I was in the mood for soup on a cold night and using a basic ham and bean soup, I created one that is ready in less than an hour, with items found in the pantry/fridge. Easy and delicious!

2 cups hot water
2 teaspoons chicken bouillon granules
2 (15 ounce) cans Great Northern beans
⅓ cup diced carrots
⅓ cup diced onion
1 small stalk celery, diced
½ teaspoon minced garlic
1 bay leaf
¼ teaspoon ground black pepper
½ (8 ounce) pre-cooked ham steak, diced
salt to taste

Steps:

  • Bring water to a boil in a pot; add chicken bouillon and stir until dissolved.
  • Drain and rinse 1 can Great Northern beans. Reduce heat to low and stir drained beans and remaining can of undrained beans into bouillon mixture in the pot. Add carrots, onion, celery, garlic, bay leaf, and black pepper to pot; bring soup to a boil.
  • Stir ham into soup, reduce heat to low, and simmer until vegetables are tender, about 30 minutes. Season with salt.

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

1 tin cooked white beans ((400 g, 13oz))
1 onion
2 carrots
2 celery stalks
1 red pepper
5 cups stock/broth (either vegetable, chicken or beef )
2 tbsp tomato puree
1/2 tsp salt
1/8 tsp ground black pepper
1 tsp dried thyme
1 tbsp chopped fresh parsley

Steps:

  • Peel and chop the onion and carrots, and chop the red pepper and celery stalks.
  • Add the stock to a pot together with the vegetables, and cover the pot with a lid.
  • Leave to cook for about 15 minutes or until the the veggies are tender.
  • Add the beans (drained and rinsed) and cooked ham, tomato puree, salt, pepper and thyme, and leave to cook for a further 5 minutes.
  • Remove the pot from the heat and garnish with chopped parsley.

2 Tablespoons extra virgin olive oil
1 large carrot, chopped (1/2 cup)
1 stalk celery, chopped
1/2 onion or 1 large shallot, chopped
salt and pepper
2 cloves garlic, pressed or minced
big pinch dried thyme
2 Tablespoons gluten free flour blend
4 cups chicken stock
2, 15oz cans Great Northern Beans, drained and rinsed
1lb ham steak, cubed

Steps:

  • Heat extra virgin olive oil in a large soup pot over medium heat. Add carrots, celery, and onion/shallot, season with salt and pepper, then saute until tender, 10 minutes. Add garlic and dried thyme then saute until garlic is extremely fragrant, 1-2 minutes. Sprinkle in flour then cook for 1 minute, stirring constantly.
  • Slowly add glugs of chicken stock while stirring until a smooth sauce has been formed then pour in remaining stock. Turn heat up to high to bring broth to a boil then add beans and ham. Turn heat down to medium-low then simmer for 20 minutes, stirring occasionally. Scoop into bowls then serve with crostini (directions below.)

8 cups low sodium chicken broth (can sub water, beef, or vegetable broth for added flavor)
1 leftover ham bone with meat (or ham hocks, diced ham or 1 lb. cooked sausage)
1 onion (diced)
1 clove garlic (minced)
1 teaspoon chili powder (optional)
15 ounces diced tomatoes
1 lemon (juiced)
Optional: Hot sauce or crushed red pepper to taste

Steps:

  • Rinse beans and drain. Sort any unwanted debris and set seasoning packet aside.
  • Place beans, onions, ham bone (or diced ham), broth/water, garlic and chili powder in a 6qt slow cooker.
  • Cook on high 5 hours (or low for 7-8) or until beans are tender.
  • Once tender, remove the hambone (if used) and chop any meat left on the bone and add it back to the pot.

Black Bean Ham Soup is a great way to use leftover ham, but the meat can be left out for a delicious vegetarian version.

