SMOKED PAPRIKA GOULASH FOR THE SLOW COOKER



Smoked Paprika Goulash for the Slow Cooker image

This is a very rich and flavorful beef dish with a thick, red, smoky tasting sauce. Great for making a day ahead and reheating. Instead of noodles, you can serve over rice or potatoes.

1 tablespoon vegetable oil
3 onions, sliced
3 cloves garlic, chopped
¼ cup smoked Spanish paprika
2 teaspoons kosher salt
1 teaspoon coarsely ground black pepper
3 pounds lean beef stew meat, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
1 ½ cups water
1 (6 ounce) can tomato paste
1 (10 ounce) package egg noodles
½ cup sour cream
8 sprigs fresh parsley

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook and stir onions until they soften and begin to brown at the edges, 8 to 10 minutes. Add the garlic and cook for one minute. Transfer mixture to a slow cooker. Cover and set cooker to Low.
  • Mix together paprika, salt, and pepper in a large bowl. Toss the meat cubes in the paprika mixture until evenly coated.
  • Heat one tablespoon of the oil in the skillet over medium-high heat. Put a third of the beef cubes into the skillet and cook until nicely browned on all sides. Transfer to the slow cooker. Pour 2 tablespoons of water into the skillet and scrape the browned bits from the pan; pour liquid into the slow cooker. This prevents the paprika from burning when you brown the next batches of beef. Add another tablespoon of oil to the skillet and cook the next batch the same way; repeat for the third batch.
  • Stir the tomato paste and the rest of the water into the slow cooker; cover. Cook on High for 4 to 5 hours (or on Low for 6 to 9 hours).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles, and cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain.
  • Serve goulash over noodles with a dollop of sour cream and a sprig of parsley.

2 tbsp olive oil
1.5 kg pork tenderloin, cut into strips
2 red onions, cut into thin wedges
4 cloves garlic, crushed
1 tbsp paprika
500ml beef stock
2 x 400g tinned chopped tomatoes
1 tbsp sugar
3 peppers, chopped
250g self-raising flour
140g holsum cooking fat, shredded or grated
1 1/2 tsp baking powder
small bunch oregano, chopped

Steps:

  • Heat half the oil in a large frying pan and fry the pork for 5 minutes or until browned. Remove and set aside. Use the remaining oil to fry the onions for 8-10 minutes or until soft and starting to brown. Add the garlic and paprika and fry for another 2 minutes.
  • Return the pork to the pan and pour in the stock, tomatoes and sugar. Bring to the boil, then turn down and simmer for 20-30 minutes until the sauce has thickened.
  • For the dumplings, combine all the ingredients, except for the oregano, with enough cold water to make a scone-like dough. Roll into approximately 30 walnut-sized balls.
  • Stir the peppers into the goulash. Tuck in the dumplings and cover the pan with a lid and cook for another 25-30 minutes until the dumplings are puffed up.
  • Serve scattered with oregano.

Steps:

  • In a skillet over medium heat, brown the ground beef with the onion. Drain off the excess grease and add to a 6 quart slow cooker.
  • Add in bell pepper, Italian Seasoning, salt, pepper, garlic, tomatoes, and broth. Stir to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4.
  • 15 minutes before serving stir in the pasta. It will look very watery but don't worry the pasta will soak it up. Cover and cook for 15 minutes until the desired tenderness is reached.
  • Serve immediately.

2 lbs beef stew meat (cut into 1 inch cubes)
1 large onion (sliced)
1 clove garlic (minced)
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons salt
1/2 teaspoon dry mustard
2 teaspoons paprika
1 cup water
1/4 cup flour

Steps:

  • Put your meat in your 4-quart slow cooker (I used Mr. Big, my 4-quart Crock Pot)
  • Place your onion slices on top of your meat
  • Mix together your garlic, ketchup, Worcestershire sauce, brown sugar, salt, mustard and paprika until well combined
  • Add your water to you mixture, stirring gently until completely combined
  • Pour your mixture over your meat and onions
  • Cover and cook on low for 9-10 hours
  • Mix together your flour with a small amount of water and stir into your crock pot
  • Cook on high for 10-15 minutes so the liquid will slightly thicken
  • Serve over rice or noodles

