- Preheat the oven to 400 degrees F. Coat a 9x13 inch pan or 3 quart baking dish with cooking spray.
- Place the sweet potatoes in an even layer in the dish.
- In a small bowl, whisk together the brown sugar, butter, cinnamon, salt and nutmeg.
- Pour the brown sugar mixture over the sweet potatoes. Toss to coat them evenly in the sauce.
- Bake the yams for 30-40 minutes, stirring every 15-20 minutes, until tender and caramelized.

- Preheat the oven to 350 F.
- Wash the yams.
- Peel, then chop the yams ( make sure that they are about 1/2 inch thick.)
- Place the yams into a 9x13 bake dish.
- Place the butter into a medium sized pot, then melt it over medium heat.
- Once the butter is melted, sprinkle in the white & brown sugar, ground cinnamon,ground nutmeg, ground ginger, and ground clove.
- Turn the stove off, mix the ingredients, then add in the vanilla extract.
- Pour the candied mixture over the yams, and try to coat all the yams with the candied mixture.
- Next, cover the bake dish with foil, then bake the yams in the oven for 30 minutes.
- Remove the yams from the oven, and baste them with the candied mixture.
- Cover the yams, and bake them for another 15-20 minutes.
- Remove the yams from the oven, and let them sit for about 10 minutes before serving.
- Enjoy!

- Preheat oven to 400 degrees F (200 degrees C).
- Roast whole yams in preheated oven until heated through but not quite tender, 35 to 40 minutes. Allow to cool.
- Reduce oven heat to 350 degrees F (175 degrees C).

- Place the peeled and cut yams into a large pot, and cover the yams with water.
- Place the pot on the stove top, turn the heat to high, and let the yams boil for about 5 minutes. Then drain the yams, and set the to the side.
- In a separate pot, add in 1 stick of butter, and begin to melt it over medium high heat. Once the butter is melted, reduce the heat to low, and add in the granulated sugar, and the brown sugar. Stir, and cook for 1 minute, then turn the heat off.
- Sprinkle in the ground cinnamon, ground nutmeg, and ground ginger. Stir, and add in the vanilla extract.
- Place the yams into a butter bake dish, and pour the candied mixture all over the yams.
- Fold in the ingredients. Make sure the yams are well coated with the candied mixture!
- Place the yams in the oven, Uncovered, on 375 F for 20 minutes.
- Remove the yams from the oven, and add the marshmallows on top.
- Place the yams back into the oven for 5-7 minutes

- Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.

- 1 In a large pot, bring 8 Quarts of water (or more) to a boil. 2 Drop in yams for about 20 minutes until soft to fork (but not squishy). 3 Take yams out and let cool. 4 Peel yams (can keep skins to make sea salt yam chips). 5 Once peeled, cut the yams in 1/2 lengthwise and 1/2 again lengthwise (so you will have quarters). 6 Cut yams into 1-inch slices. 7 Put yams in a 9"x13" greased baking dish and set aside. 8 In a medium saucepan, melt vegan butter over medium high heat. 9 Add brown sugar, cinnamon, salt and nutmeg and 1/2 cup water. 10 Whisk together and reduce heat to low once boiling. 11 Allow sauce to thicken and cook down for about 10 minutes. 12 Pour sauce over the yams in the baking dish. 13 Mix well to make sure all the yams are nicely covered with the sauce. 14 Bake for 25 minutes at 350 F. - Peel sweet potatoes and rinse clean. Slice potatoes to 1/2 inch thick slices. Try to keep them roughly the same thickness so they cook evenly.
- In a medium bowl, combine brown sugar, melted butter, maple syrup, ground cinnamon, vanilla extract and salt. Whisk until smooth. If the mixture is very thick, pop in the microwave for 30 seconds to loosen it up.
- Transfer sliced sweet potatoes to the prepared baking dish and spread evenly.
- Drizzle the brown sugar mixture over the top of the sweet potatoes and toss to combine. You want each piece of sweet potato coated in the mixture.
- Cover the baking dish with foil and bake for 20 minutes. Remove foil and gently stir. Bake for another 15 minutes (no foil) and again, gently stir. Check to see how tender the sweet potatoes are at this point. Bake for another 5 to 15 minutes, depending on the size and thickness of your potatoes. Make sure they are tender (but not falling apart) before removing.