1 Tablespoon olive oil (extra virgin)
3/4 cup onion (chopped)
2 cloves garlic (chopped)
1.5-2 cups ham (diced (leave out for vegetarian version))
1 lime (zested and juiced)
3 cans black beans (15 oz.)
2 cups chicken stock (use vegetable stock for vegetarian version)
1 can tomatoes and chili peppers (Rotel brand is our favorite (10 ounce))
1 teaspoon hot sauce (adjust according to preference)
1/2 teaspoon cumin
salt and pepper, to taste

Steps:

  • In a large pot, heat oil over medium to medium-high heat.
  • Add onion and saute' until soft, about 3-4 minutes.
  • Add garlic, and saute' additional minute.
  • Add ham and saute' additional minute.
  • Stir in lime zest, beans (including liquid), stock, tomatoes (including juice), hot sauce and cumin. Bring to a boil.
  • Reduce heat to simmer and let simmer for 45 minutes.
  • Partially mash the beans with potato masher to thicken.
  • Add the lime juice and salt and pepper if needed.
  • Garnish with your choice of sour cream, cilantro, diced tomatoes, diced jalapenos, parsley, crushed corn chips.

8 potatoes (peeled, chopped and cooked (or use canned potatoes))
1/2 cup butter
16 oz diced ham ((2 cups))
1 (14.5oz) can green beans ((or use 1 cup fresh green beans))
4 cups milk
1 oz packet ranch seasoning
2 cups shredded cheddar cheese
4 tbsp chives ((fresh or dried))
salt and pepper (to taste)

Steps:

  • In a large pot, bring 8 cups of water to a boil.
  • Peel and chop potatoes into bit sized chunks then add to pot of water. (Be careful, water may splash and will be hot)
  • Boil potatoes for 15 minutes or until the largest chink of potato is soft all the way through. Then drain potatoes.
  • Return the empty pot to the stove top. Keep heat at high. Add butter, ham, green beans, potatoes and milk. Bring to a boil. Stir and cook for 5 minutes.
  • Add salt and pepper to taste.
  • Ladle into bowls then top with cheddar cheese and chives if desired.

Delicious meaty soup that keeps me and the hubby warm during the winter, makes great left overs and is really cheap and healthy for you!

4 packaged ham hocks
1 1/2 cups of dry beans (I prefer pinto beans or navy beans)
3 large red potatoes, diced
2 large carrots, chopped
1 large onion, diced
1 chicken bouillon cube
salt and pepper

Steps:

  • .In a crock pot let the beans sit on low in water for about an hour till they are a little soft (make sure they are not to soft, they should still not be edible!).
  • Place thawed ham hocks and beans into a large cooking pot and fill the pot half way with water and turn the heat on medium-medium high heat. Let it start to boil and make sure to stir every now and then (the beans like to stick to the pot.
  • When it's boiled for about 10 minutes place in potatoes and let boil till the potatoes start to soften.
  • After the potatoes have started to soften throw in the the carrots and onions and stir in the chicken bouillon cube.
  • Let boil another 20 or 30 minutes then add salt and pepper to taste, and let the heat down to low.
  • Warning! If you don't turn the heat down or off the beans will turn the whole soup into mush!
  • With a sharp knife and a pair of tongs, grab the ham hocks (warning hot!) and start cutting off the good meat from the bone (I always leave in a little bit of fat for taste, not for eating though). Careful these suckers are slippery so use a cutting board. Discard bones once the meat has been removed (or give them to your dogs as a treat).
  • Once the meaty chunks have been stirred in you can serve hot with cornbread! YUM!

  • Heat olive oil in large pot on the stove-top over medium heat. Add the onion and cook, stirring, until softened. Add the carrot and cook, stirring another minute.   • Use low sodium or no added sodium stock and beans for this recipe if possible. The ham will probably add more than enough salt and once it is too salty there isn't much you can do to fix it. You can also soak the ham bone in water in the fridge overnight to help remove some salt.

Add the drained beans to the soup and continue simmering.
  • Heat the butter in the frying pan again and add the flour, whisking continuously. If it is too dry, add more butter. Continue cooking the roux but do not let it brown. After 2-3 minutes, pour the roux into the soup as it is simmering. Stir frequently as the soup thickens. Season with freshly ground black pepper. Serve hot.