Steps:

  • Season beef and sear over high heat in a frying pan to brown all sides.
  • Transfer meat (and any juices) to the slow cooker.
  • Add sliced onions, garlic, paprika, tomato paste and beef stock.
  • Cook on low for 5 - 6 hours.
  • About one hour before serving, mix the flour and butter in a frying pan and saute the mixture for 2 minutes, just to cook out the raw taste of the flour.
  • Add to the slow cooker, give it a stir, cover and continue cooking for the remaining time.
  • Serve on top of hot buttered egg noodles.
  • Can garnish with a dollop of sour cream if you desire.

Steps:

  • In a medium skillet on the stove top cook the ground beef, onion and garlic until the ground beef is cooked through and crumbled. Drain off the excess cooking fat.
  • Add the cooked ground beef, onion and garlic mixture to the bottom of a 6.5 quart or larger slow cooker. Add the marinara sauce, corn, diced tomatoes with green chilies and Italian seasoning.
  • Give everything a quick stir and cover and cook for 6 hours on LOW or 3 hours on HIGH.
  • About 30 minutes before the end of the cooking time (or before you are ready to serve) bring a large pot of water to boil on the stove top and cook the macaroni pasta according to the package directions until they are al dente (about 7 minutes). POT-ROAST PORK GOULASH WITH POTATOES & GREENS

2 tbsp olive oil
1.5kg-2kg pork shoulder , boned and rolled
2 onions , sliced
2 tbsp smoked paprika
1 tsp caraway seeds
1 red chilli , finely chopped
400g can chopped tomato
1 red pepper , deseeded and cut into wedges
1 ½kg potato , cut into quarters
1 green cabbage , finely sliced
soured cream , to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. Heat 1 tbsp oil in a large, deep casserole with a lid. Brown the pork all over (this will take about 10 mins), set aside, then pour away any excess fat. Put the onions in the pan and cook for 5 mins until softened. Stir in the paprika, caraway and chilli and cook for 30 secs. Pour over the tomatoes, add the pepper, then top up with 400ml of water. Cover tightly with a lid, then cook for 3 hrs. Uncover the pan and cook for 30 mins more until tender.
  • Boil the potatoes for 15 mins until tender. Mash 300g, cool, cover and keep in the fridge for Monday's fish cakes. Now stir the remaining potatoes into the casserole and leave to cook for 5 mins. If your sauce is a little watery, remove the meat and boil the sauce hard for 5 mins to thicken.
  • Heat 1 tbsp oil in a large pan. Tip in the cabbage and cook for 1 min. Pour over 3 tbsp water, cover and leave to cook for 10 mins until soft. Slice the meat, serve with sauce, potatoes and cabbage and spoon over some soured cream. Save about 500g of the pork to use in Mexican pork wraps (see 'Goes well with').

1 tablespoon Hungarian paprika or Spanish paprika
1 teaspoon caraway seeds, crushed

2 stalks celery, thinly sliced (1 cup)
2 medium carrots, thinly sliced (1 cup)

1 (14.5 ounce) can no-salt-added diced tomatoes, undrained
½ cup water
4 ounces dried wide whole-grain noodles (2 cups dried)
6 tablespoons light sour cream
1 pinch Paprika

Steps:

  • Trim fat from roast. Cut roast into 2-inch cubes. In a large bowl combine paprika, caraway seeds, garlic powder, pepper and salt. Add pork cubes and toss to coat. In a large skillet cook pork, half at a time, in hot oil over medium heat until browned, turning occasionally. Transfer pork to a 3 1/2- or 4-quart slow cooker (see Tip). Add celery, carrots, parsnips, onion and tomatoes. Pour the water over all in cooker.
  • Cover and cook on low-heat setting for 5 to 6 hours or on high-heat setting for 2 1/2 to 3 hours.
  • If using low-heat setting, turn to high-heat setting. Stir noodles into pork mixture in cooker. Cover and cook on high-heat setting for 30 minutes more or until noodles are tender, stirring once halfway through cooking. Top each serving with 1 tablespoon sour cream. If desired, sprinkle each serving with paprika.

