2 tablespoons all-purpose flour
1 tablespoon herbes de Provence
1-1/2 teaspoons salt
3/4 teaspoon pepper
1 boneless pork loin roast (3 to 4 pounds)
2 tablespoons olive oil
2 medium onions, halved and thinly sliced
1 cup apple cider or unsweetened apple juice
1 cup beef stock
2 bay leaves
2 large tart apples, peeled, cored and chopped
1 cup pitted dried plums (prunes)

Steps:

  • Mix flour, herbes de Provence, salt and pepper; rub over pork. In a large skillet, heat oil over medium-high heat. Brown roast on all sides. Place roast in a 5- or 6-qt. slow cooker. Add onions, apple cider, beef stock and bay leaves., Cook, covered, on low 3 hours. Add apples and dried plums. Cook, covered, on low 1 to 1-1/2 hours longer or until apples and pork are tender. Remove roast, onions, apples and plums to a serving platter, discarding bay leaves; tent with foil. Let stand 15 minutes before slicing.

This is a hearty stew with tons of flavor, it can also be made in a crockpot. Serve this with crusty bread or basmati rice. This tastes even better the following day! The first time I made this recipe I used 1-1/2 cups apple cider vinegar instead of apple cider, I picked out the meat and had to throw away the rest, please don't make the same mistake, use only apple cider for this or you can use apple juice. This is really good even with omitting the dried apricots, but better with them!

1/4 cup oil
4 lbs pork shoulder, cut into about 1-inch cubes
2 large onions, sliced
1 -2 tablespoon chopped fresh garlic
1 -2 teaspoon crushed red pepper flakes (or to taste)
1/4 cup flour
1 (14 ounce) can chicken broth
1 1/2 cups apple cider (use apple cider not apple cider vinegar!)
1 cup dark beer
2 tablespoons Dijon mustard (use only Dijon)
2 tablespoons curry powder (or to taste)
1 teaspoon coriander
1/2 teaspoon cinnamon
salt and pepper, to taste
4 large carrots, cut into small pieces
1 cup dried apricot

Steps:

  • Set oven to 350 degrees.
  • Heat oil in a large heavy pot over medium-high heat.
  • Add in the cubed pork and brown in batches; transfer to a bowl.
  • To the same pot, add in onions, garlic and crushed red pepper flakes; cook, stirring with a wooden spoon until tender (about 8-10 minutes).
  • Add in flour and stir with spoon for about 3 minutes.
  • Add in broth, apple cider, beer, Dijon mustard, coriander, cinnamon salt and pepper; stir to combine and bring to a boil.
  • Add in the chopped carrots and return the browned pork back with any juices from the plate to the pot.
  • Cover and place in the oven for about 1 - 1-1/2 hours, or until the pork is tender and the liquid is reduced (add in apricots the last 25 minutes of cooking).
  • Season with salt and pepper.

1 whole center-cut boneless pork loin (about 4 to 5 pounds)
Kosher salt and freshly ground black pepper
1 (6-ounce) jar apricot chutney
1 (16-ounce) box dried apricots
2 (16-ounce) boxes dried prunes

Steps:

  • Preheat oven to 350 degrees F.
  • Clean pork loin removing any excess fat. butterfly the pork loin (1/2-inch thick). Lay the pork, cut-side up, season with salt and pepper, and rub liberally with the apricot chutney.
  • Place a layer of apricots and prunes on the flattened loin. Roll tightly and tie with twine at 1/2-inch intervals. Place the pork in a roasting pan fitted with a rack and season with salt and pepper. Roast until the pork reaches an internal temperature of 145 to 150 degrees F, about 15 minutes per pound. Transfer the pork to a cutting board, cover loosely with foil, and let rest for 10 minutes before carving.

