy peanut butter
1/2 cup hoisin sauce
2 teaspoons fresh ginger, minced
2 teaspoons garlic, minced
chives (for garnish) or scallion top, sliced (for garnish)

Steps:

  • Preheat oven to 375°F.
  • Spray a shallow roasting pan with no-stick cooking spray. Heat oil in a large skillet over medium-high heat. Season tenderloins liberally with salt and pepper. Brown each tenderloin on all sides in skillet.
  • Transfer meat to prepared roasting pan. Roast tenderloins for 15 minutes, or until instant-read thermometer reaches 160°F
  • Transfer roasted meat to cutting board. Tent with foil. Allow meat to rest 10 minutes. Slice into medallions and serve with Asian Peanut Sauce and garnished with sliced chives or scallions.

We were having cocktails at some friends' house this afternoon, and we couldn't wait to make it, so went to the store and bought the ingredients we didn't have. We didn't have any sides, (besides the cocktails, LOL), we just picked at it and enjoyed! We didn't have time today, but next time we will marinate it longer, a few hours in the fridge for even MORE flavor! Try this! (Cook time does not reflect marinating time.)

1/4 cup hoisin sauce
1/4 soy sauce
1 tablespoon canola oil
1 lb ground pork
Heavy sprinkle of red pepper flakes
3/4 cup minced green onions, both white & green parts (about 3-4 onion stalks)
1 tablespoon minced garlic
1/2 teaspoon ground ginger
2 tablespoon creamy peanut butter
1 14oz package of rice noodles (or 1 16oz package of linguine pasta)

Steps:

  • Set a large pot of water to boil for the pasta. Cook the noodles according to the package directions and drain. While you're waiting for the water to boil, start assembling the pork and sauce. Assemble the sauce: Use a fork to whisk together the chicken broth, hoisin sauce, and soy sauce together in a glass measuring cup. Set near the stovetop. Brown the pork: Heat 1 tablespoon canola oil in a large sauté pan over medium heat. Brown the pork until no longer pink, breaking it up with the back of a spoon as you go. Add the red pepper flakes, half of the green onions, garlic, and ginger. Stir to combine. Heat until fragrant. Pour in the pre-whisked sauce and add the two tablespoons of peanut butter. Stir to combine. Heat until sauce bubbles and thickens and then reduce heat to low and keep warm while the pasta finishes cooking. Add the drained noodles to the sauté pan and toss together with a pair of tongs so that they are all coated with sauce. Garnish with remaining green onions and serve.

2 tbsp groundnut oil (or other light oil)
2 cloves garlic (crushed)
3 spring onions (sliced)
2.5 cm fresh ginger (grated)
1 red pepper (cored and sliced)
2 nests egg noodles (cook as per instruction on pack for stir-frying)
1 large handful beansprouts
1 tbsp roasted peanuts (dry roast in a frying pan for 5 minutes)
1 tsp sesame oil
1 tbsp Chinese hot chilli sauce (or sub with Sriracha)
1 tbsp light soy sauce
180 g pork fillet (sliced into bite-sized pieces)
1 tsp Chinese 5-spice
1 tbsp cornflour
1 tsp dark soy sauce
1 tbsp light soy sauce
1 tsp sesame oil
1/2 tsp chilli flakes

Steps:

  • Combine all the marinade ingredients into a bowl along with the pork fillet and set aside for 30 minutes while you cook your noodles and prepare the vegetables.
  • Add 1 tbsp of oil to a wok or large frying pan, once hot add the pork and stir-fry to 5 minutes, stir constantly to stop the pork from sticking. Remove the pork from the pan and set aside in a bowl.
  • Add the remaining 1 tbsp oil to the wok and add the garlic, spring onions, ginger and peppers, stir-fry for 1 minute, then add 3 tbsp water to the wok and cover with a lid, cook for 3 minutes like this.
  • Return the pork to the wok, along with the noodles, peanuts and beansprouts. Stir constantly and add the final flavouring of sesame oil, chilli sauce and light soy sauce. Serve immediately into bowls.

2.5 lbs pork loin (1 pork tenderloin)
3 garlic cloves (minced)
2 Tbsp. Dijon mustard
3 Tbsp. soy sauce (paleo diet: coconut aminos)
1/2 cup orange juice
1/4 tsp. salt (paleo diet: sea salt)
1/8 tsp. pepper
1/2 cup peanut butter (paleo diet: almond butter)
1/2 cup coconut milk
2 Tbsp. soy sauce (paleo diet: coconut aminos)

Steps:

  • Place pork loin in a large Ziploc bag.
  • In a bowl mix together the garlic, mustard, soy sauce, orange juice, salt and pepper. Pour over the pork and allow to marinate about 6-8 hours.
  • Preheat oven to 350°F
  • Place pork loin in glass baking dish with marinade. Cook until internal temperature is 150°F. (about 25 minutes). Baste pork loin using a turkey baster about every 10 minutes. Remove from oven.
  • Cover and allow to rest for about 5-10 minutes.
  • In a small saucepan on low heat mix all sauce ingredients. Stir with a wooden spoon until all ingredients are well integrated. Continue to stir for about 5 minutes until the consistency is smooth. Transfer to a small bowl and serve over sliced pork loin. Garnish with green onion.

1 cup milk

  • In a glass baking dish, combine the soy sauce, garlic, onion, cayenne pepper, coriander, vinegar, and water. Stir to blend. Add the tenderloins and turn to coat them on all sides. Place the roasted pork on a platter, cover loosely with aluminum foil, and let stand for 10 minutes; then slice and serve with the warm peanut sauce.
