2 teaspoons cornstarch
2/3 cup reduced-sodium chicken broth
1/4 cup apple juice
1 tablespoon butter
2 medium apples, thinly sliced
2 green onions, sliced
1 garlic clove, minced
3/4 teaspoon dried thyme
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound pork tenderloin, cut into 1-inch slices

Steps:

  • Preheat broiler. In a small bowl, mix cornstarch, broth and apple juice. In a nonstick skillet, heat butter over medium-high heat. Add apples, green onions and garlic; cook and stir 2-3 minutes or until apples are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Keep warm., Mix thyme, paprika, salt and pepper. Pound pork slices with a meat mallet to 1/2-in. thickness; sprinkle both sides with seasonings., Place pork on a broiler pan. Broil 3 in. from heat 3-4 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with apples.

This is variation of a recipe my mother used to make with my own spin on the seasonings! Also, one of our favorites to enjoy around the holidays!

8 slices bacon
1 tablespoon garlic powder
1 teaspoon seasoned salt
1 teaspoon dried basil
1 teaspoon dried oregano
2 pounds pork tenderloin
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Place the bacon in a large, oven-safe skillet, and cook over medium-high heat, turning occasionally, until lightly browned and still flexible, 6 to 7 minutes. Drain the bacon slices on a paper towel-lined plate. Remove any excess bacon grease from the skillet. Combine garlic powder, seasoning salt, basil, and oregano in a small bowl. Set aside.
  • Wrap the pork tenderloin with the bacon strips securing with 1 or 2 toothpicks per strip of bacon. Slice the tenderloin between each bacon strip to create the medallions. Dip both sides of the medallions in seasoning mix. Melt butter and oil together in the same skillet over medium-high heat. Cook each medallion for 4 minutes on each side.
  • Place skillet into the preheated oven and bake until the pork is no longer pink in the center, 17 to 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

1 pork tenderloin (1 pound)
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/2 teaspoon celery salt
1 tablespoon olive oil
1 large apple, sliced
2/3 cup unsweetened apple juice
3 tablespoons dried tart cherries
1 tablespoon honey
1 tablespoon cider vinegar
1 package (8.8 ounces) ready-to-serve brown rice

Steps:

  • Cut tenderloin crosswise into 12 slices; sprinkle with rosemary, thyme and celery salt. In a large nonstick skillet, heat oil over medium-high heat. Brown pork on both sides; remove from pan., In same skillet, combine apple, apple juice, cherries, honey and vinegar. Bring to a boil, stirring to loosen browned bits from pan. Reduce heat; simmer, uncovered, 3-4 minutes or just until apple is tender., Return pork to pan, turning to coat with sauce; cook, covered, 3-4 minutes or until pork is tender. Meanwhile, prepare rice according to package directions; serve with pork mixture.

1 1½-pound pork tenderloin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
½ cup grainy mustard, such as Grey Poupon
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon white wine vinegar
1 tablespoon light brown sugar
4 cups shredded cabbage
1 apple, grated through medium to large holes on grater
2 tablespoons chopped parsley

Steps:

  • Preheat oven to 400°F.
  • Pat pork dry and season well with salt and pepper. In a bowl, whisk mustard and olive oil together. Using your hands, rub mixture all over pork tenderloin. Let meat sit until it comes to room temperature, at least 20 to 30 minutes.
  • Place pork on a wire rack on a rimmed 36 x 18-inch baking sheet lined with foil. Place in the oven for 15 minutes. Reduce heat to 350°F and cook for another 10 minutes or until meat reaches an internal temperature of 145°F on a meat thermometer. Remove from oven, set aside, and cover with aluminum foil.
  • In a skillet, heat butter, vinegar, and sugar over low heat until the sugar is dissolved. Then turn up the heat to medium-high, add the cabbage and apple, and cook until the cabbage has wilted somewhat, about 10 minutes. Stir in chopped parsley.
  • Remove foil from pork and slice.
  • Spread cabbage on a platter, top with pork slices, and serve.

¼ cup all-purpose flour
1 teaspoon garlic salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
2 pounds pork tenderloin, cut into 1 1/2 inch pieces
2 tablespoons olive oil
⅓ cup balsamic vinegar
½ cup chicken broth
2 teaspoons minced lemon zest, or to taste
1 tablespoon capers, or to taste

Steps:

  • Place the flour, garlic salt, and pepper into a plastic bag. Shake to mix, the add the pork tenderloin pieces, and shake again to coat. Shake off the excess flour.
  • Heat the oil in a large skillet over medium-high heat. Cook the pork medallions in the hot oil until golden-brown on both sides, 2 to 3 minutes per side. Pour in the balsamic vinegar and chicken broth. Bring to a boil, then reduce heat to medium, and simmer until the pork is no longer pink in the center, 3 to 4 minutes. Remove the pork to a serving platter, then stir the lemon zest and capers into the simmering sauce. Continue simmering until the sauce has thickened to your desired consistency.

1 pound pork tenderloin, cut into 1-inch-thick pieces
1 cup Kellog's® corn flake crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon vegetable oil
3 slices bacon, cut into 1-inch pieces
2 tablespoons honey
1 tablespoon cider vinegar
1/4 teaspoon caraway seeds
1 medium cooking apple, cored and chopped (about 1 1/4 cups)
1/4 cup chopped onion
4 cups packaged coleslaw mix

Steps:

  • 1. Place each piece of pork between two pieces of plastic wrap. Use flat side of meat mallet to lightly pound until 1/4-inch thick. In shallow dish combine KELLOGG'S CORN FLAKE Crumbs, salt and pepper. Press pork pieces into crumb mixture, lightly coating both sides.2. In very large nonstick skillet (12 inch) cook pork pieces in hot oil over medium heat for 4 minutes or until golden brown, turning once. Remove from skillet. Loosely cover with foil to keep warm.3. Use paper towel to carefully wipe crumbs out of skillet. In same skillet cook and stir bacon pieces until crisp. Remove bacon, reserving 1 tablespoon drippings in skillet. Discard remaining drippings. Drain bacon pieces on paper towels. Set aside.4. In small bowl stir together honey, vinegar and caraway seeds. Set aside.5. Add apple and onion to drippings in skillet. Cook and stir over medium heat about 3 minutes or until softened. Stir in honey mixture. Heat through. Toss with coleslaw mix and bacon pieces.6. Spoon coleslaw mixture onto serving platter. Top with pork pieces.
