SLOW COOKER PORK CASSEROLE

Slow cooker pork casserole image

Cosy up on cold nights with our comforting slow cooker pork casserole. Chopped apples would make a great addition - add them in the final hour of cooking

Provided by Cassie Best

Categories     Dinner, Main course, Supper

Time 8h15m

Number Of Ingredients 11

1 tbsp vegetable or rapeseed oil
4 pork shoulder steaks (about 750g), cut into large chunks
1 onion, chopped
1 leek, chopped
1 carrot, chopped
bundle of woody herbs (bouquet garni) - we used 2 bay leaves, 3 sage leaves and 4 thyme sprigs, plus a few thyme leaves to serve
1 chicken stock cube
2 tsp Dijon mustard
1 tbsp cider vinegar
2 tsp cornflour
1 tbsp honey

Steps:

  • Heat your slow cooker. Drizzle the oil in a wide frying pan over a high heat. Season the pork, then add to the hot pan. Avoid overcrowding the meat - you may want to do this in batches. Cook until deep brown all over, then transfer to the slow cooker. Add the onion and leeks to the frying pan and cook for a few mins, until they soften. Add a splash of water and scrape any tasty bits from the bottom, then tip everything into the slow cooker. Add the carrot, herbs, stock cube, mustard and vinegar, season, then add enough water to just cover the ingredients. Stir, then set your slow cooker on low for 6-8 hrs, or high for 5-6 hrs.
  • In a saucepan, mix the cornflour and honey with 1-2 tsp of liquid from the slow cooker, until you have a smooth paste. Add 100ml more liquid, bring to a simmer until thickened, then stir back into the casserole. Serve with mash or dumplings, scattered with thyme leaves.

FILIPINO ADOBO (PORK OR CHICKEN) WITH SLOW COOKER VARIATION

Filipino Adobo (Pork or Chicken) With Slow Cooker Variation image

For about 20 years this recipe was just a lovely memory. When DH was in grad school one of his professors invited the entire class and their families to enjoy a Filipino meal prepared by his wife, Priscilla. She fed about 50 of us seated on the floor in front of long rolls of paper! 20 years later, that professor is no longer at this school but my husband and his son-in-law now teach here. Rachel, Priscilla's daughter, shared her Mom's recipe with me. She has added slow cooker instructions to fit her busy lifestyle but it is still the same great flavor that her mom prepared for us over 20 years ago. Thanks Priscilla and Rachel!! **NOTES** - Cooking time 2 hours stove or 6 hours slow cooker. - Slow Cookers vary in cooking times - adjust according to your appliance. - Freezer instructions courtesy of Erindipity.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 10

3 -4 lbs pork (cut in 2-inch cubes) or 3 -4 lbs chicken (cut into serving pieces)
1/2 cup vinegar
1/2 cup soy sauce
1 cup water
2 -3 bay leaves, crumbled
2 teaspoons peppercorns (whole)
4 garlic cloves, crushed
1 medium onion, chopped
3/4 teaspoon ground pepper
2 teaspoons salt (optional, I do not put it in, it is what the original cook uses)

Steps:

  • Note: The original recipe just called for vinegar. I use Apple Cider Vinegar - just use what you have. Some reviewers have used rice vinegar and been pleased. Rice vinegar seems to have a touch of sweetness. Do what pleases you - experiment and have fun in the kitchen.
  • Stove top instructions.
  • Combine all of the ingredients in a large pot. (The women who shared the recipe with me put the spices into the pot freely. Reviewer Felina suggested tying the spices into a cheesecloth to so that you get the flavor but don't bite into the peppercorns while you eat the dish - a stainless tea ball works too. Do whichever please you).
  • Allow everything sit at room temperature for at least 15 minutes.
  • Bring to a boil then reduce heat to low; simmer for 1 1/2 - 2 hours (leave lid slightly ajar).
  • Remove lid and cook 10 minutes more.
  • Serve with rice.
  • Slow Cooker instructions.
  • Combine all of the ingredients in a slow cooker. (The women who shared the recipe with me put the spices into the pot freely. Reviewer Felina suggested tying the spices into a cheesecloth to so that you get the flavor but don't bite into the peppercorns while you eat the dish - a stainless tea ball works too. Do whichever please you).
  • Allow meat to sit at room temperature for at least 15 minutes.
  • Cook on high for 3 hours or on low for 6 hours until pork or chicken is done (time depends on your slow cooker).
  • Serve with rice.
  • (Freezer instructions courtesy of Erindipity).
  • To freeze: Combine all ingredients in a ziptop bag. Freeze.
  • To serve: Thaw overnight in the refridgerator. Allow to sit at room temperature for 15 minutes; cook as directed.

Slow Cooker Ham Hock Recipe image

Enjoy an aromatic pork knuckle with our Slow Cooker Ham Hock Recipe! Its tender meat and rich, smoky taste will surely be worth the long wait.

Provided by Recipes.net Team

Categories     Slow Cooked

Time 10h10m

Yield 2

Number Of Ingredients 12

2 lb ham hocks
6 cups chicken stock
8 oz large dice celery
5½ oz or red onions, large dice yellow onions
4 oz large dice carrots
3 cloves minced garlic cloves
5 tbsp yellow mustard
5 tbsp honey
to taste salt and ground black pepper
3 oz per serving sweet potatoes
3 oz per serving coleslaw
1 tbsp chopped parsley

Steps:

  • Combine all ingredients in your slow cooker.
  • Cover pot and cook on low heat for 8 to 10 hours until desired tenderness is achieved. To know if it's tender enough, check if the meat already starts falling off the bone.
  • Once cooked, drain the ham hock and allow it to cool down briefly.
  • Drain the liquid and discard the rest. Season the liquid to taste with salt and pepper.
  • Once the ham hock has briefly cooled down, debone and peel off its fatty skin. Portion the meat accordingly.
  • Serve with a side of coleslaw and sweet potatoes or along with the liquid and bread on the side. Enjoy!

HOW TO COOK THE HOCK OF PORK - LIVESTRONG.COM

From livestrong.com
  • Add roughly chopped vegetables including onions, potatoes and celery. The vegetables will help season the hock and the broth. Start with two onions, one pound of potatoes and a complete celery bunch, approximately eight stalks, with the upper leafy half removed.
  • Add pepper and fresh herbs including thyme, rosemary and bay leaves, to taste. If you don't have fresh herbs, use dried herbs at a ratio of one to three; one serving of dry herbs for every three of fresh.
  • Fill your pot containing hock, vegetables and herbs with water until all ingredients are covered with at least an inch of water.
  • Bring to a low simmer and cook for two to three hours. Longer cooking times will result in more tender meat on the hock and a richer broth.
  • Strain the broth from the hock and vegetables using a colander and store it for use as stock for soup. Pork hock stock is preferred for use in split pea soups, with bits of ham from the hock mixed in to the final product.
  • Carve or pull cooked bits of meat off the ham hock and serve with cooked vegetables, or use as an addition to soup made from the pork stock. You can eat the vegetables made with the stock, but they will lack most of their texture.

10 SLOW COOKER PORK RECIPES | FOOD FOR NET
Making pork hocks in the slow cooker is a logical approach anyway – as the idea is to make the meat tender while keeping the skin intact. Doing so is much easier if you are cooking the meat slowly without moving it around much. As a side effect, this also results in a recipe that involves almost no prep work, aside from marinating the meat (which is optional).