2 tablespoons olive oil
2 large yellow onions, chopped
3 lbs stewed beef in ½ inch cubes
4 to 6 tablespoons Hungarian paprika (fresh is best)
1 tablespoon tomato paste
2 cloves of garlic, minced
3 tablespoons Wondra flour
Water to cover
Salt and pepper to taste

Steps:

  • Warm the oil in a large pot on medium heat. Add the onion and garlic. Add the beef and allow it to brown on the outside.
  • Top with paprika and stir till meat is covered. Add Wondra flour and tomato paste just until the juice is soaked up then add water to cover meat with some extra. Make sure to mix the flour in well to remove all lumps.
  • Add in salt and pepper. Bring to a boil, then cover and simmer on low for about two hours. The sauce will gradually thicken and meat will become tender and fall apart. Once the sauce is thick and meat is tender it is ready to serve.

1/2 lb green beans, trimmed & cut into 1" pieces
1/2 cup reduced fat sour cream

CZECH PORK GOULASH RECIPE

This is a simple recipe for a delicious Czech-style pork goulash. It tastes best made with pork shoulder, slightly spicy thanks to sweet paprika and caraway seeds. The goulash comes together in under an hour and a half and pairs great with pasta.

1 and 1/2 pounds pork shoulder ((675 g) whole)
1 Tablespoon tomato paste
3 onions
1/4 teaspoon black pepper ground
1 Tablespoon sweet paprika ground
1 teaspoon caraway seeds
3 cloves of garlic
1 and 1/2 teaspoons salt
1 and 1/2 Tablespoons pork lard (or table oil, such as sunflower or Canola)
1 Tablespoon all-purpose flour
water (to cover the pork)

Steps:

  • Cut the pork into 1 inch (2-3 cm) cubes-season with salt and pepper.
  • Peel and finely chop the onion. Crush or press the garlic cloves.
  • Heat the lard in a broader, higher-sided pan and fry the meat in it. If it releases its juices, it's okay. Let it simmer and wait until the meat cubes get a golden crust on all sides. Do not forget to stir the meat. Remove the roasted pork from the pan and set it aside.
  • In the same fat, fry the onion over medium heat. If the onions tend to stick to the bottom of the pan, baste them with a tablespoon of water. The onions should be sautéed within five minutes.
  • Return the meat to the fried onions, add the caraway seeds, crushed garlic, ground paprika, and tomato paste. Stir and sauté for a minute (do not stop stirring).
  • Cover with water until the meat is about ¾ submerged. Bring to a boil, then turn the heat down to a minimum. Cover with a lid and simmer for just under an hour. The meat should be almost tender - test with a fork.
  • Add water to the pan so that the meat is almost submerged. Stir, bring to a boil. Dust the surface of the goulash with all-purpose flour using a sieve. Do not stir! Cover with a lid and let the flour steam inside the pot over low heat for 15 minutes. Then turn the heat down to low again.
  • Remove the lid, stir the goulash and add salt to taste. And we are done!

Number Of Ingredients 11

1 3/4 pounds boneless pork loin roast, cut into 1/2" pieces
3 parsnips, peeled & cut into 1/2" coins
2 large carrots, peeled & cut into 1/2" coins
1 large onion, chopped
4 Tbsp sweet paprika, divided
2 cups chicken broth
1/2 lb green beans, trimmed & cut into 1" pieces
1/2 cup reduced fat sour cream
2 Tbsp corn starch
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Place pork, parsnips, carrots & onion in the slow cooker. Sprinkle with 2 Tbsp paprika. Stir to coat. Pour in broth. Cover & cook on high for 3 hours or on low for 4 1/2 hours.
  • Add green beans & cook for 30 minutes.
  • In a small bowl, blend remaining 2 Tbsp paprika, sour cream, cornstarch, salt & pepper. Stir into slow cooker bowl until thickened.

  • Add chopped yellow onion to the pot. Cook, stirring, until softened, for about 4-5 minutes. Stir in carrots. Pour in reserved broth mixture and stir well. Return the meat and any accumulated juices to the cooker, then stir well to coat the pieces in the sauce.
  • Close pressure cooker and lock the lid. Set burner heat to high pressure.
