4 chicken breasts, stewed, boned & cut into bite size pieces
1 small onion, chopped
1/2 cup butter
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 (11 ounce) can rotel
1 (12 ounce) bag Doritos
3/4 lb Velveeta cheese

Steps:

  • Saute onions in butter. Add soups & tomatoes.
  • Cube Velveeta, add & simmer until it melts.
  • Add chicken.
  • Crumble Doritos in bottom of casserole (save a few for top of casserole).
  • Add chicken mixture and top with remaining Doritos.
  • Bake at 350 for 30 minutes.

This is from my mother in law. I ask for it just as much as my husband does. It's awesome! I like to add shopped jalapeño to 1/2 the dish for me.

4 small boneless chicken breasts
1 (11 ounce) can condensed cream of chicken soup
1 (11 ounce) can condensed cream of mushroom soup
5 ounces skim milk (1/2 soup can)
4 ounces green chilies, diced
1 tablespoon dried onion flakes
1/2 tablespoon red pepper flakes
2 cups cheddar cheese, shredded
1 (13 ounce) bag plain Doritos
6 ounces salsa

Steps:

  • Cut up chicken into 1 inch cubes and cook in microwave for 15 minutes or boil. drain chicken.
  • Add both soup cans, 1/2 can of milk, green chilies, onion flakes, and red pepper flakes to the chicken. Combine to make your chicken mixture.
  • Put handful of chips on the bottom of a 9"x13" pan and crush lightly. Scoop 1/2 of chicken mixture over chips. Spread 1/2 the cheese over chicken mixture. Add another uncrushed layer of chips. Top with another layer of the remaining chicken mixture and cheese.
  • Cook for 30 minutes.

1 (4 ounce) bag cool ranch Doritos
1 (10 ounce) can white chicken chunks, packed in
water, and drained
1 (10 3/4 ounce) can cream of chicken soup
1 (10 ounce) can rotel, original diced tomatoes with green chilies
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350°F.
  • Grease a 2-quart casserole dish or 8x8-inch pan.
  • Slightly crush Dorito chips and put into prepared dish or pan.
  • Mix chicken chunks, soup and tomatoes together and pour over chips and mix slightly with the chips.
  • Sprinkle Mozzarella cheese over top.
  • Bake uncovered for 30 minutes.
  • Serve with a mixed green salad if desired.

Steps:

  • Cut chicken breasts into 1 inch cubes. Saute' chicken until done.
  • Mix all canned ingredients together. Set aside.
  • Place crushed Doritos in the bottom of casserole dish.
  • When chicken is cooked, add it to soup mixture, mix well.
  • Scoop chicken/soup mixture onto chips, spread it evenly. If desired top with shredded cheese.
  • Bake at 350°F for 15 minutes.

This recipe was created after a couple of years of tweaking. I've successfully served it to people ranging in age from 6 to 60! My husband loves it so much that he insists I make it for him every week. It also keeps well as leftovers. One extra pound of ground chicken may be substituted for the ground pork.

4 cups nacho cheese-flavored tortilla chips (such as Doritos®), crushed
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.75 ounce) can cream of chicken soup
1 green bell pepper, chopped
1 (4 ounce) can diced green chile peppers
½ cup shredded Cheddar cheese
½ cup shredded pepperjack cheese
¼ cup sour cream
1 pound ground pork
1 pound ground chicken
½ cup shredded Cheddar cheese
½ cup shredded pepperjack cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Mix crushed tortilla chips, tomatoes, cream of chicken soup, green bell pepper, green chile peppers, 1/2 cup Cheddar cheese, and 1/2 cup pepperjack cheese together in a large bowl.
  • Heat a large skillet over medium-high heat. Cook and stir ground pork in hot skillet until crumbly and no longer pink, about 10 minutes. Transfer pork to tortilla chips mixture, retaining drippings in the skillet.
  • Cook and stir ground chicken in reserved drippings until crumbly and no longer pink, about 10 minutes. Transfer cooked chicken to the pork-tortilla chip mixture; mix well. Pour mixture into the prepared casserole dish; top with 1/2 cup Cheddar cheese and 1/2 cup pepperjack cheese.
  • Bake in the preheated oven until casserole is bubbling and cheeses are melted, about 30 minutes. Allow casserole to cool 5 to 10 minutes before serving.

I have no idea where I got this recipe, specifically, but I know I picked it up on a Seattle BBS when I was going by the nym of "Sari" back in the late 1980s, and it's still floating around on the internet, here and there. It is attributed to Janet Detter Margul@ The Fifth Dimension (that's an old BBS), in Dallas. An old family favorite and you can even disguise leftover turkey with this recipe.

3 cups cooked chicken meat (the meat of one chicken, cooked)
1 (10 3/4 ounce) can condensed cheddar cheese soup or 1 (10 3/4 ounce) can nacho cheese soup
8 ounces grated cheddar cheese
1 (10 3/4 ounce) can cream of mushroom soup
7 ounces chopped green chilies
1/4 cup chopped onion
1 (10 ounce) can chopped Ro-Tel tomatoes
1 (1 lb) bag nacho cheese flavor Doritos

Steps:

  • Preheat oven to 375°F.
  • Boil and bone one chicken, so you end up with chopped chicken meat; save the broth for another recipe (not this one). You can also use canned cooked chicken or cooked chicken breasts/thighs.
  • In a microwave safe bowl, stir together the Velveeta cubes, Cheddar cheese, cream of mushroom soup (not with the milk, just the can of unreconstituted soup), chopped green chilies, chopped onion, and one can of chopped Ro-Tel tomatoes.
  • Microwave 2 minutes, remove and stir.
  • In a large (lasagne-sized) pan, layer: Dorito chips, chicken, cheese mixture, Doritos, chicken, cheese mixture.
  • Bake in a 375°F oven for about 30 minutes, until the cheese is brown and bubbly.
  • NOTE from Sari/Julesong: If you don't like Velveeta, you can use Campbell's Cheddar Cheese Soup instead.

4 - 5 large chicken breasts
Celery and onions, roughly chopped - to season water (optional)
1 large (but NOT super sized) bag Doritos
1 family size can cream of chicken soup
1/3 can milk
8 oz Kraft Shredded Mild Cheddar Cheese
Scallions or chives to garnish (optional)

Steps:

  • 1. Boil chicken breasts in pot of water until cooked. Add some celery and onions for flavor if desired. This should take about 30-35 minutes depending on the size of the breasts. Remove chicken from water and allow to cool until you can handle it. You may want to cover it with plastic wrap and stick it in the fridge for a few minutes.
  • 2. Meanwhile, evenly pour the entire bag of Doritos into an ungreased 9x13 baking pan. Once you can handle the chicken, remove it from the bones, almost "shredding" it by hand into thin pieces. Discard the skin and bones, and place the shredded chicken into a large bowl. Add the entire can of soup plus 1/3 can of milk to the chicken and gently stir until combined. Pour the chicken and soup mixture on top of the Doritos using the back of a spoon to spread it. Sprinkle the shredded cheese on top and garnish with the scallions or chives if you like.
  • 3. Bake for about 25 minutes in a preheated 350 degree F oven. You want it heated through just until bubbly, but you don't want the chips to burn. Allow to cool 5 min, then cut into squares and serve as you would a lasagna. Enjoy!
