1 bunch scallions, finely chopped
3 tablespoons finely chopped fresh parsley, plus more for topping
3 tablespoons finely chopped fresh dill

PORK TENDERLOIN STEAKS WITH ROASTED TOMATO RELISH

Pork Tenderloin Steaks with Roasted Tomato Relish image

Toss charred tomatoes, garlic and scallions with a quick vinaigrette and spoon over seared pork.

Provided by Food Network Kitchen

Time 40m

Yield 4

Number Of Ingredients 9

8 cloves unpeeled garlic
3 ripe medium tomatoes
1 bunch scallions, trimmed
1/4 cup plus 3 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 pork tenderloin, trimmed (about 1 1/2 pounds)
1 tablespoon balsamic vinegar
1/4 teaspoon Worcestershire sauce
Crusty bread, toasted, for serving

Steps:

  • Position an oven rack 5-to-6-inches from the heat source and preheat the broiler. Line a rimmed baking sheet with foil.
  • Toss the garlic, tomatoes and scallions on the baking sheet with 1 tablespoon of the oil until coated and sprinkle with salt and pepper. Broil until the vegetables are charred, flipping them once, 10 to 12 minutes. Set aside to cool.
  • Slice the pork tenderloin on the bias into 4 long "steaks" and sprinkle all over with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat until very hot but not smoking. Put the pork steaks in the skillet and cook, flipping once, until well browned and just a bit pink in the center, about 7 minutes per side. Turn the heat down to medium if the skillet starts to get too dark. Put each steak on a plate to rest.
  • While the pork rests, core the tomatoes, squeeze the garlic cloves from their skins, and chop them both with the scallions to make a chunky relish. Transfer the vegetables and all their juices to a bowl and stir in the vinegar, Worcestershire sauce and remaining 1?4 cup oil. Season with salt and pepper. Serve the relish over the pork with crusty bread for soaking up the juices.

PORK LOIN WITH FRESH MOZZARELLA, BASIL AND TOMATOES

Pork Loin With Fresh Mozzarella, Basil and Tomatoes image

I first enjoyed this recipe at my mother-in-law's home in Cologne, Germany. Germany has a very large population of Italians and so it is very common to eat Italian-inspired dished there. This one combines pork tenderloin with tomato sauce, fresh tomato slices and melted mozarella cheese. A true knockout. I think this recipe originally came from a German woman's magazine. Though this recipes sounds very complicated, it is quite easy and fun to make. It is also a definite crowd-pleaser.

Provided by ElleFirebrand

Categories     Pork

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 8

3 lbs pork tenderloin
1 tablespoon olive oil
20 -30 basil leaves
1/2 cup basil pesto
4 roma tomatoes, thinly sliced
2 garlic cloves
1 (15 ounce) can tomato sauce
8 ounces fresh mozzarella cheese, thinly sliced

Steps:

  • Preheat oven to 400 degrees.
  • Trim the pork tenderloins to remove "silver skin," then slice into 3/4-inch thick rounds.
  • In a hot skillet, brown the tenderloins on both sides in olive oil. Set aside.
  • In a 9 X 13-inch baking pan, arrange the pork slices face up.
  • On top of each slice of pork, top with a small dollop of basil pesto, a slice of tomato and a fresh basil leaf. Repeat until all slices of pork are covered.
  • In a small bowl, combine garlic and tomato sauce. Pour into baking dish, being careful of pork slices. Sauce can cover pork.
  • Top each slice of pork with a thin slice of mozarella cheese.
  • Bake at 400 degrees for 15-20 minutes, or until cheese is melted and golden brown. Cheese may be slid under the broiler for a few minutes for extra browning if desired.

PORK TENDERLOIN WITH CHERRY SAUCE

Pork Tenderloin with Cherry Sauce image

This delicious pork tenderloin recipe with cherry sauce is courtesy of my sister who made it 20 years ago, and which I have reminisced about over the years. She recently found the recipe so I'm saving it here for posterity.

Time 8h50m

Yield 4

Number Of Ingredients 16

1 pound pork tenderloin, trimmed of fat
2 cups olive oil
¾ cup soy sauce
2 medium limes, juiced
2 tablespoons minced onion
2 teaspoons minced fresh ginger root
2 teaspoons white sugar
2 teaspoons flavor enhancer (such as Accent®)
1 (10 ounce) jar cherry preserves
½ cup red wine
2 tablespoons light corn syrup
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon salt
¼ cup slivered almonds

Steps:

Roasted Pork Tenderloin With Honey Mustard Sauce image

Delicate and lean, pork tenderloin is an excellent cut that can be roasted whole or sliced into medallions.
