Steps:
- Preheat oven at 400 degrees.
- Let ribs rest aside rub donw with the salt and pepper.
- In a pot, mix all remaining ingredients, bring to a boil, simmer for 8-10 minutes stirring constantly.
- Mix sauce in blender.
- In a shallow dish place the spareribs, add sauce and set aside for 30 minutes.
- Add cooking spray to a baking pan, place ribs, cover with aluminumn foil, bake 1 hour until done and a little bit crunchy.
APRICOT HABANERO PORK CHOPS

- For the pork chops: Season the pork chops with salt and pepper; set aside while making the glaze.
- Add the apricot preserves, soy sauce, ginger, garlic, orange zest and juice and habanero to a small pot and bring to a simmer. Simmer until the sauce is reduced and thickened, 10 to 15 minutes; let cool. Divide the glaze between 2 bowls, reserving 1 bowl for basting and one for serving with the cooked chops.
- Preheat a grill to medium-high heat. Coat the grates with plenty of vegetable oil to help create a nonstick surface.
- Using a brush, coat the chops with the first round of glaze. Place them on the grill glazed-side down and grill without moving until the glaze begins to caramelize, about 5 minutes. Brush the tops with glaze, flip the chops, brush the other side with more glaze and continue cooking until the chops are caramelized, charred and sticky and the internal temperature registers 135 degrees F, another 7 to 10 minutes. Discard the basting glaze. Let the chops rest for 5 to 10 minutes, coating them once with the reserved serving glaze while resting.
- For the relish: Combine the mint, apple, bell pepper, scallion and lime zest and juice in a bowl and toss to coat.
- Top the pork chops with some green apple relish and serve with the remaining serving glaze and relish.
APRICOT PORK WITH HABANERO SAUCE

- Rub the tenderloin with 1/2 teaspoon of oil then season with salt and pepper. Whisk together the apricot, mustard and orange juice. Place the tenderloin on a hot grill, and sear all sides. Grill, brushing often with the glaze, until just cooked through, 4 to 5 minutes per side. Let tenderloin rest 5 minutes before slicing. Serve with the sauce below. Habanero Sauce: Heat the oil in a heavy skillet over medium-high heat. Add the onion, garlic, habanero, cumin, salt and pepper. Cook, stirring, until soft, about 5 minutes. Add the orange and lime juice, and bring to a boil. Cook until reduced by half. Whisk in the cilantro and season to taste with salt and pepper.

- Place ribs in a large roasting pan. Whisk together apricot preserves, soy sauce, brown sugar, and garlic powder until blended. Pour apricot marinade over ribs, cover, and place in the refrigerator, 8 hours to overnight.
- Preheat the oven to 325 degrees F (165 degrees C). Line a baking pan with aluminum foil.
- Remove ribs from the marinade and shake off excess. Place ribs in the prepared baking pan and season with salt and pepper. Pour marinade into a small saucepan and bring to a boil. Reduce heat and simmer marinade for 5 minutes; set aside.

- EARLY IN DAY OR DAY AHEAD: In very large saucepot or Dutch oven, combine pork spareribs and garlic; cover with water. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 1 hour or until spareribs are fork-tender. Remove ribs to platter; cover and refrigerate.
- MEANWHILE, PREPARE APRICOT GLAZE: Combine Smucker's preserves, onion, ketchup, brown sugar, oil, soy sauce, ginger and salt in small saucepan; mix well. Heat to boiling; boil 1 minute. Cover and refrigerate apricot glaze.
- ABOUT 1 HOUR BEFORE SERVING: Heat grill. When ready to barbecue, place cooked spareribs on grill over medium heat. Cook 12 to 15 minutes or until heated through, turning spareribs often. Brush occasionally with apricot glaze during last 10 minutes of cooking.

- The precooked spareribs can be broiled in the oven. Place spareribs on broiler pan; brush with some apricot glaze. And it says it's good with a tablespoon or two of chopped fresh rosemary or thyme. I don't know why recipezaar and the magazin show such a HUGE difference in nutritional information, but the recipe shows: per serving: 310 calories, 13g fat (2g Sat.), 60mg chol., 0g fiber, 21g Pro., 28g Carb., 577mg Sod.

- Preheat oven to 350 degrees.
- Mist a baking dish with cooking spray.
- Season pork chops with salt and pepper.
- Warm oil in a lare skillet over medium-high heat until hot but not smoking.
- Add chops and cook until nicely browned, about 3 minutes per side.
- Transfer chops to prepared baking dish and cook through in oven, 10 to 20 minutes, depending on how thick the chops are.
- Pour off fat from skillet and add chicken broth.
- Bring to a boil over high heat, stirring with a wooden spoon or heatproof spatula to pick up any browned bits on bottom of skillet.
- Boil rapidly until liquid is reduced by half, 3 to 5 minutes.
- Add apricot jam and bring mixture back to a boil.
- Cook sauce, stirring, until thick and syrupy, about 2 minutes.
- Stir in mustard.
- Lower heat on stove to medium and returned cooked pork chops to skillet along with any accumulated juices in baking dish.
- Turn pork chops several times in sauce to coat.
- Spoon remaining sauce over chops and serve hot.

- For BBQ Sauce: Warm fruit spread in saucepan on Medium heat 2-4 min, stirring constantly.
- Reduce heat to Medium-Low, add wine, reduce to syrupy consistency; 8-10 minutes.
- stirring occasionally.
- Stir in BBQ sauce, simmer 4-5 minutes, stirring occasionally.
- Remove from heat, puree until smooth.
- Coat clean grill with vegetable oil.
- Season both sides of meat with steak seasoning.
- Sear until meat has changed color 1/4 way up from bottom, about 2 minutes.
- Turn and sear the other side.
- Turn meat back over; reduce heat to Low.
- close lid.
- Grill until just before pork reaches 150 degrees.
- Lift lid and brush Sauce on all sides of meat.
- Grill until internal temperature reaches 150.
- Once sauce has been applied watch carefully.
- It will burn easily.
- Remove from grill, let rest 10 minutes before slicing and serving.
APRICOT-HABANERO SHORT RIBS
Steps:
- 1. Trim fat from ribs. Place ribs in a 4- to 6-quart pot with enough water to cover ribs. Bring to boiling; reduce heat. Simmer, covered, for 1-1/2 hours or until tender. Drain.
- 2. For sauce, in a small saucepan cook the onion and garlic, in hot oil until tender. Stir in the catsup, apricot preserves, vinegar, pepper, steak sauce, and chili powder. Bring just to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until mixture thickens slightly, stirring occasionally. Set aside.
- 3. Stir together the cumin and salt in a small mixing bowl. Sprinkle mixture evenly over both sides or fibs; rub into surface.
- 4. Prepare grill for indirect grilling. Test for medium heat above the drip pan. Place ribs, meaty side up, on the lightly oiled grill rack over the drip pan. Cover and grill for 15 minutes or until the ribs are tender, brushing occasionally with the sauce. Heat the remaining sauce until bubbly; pass with the ribs.