2 yellow onions, quartered
2 carrots, cut diagonally into 1-inch slices
2 garlic cloves, minced
1 cup chicken stock or 1 cup chicken broth
1 cup beef stock or 1 cup beef broth
1 teaspoon dried sage
1/4-1/2 teaspoon ground allspice
3/4 teaspoon salt
pepper, to taste
2 medium russet potatoes, peeled and quartered (about 1 1/2 lb.)
8 ounces medium mushrooms
12 dried prunes
2 tart apples, peeled, cored, and quartered
2 tablespoons all-purpose flour
1/4 cup water

Steps:

  • In a large soup pot over medium heat, warm the oil.
  • Add in cubed pork; stir/saute for about 5 minutes or until browned.
  • Add in onions, carrots, and garlic; saute for 2 minutes.
  • Add in stock, sage, allspice, salt, and pepper; bring to a boil.
  • Lower heat to medium-low and simmer, covered, for 30 minutes.
  • Add in the potatoes and mushrooms; bring to a boil.
  • Lower heat to medium-low and simmer, covered, 20 minutes.
  • Add in prunes and apples; simmer about 5-10 minutes or until meat, vegetables, and fruit are tender.
  • For a thicker stew, blend flour and water in a cup.
  • Stir mixture into stew for 2-3 minutes or until thickened.

1 tablespoon vegetable oil
6 pork chops, trimmed (about 2-1/2 lb.)
2 onions, cut in wedges
2 garlic cloves, minced
1 cup dried apricot
1 cup pitted prune
1/2 cup orange juice
1/2 cup chicken stock
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon ground coriander
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In large skillet, heat oil over medium-high heat; brown pork chops.
  • Transfer to crock pot.
  • Add onions, garlic, apricots and prunes to pork chops.

4 lb pork boston butt
3 carrots
2 med yellow onions
3 celery stalks
1 yellow bell pepper
2 bay leaves
1 cup chopped cilantro or parsley or a mix of both
1 small bunch fresh thyme, stems removed
1 large can whole tomatos with juice
3 cups homemade chicken stock
2 cups good dry white wine (Pinot Grigio)
1/2 to 1 small can chile in adobo (depending on how hot you like it)
1/3 cup soy sauce
1/2 cup olive oil
1 T tomato paste in the tube from Italy

Steps:

  • Sear pork butt in 1/2 olive oil in large LeCrueset until brown on all sides. Remove pork to a plate. Pour out the fat. Add the rest of the oil. Brown onions for a couple minutes and then add the rest of the vegetables. Saute for a couple of minutes. Pour in wine and deglaze the pan scrapping up the brown bits, then add back the pork and all of the other ingredients. Break up the tomatos in your hand prior to adding and use all the juice in the can. Cover and bring to a boil and then turn down to simmer slowly for 3-4 hours. Serve the following day with polenta or mashed potatos or white rice. Drizzle with fine oil oil prior to serving.

8 red potatoes

1 sweet onion, diced
1 (11 ounce) can whole kernel corn
1 (14 ounce) can stewed tomatoes
1 (10.75 ounce) can cream of mushroom soup
1 ¼ cups milk
1 (14 ounce) can beef broth
1 tablespoon Italian seasoning

Steps:

  • Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
  • In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and Italian seasoning. Pour into the slow cooker.
  • Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.

Delicious and comforting pork and prune dish that takes only ten minutes to prepare

1 tbsp olive oil
600g pork shoulder, roughly cut into 5cm chunks
small knob butter
1 onion , sliced
1 tbsp plain flour
2 large glasses fruity rosé or white wine
300ml chicken stock
140g dried prunes (about 12)
handful fresh parsley , chopped, to serve

Steps:

  • Heat the olive oil in a flame-proof casserole pan and cook the pork, turning occasionally, until it is golden brown all over, about 10 mins. You need plenty of space in the pan, so cook in 2 batches if the meat starts to steam. Remove from the pan to a plate. Tip out any burnt bits, then add the butter and cook the onion for 3-5 mins until softened.
  • Stir in the flour, then return the pork and juices to the pan. Pour over the wine and enough stock to cover the meat. Bring to the boil, reduce to a simmer, put the lid on and cook for 45 mins, stirring occasionally. Tip in the prunes, top up with stock or water if the meat isn't covered, and cook 45 mins more, uncovered, until really tender. Serve sprinkled with parsley.