I experienced my first real Thanksgiving after Lulu and I got married. I say real because I had my very first Thanksgiving meal in July 1998. I know it sounds weird... As a child, I used to go to the US for the summer. Every summer, I'd be hosted by an American family through an agency. It was always a very neat experience. It offered me the opportunity to experience the culture and customs of America while sharing my own culture and customs with the host family. When I met Reneé and Steve in the summer of 1998, they asked me to cook a typical French meal for them. I made a roasted leg of lamb and crunchy oven roasted potatoes. The next day, Reneé surprised me with a full Thanksgiving feast with all the fixings. I have very fond memories of my time at Reneé and Steve's in Williamsburg, Virginia. They even attended our wedding. One of the dishes that really stood out was the candied yams. I had not eaten yams (or sweet potatoes, to be more accurate) in France, and this was my first experience with them. The yams were sweet and creamy, and the marshmallow topping was a nice touch. I now make candied yams with my little sisters-in-law each Thanksgiving. It's a fun recipe for them to make because it's easy and also because they love to eat it. - Preheat the oven to 350°F.
- Sweetening: In a bowl, combine the butter, sugar, 1/2 cup of corn syrup, salt, cinnamon extract, nutmeg, lemon juice and apple cider. Reserve about 2 tablespoons.
- Steaming the yams: Peel the yams and dice them into 1-1/2-inch pieces. It's preferable not to cut them too small as they might fall apart. Fill a pot with cold water until it barely touches the steamer level. It's important to start with cold water so the yams cook evenly. Place the yams in the steamer, bring to a boil and reduce the heat to medium-high. Steam for about 8-10 minutes. The yams should be fork-tender but still firm. Remove from the steamer. - Baking yams: Place the yams in individual greased ramekins (or in a large baking dish). Bake for about 20-25 minutes. Toss halfway through the baking process. Drizzle with the remaining tablespoon of corn syrup and the 2 tablespoons of sweet mixture. Cook for another 20 minutes.
- Assembly time: Top the ramekins with mini-marshmallows. Place in the oven for about 2-3 minutes until they begin to melt and are slightly golden.
- Serve immediately.

BLACK FOLKS SOUTHERN CANDIED YAMS
Candied yams are an old-fashioned African-American recipe. A sweet potato soul food side dish cooked to perfection in a cinnamon-brown sugar glaze.

- Wash the sweet potatoes. (I like to use this vegetable scrubber HERE.)
- Peel and cut the sweet potatoes into thick round wedges.
- Then set them aside to soak in a bowl of cool water to prevent browning while you're preparing the candied yams syrup.
- Melt the butter in a medium-sized bowl in the microwave.
- Add the brown sugar, granulated sugar, cinnamon, nutmeg, maple syrup, ginger, ground clove, and vanilla extract to the melted butter.
- Mix the ingredients well to create the syrup glaze for the candied yams.
- Next, Drain the sweet potato rounds in a colander.
- Open the Instant Pot lid and add ½ a cup of water and the sweet potato rounds to the stainless-steel inner pot.
- Pour the syrup glaze over the sweet potatoes.
- Close the Instant Pot lid (make sure the valve is up - in the position for sealing) and pressure cook on high for 5 minutes.
- When the cooking time is finished, allow a natural pressure release for at least 5 minutes.
- To open the Instant Pot lid, move the valve to 'venting' and manually release any remaining pressure, if applicable.
- Optional - Open the Instant Pot lid and sprinkle the miniature marshmallows over the cooked, candied yams.
- With the lid placed not entirely on the Instant Pot (in a resting position, so it doesn't lock back into position on the pot) continue with the setting on 'keep warm.'
- After about 5 minutes, check to see if the marshmallows have melted.
- Once the marshmallows are melted, turn off the Instant Pot and transfer your Black folks' Southern candied yams recipe to a serving dish.
- Serve right away and enjoy!

- Start by preheating your oven to 450 degrees F.
- Next, toss and coat the cut sweet potatoes in vegetable oil then transfer them evenly on a baking sheet.
- Now, you want to place them in the oven and allow them to bake for about 30 minutes or until tender soft and caramelized.
- Make sure to keep an eye on your yams as they are baking, as you want to take them out of the oven as soon as they turn all dark to prevent them from burning.
- Place a saucepan over medium-high heat then lightly coat it with cooking spray and add in the butter, brown sugar, corn syrup, and water.
- You want to continue stirring until the sugar will fully dissolve, when it starts to boil reduce the heat and simmer for about 5 minutes.
- When you start seeing a thick and lightly bubbly mixture take off the pan from the heat.
- Finally, when your yams are ready, pour the sauce and evenly coat before serving.
