This recipe does wonders for pork ribs. My mother made it when I was a child, and now I make it for my family. This recipe is very rich but very filling. It goes great with mashed potatoes!

¼ cup vinegar
½ cup ketchup
1 tablespoon soy sauce
1 (8 ounce) can crushed pineapple, undrained
3 tablespoons brown sugar
2 tablespoons cornstarch
½ teaspoon salt
½ tablespoon fresh ginger, grated
3 pounds pork spareribs, cut into serving size pieces

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a saucepan over medium heat, stir together the vinegar, ketchup, soy sauce, and pineapple. Stir in brown sugar, cornstarch, salt, and ginger. Cook, stirring constantly, until slightly thickened, about 5 minutes.
  • Arrange a layer of spareribs in a roasting pan. Pour half of the sauce over the top. Arrange another layer of spareribs, and top with remaining sauce. Cover pan tightly with foil.
  • Bake in a preheated oven until done, about 1 1/2 to 2 hours.

21 ounces pork ribs, cut into bite-size pieces (1 lb 5 oz)
1 tablespoon dark soy sauce
1 whole head of garlic
2 tablespoons peanut oil or 2 tablespoons shortening
1 cinnamon stick
2 star anise
3 tablespoons light soy sauce
2 ounces rock sugar
3/4 cup water

Steps:

  • Put the pork ribs in a shallow dish and sprinkle over the dark soy sauce. Cover and let marinate in the refrigerator for at least 20 minutes.
  • Break the garlic head into cloves, leaving the individual skins intact.
  • Heat the oil in a preheated wok or deep pan over high heat. Add the garlic cloves and stir-fry for 1 minutes. Toss in the cinnamon and star anise and stir-fry for 1 minutes. Add the pork and stir-fry until beginning to brown, then stir in the light soy sauce, sugar, and water and cook, stirring, until the sugar has dissolved. Simmer gently, uncovered, for 30 minutes, stirring frequently.
  • Cover and simmer 1-1 1/4 hours or until the meat is very tender and the gravy thick and concentrated.

1 cup aloha shoyu soy sauce
1/2 cup sugar
1 ounce Kahlua
1/2 cup pineapple juice
1 tablespoon gingerroot, freshly grated
3 garlic cloves, grated
8 lbs pork ribs

Steps:

  • Combine ingredients except for pork, ginger and garlic in a saucepan.
  • Cook over low heat, stirring until sugar has dissolved. Add ginger and garlic; cool.
  • Marinate ribs in a large bag for at least 4 hours ,keep in the refrigerator. Remove from bag and boil the marinade for 5 minutes. Reserve for basting meat.
  • Barbecue ribs over medium-low heat, turning once or twice and basting with sauce regularly until ribs are tender.

3 pounds baby back ribs, cut into 3- to 4-rib sections
1/2 cup salt
1 carrot, thickly sliced
1 stalk celery, thickly sliced
1 onion, quartered
2 cloves garlic, smashed
One 2-inch piece fresh ginger, peeled and sliced thick
1 cup canned pineapple juice
1 cup chicken stock or broth
1/2 cup brown sugar
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1 tablespoon minced chile pepper
1 teaspoon Worcestershire sauce
2 green onions, thinly sliced
Cooking spray
Oil, for brushing

Steps:

  • Place the ribs in a large pot, cover with cold water and add the salt, carrot, celery, onion, garlic and ginger. Bring the ribs to a boil, reduce the heat and simmer until the ribs are very tender but not completely falling off the bone, about 45 minutes.
  • While ribs are cooking, make the sauce. Combine the pineapple juice, chicken stock, brown sugar, hoisin, soy sauce, garlic, ginger, chile, Worcestershire sauce and 1 of the green onions in a large saucepan. Bring to a boil, reduce the heat and simmer until thickened.
  • Heat a grill or grill pan over medium-high heat.
  • Drain the ribs and discard the vegetables and ginger. Spray a baking sheet with cooking spray. Place the ribs on the baking sheet and brush them with oil.
  • Brush the sauce on the ribs and grill, brushing on more sauce occasionally, until heated through, 2 to 3 minutes per side. Transfer the ribs to a platter, brush once more with the sauce, scatter with the remaining green onion and serve.

1/2 cup onion, finely chopped
1/4 cup green pepper, chopped
2 (8 ounce) cans tomato sauce
1 tablespoon Worcestershire sauce
1/3 cup vinegar
2 1/2 cups pineapple chunks in juice, canned
1/4 cup brown sugar
1/2 teaspoon dry mustard

Steps:

  • Cut ribs into serving-size pieces.

The soy sauce-marinated, slow-cooked pork with just the right amount of sweet taste (imagine Okinawan brown sugar) is pretty close to perfect...

1 ½ pounds whole pork belly
½ cup soy sauce
½ cup packed brown sugar
½ cup water
½ cup mirin (Japanese sweet wine)
2 teaspoons ground ginger
1 clove garlic, or to taste

Steps:

  • Place pork belly into a large pot, and cover with water about 1-inch above the pork. Bring to a boil over medium-high heat, and simmer for 2 minutes. Discard water and fill pot with fresh water about 1-inch above the pork. Bring to a boil over medium-high heat, then reduce heat to a simmer. Cook until the pork begins to soften, about 1 hour.
  • Remove the pork from the water, and place on a cutting board. Allow pork to cool for a few minutes, then slice off the thick skin and discard. Cut the remaining pork meat into 1-inch wide slices. Set aside.
  • Combine the soy sauce, brown sugar, 1/2 cup water, mirin, ginger, and garlic in a large saucepan, and bring to a boil over high heat. Add the sliced pork belly, then bring to a boil again. Reduce heat to low, and place a sheet of aluminum foil directly over the meat and sauce. Simmer uncovered until the pork is tender, 30 to 45 minutes, turning the pork several times to cook evenly.

1/2 cup white wine

  • Place garlic, papaya, water, wine, honey and tomato paste into a food processor. Pulse until mixture is finely chopped, about 15 seconds.
