Steps:
- .In a crock pot let the beans sit on low in water for about an hour till they are a little soft (make sure they are not to soft, they should still not be edible!).
- Place thawed ham hocks and beans into a large cooking pot and fill the pot half way with water and turn the heat on medium-medium high heat. Let it start to boil and make sure to stir every now and then (the beans like to stick to the pot.
- When it's boiled for about 10 minutes place in potatoes and let boil till the potatoes start to soften.
- After the potatoes have started to soften throw in the the carrots and onions and stir in the chicken bouillon cube.
- Let boil another 20 or 30 minutes then add salt and pepper to taste, and let the heat down to low.
- Warning! If you don't turn the heat down or off the beans will turn the whole soup into mush!
- With a sharp knife and a pair of tongs, grab the ham hocks (warning hot!) and start cutting off the good meat from the bone (I always leave in a little bit of fat for taste, not for eating though). Careful these suckers are slippery so use a cutting board. Discard bones once the meat has been removed (or give them to your dogs as a treat).
- Once the meaty chunks have been stirred in you can serve hot with cornbread! YUM!

- Heat olive oil in large pot on the stove-top over medium heat. Add the onion and cook, stirring, until softened. Add the carrot and cook, stirring another minute. Add the butter (or more cooking oil) and stir to combine. Sprinkle in the flour and cook, stirring, for 30-45 seconds (it will be quite dry, but just keep it moving so it doesn't scorch). Add the chicken broth. Bring to a boil, then reduce heat slightly and simmer for about 5 minutes, to give the carrots a little head start cooking. Add the navy beans, ham, tomato paste and the liquid smoke (or splash of Worcestershire) and a bay leaf, if you have one. Stir to combine.
- Simmer soup for 10-15 minutes, or until the carrots are tender (taste test them to be sure). If you like, use an immersion blender to blend the soup slightly (4-5 pulses). This is optional, but will create a thicker soup. Stir in the parsley.
- Taste soup and add additional salt, if needed and some freshly ground pepper. REMOVE BAY LEAF and discard. Serve warm immediately. Leftover keep fairly well, though the beans will soak up the broth as it sits. You can thin with a splash more chicken broth or water, to thin, if you like.

- Heat the oil over medium-high heat in a large soup pot. Sauté the onions, carrot, and celery for 7-10 minutes, stirring occasionally (a little browning is good).
- Add the Italian seasoning, smoked paprika, chicken broth, water, ham, and white beans to the pot. Increase the heat to high and bring it to a gentle boil. Reduce heat to medium (or medium low if it's bubbling too much), cover the pot with the lid slightly ajar, and let the soup simmer for 20-25 minutes (the flavor will intensify the longer you cook it so feel free to cook it for a bit longer).
- Season with salt & pepper to taste. Ham can be quite salty, so be sure to add salt after it's cooked if you think it needs it. Optional: Take a potato masher and mash some of the beans right in the pot to create a slightly thicker texture or pulse an immersion blender a few times.

- Use low sodium or no added sodium stock and beans for this recipe if possible. The ham will probably add more than enough salt and once it is too salty there isn't much you can do to fix it. You can also soak the ham bone in water in the fridge overnight to help remove some salt.
- Pour the vegetable broth into a large soup pot. Add the ham bone and bring to a boil. Reduce the heat and simmer for 2-3 hours on low. Melt butter in a frying pan and saute the onion and jalapeno pepper until the onion is translucent. Remove the onion to a small bowl, leaving as much of the butter in the frying pan as you can. This will be used to make the roux to thicken the soup.
- Remove the ham bone and any meat that has fallen off from the broth. Allow to cool. While the ham is cooling add the onion and jalapeno to the broth and simmer. Remove as much meat as you can from the ham bone and cut into bite sized pieces. Discard the bone. Add the meat back to the broth. Open the cans of beans then rinse and drain them. Add the drained beans to the soup and continue simmering.
- Heat the butter in the frying pan again and add the flour, whisking continuously. If it is too dry, add more butter. Continue cooking the roux but do not let it brown. After 2-3 minutes, pour the roux into the soup as it is simmering. Stir frequently as the soup thickens. Season with freshly ground black pepper. Serve hot.
