THE 5 BEST WAYS TO REHEAT SMOKED FOOD - SMOKED AND BREWED
From smokedandbrewed.com

- Reheat on a Smoker. The main goal when reheating is to retain the moisture and the flavor of the food that you have prepared. Of course, this seems like a big feat when you are putting heat back onto the item that you are reheating, after all, heat is a drying agent.
- Reheat in the Oven. There are a handful of different reasons as to why someone would not want to reheat their previously smoked food in the smoker itself: weather could be terrible, it may be only a small piece that is not worth the trouble of preheating and getting the smoker set up, or they may not want any additional smokiness added.
- Reheat on the Stovetop. Sometimes you find yourself with only a bit of leftovers that need to be reheated. Not all of us are cooking 15-pound briskets, but tend to smoke smaller items like a piece of salmon or a couple of pork chops.
- Reheat in the Microwave. If you are in a serious rush or simply do not feel like taking the time or using the pans to reheat your smoked food on the smoker, in the oven, or on the stove, your next best bet is to reheat in the microwave.
- Reheat on an Open Fire. I know, reheating smoked food on an open fire sounds insane to the person who has only ever used modern appliances for reheating.

- Dry brine your pork steaks by sprinkling them with 1/2 tsp of kosher salt per pound of meat and refrigerating them for at least 3 hours. (This step can be skipped, but it’s a good idea to do it if you can.)
- You can hook your Billows up to your smoker and your Smoke X2, but you want to half of your cooker going at a pretty good heat for direct cooking for the sear. Get it preheated so that you’re ready to go.
- Season the pork steaks with BBQ rub, allowing it to hydrate on the pork surface for a minute on the first side before turning them over to season the second side.

- Choosing a Good Cut. Choosing the right cut is the most crucial step of the smoking process. It doesn’t matter how flavorful the marinade is; if you’re using the wrong cut, the result would be a dry, rubbery steak.
- Preparing the Marinade. Good cuts don’t really need marinating, but there isn’t a hard and fast rule. After you’ve bought a nice cut, keep it in the fridge, and in the meanwhile, prepare the marinade.
- Bring Your Steak to Room Temperature. You may feel like skipping this step and directly placing the meat in the smoker. However, it’s super-important for your steak to not be frozen or cold before you start cooking it.
- Add the Wood Chips to the Smoker. Now, it’s time to add the wood chips that will be the fuel for the smoke. Make sure you’re using solid, hardwood chips like mesquite, pecan, apple, hickory, or birch.
- Turn On the Master-built Electric Smoker for Preheating. If you’re using your electric smoker for the first time, make sure to season it before cooking.
- Set the Cooking Temperature. Setting the right temperature is crucial to ensure that your steak comes out moist, tender, and juicy. If the setting is too low, your meat won’t cook all the way to the end.
- Refill the Woodchips and the Smoker’s Water Pan. If you think the first batch of wood chips has stopped producing smoke, add in another half cup of wood chips.
- Add in the Meat. If your marinated steak has been in the fridge, make sure to keep it out for at least 15 minutes before placing it inside the smoker.
- This is the Time to Sauce it Up! If you want to spice things up a bit, this is the perfect time to add extra sauce to your steak. The delicious smoky fumes, the bubbling marinade, and the tender meat are all ready for an extra dose of flavor.

- The perfect barbecue typically begins the night before you actually intend to eat it, at which time you'll be in charge of prepping your meat to allow for maximum flavor potential.
- First, trim off an excess fat, silver skin, or unsightly bits attached to your pork to clean it up, saving the trimmings for things like stock later down the line.
- Next, mix up your spice rub, using some of it while you make your injection liquid in a small saucepan on the stove.
- Once the liquid has had a chance to cool, inject it into your pork, cleaning up and discarding any spilled or excess liquid.

From grillagrills.com
- To get started, you’ll start by applying an even coat of Grilla Grill’s All Purpose Rub on both sides of the pork steaks. Preheat your Kong to 275 degrees Fahrenheit and place your pork steaks on. Don’t worry about any edges that hang over, this will give them a nice flavorful char.
- Start by cooking them for about 20 minutes on the first side and after the first 20, you’ll want to flip them. Just be sure to keep an eye out for any pieces that are hanging over the edge to make sure they don’t burn. Once your meat hits a minimum of 145 degrees internal temperature, you are set to go.
- You’re looking at a 45-minute total cook time from start to finish. To add a bit of spice to this sweet and savory meat, drizzle on a touch of our Kongo Kick to enhance the flavor, or for a more savory flavor, try our Gold N’ Bold sauce.
