SMOKED PAPRIKA GOULASH FOR THE SLOW COOKER
This is a very rich and flavorful beef dish with a thick, red, smoky tasting sauce. Great for making a day ahead and reheating. Instead of noodles, you can serve over rice or potatoes.

- Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook and stir onions until they soften and begin to brown at the edges, 8 to 10 minutes. Add the garlic and cook for one minute. Transfer mixture to a slow cooker. Cover and set cooker to Low.
- Mix together paprika, salt, and pepper in a large bowl. Toss the meat cubes in the paprika mixture until evenly coated.
- Heat one tablespoon of the oil in the skillet over medium-high heat. Put a third of the beef cubes into the skillet and cook until nicely browned on all sides. Transfer to the slow cooker. Pour 2 tablespoons of water into the skillet and scrape the browned bits from the pan; pour liquid into the slow cooker. This prevents the paprika from burning when you brown the next batches of beef. Add another tablespoon of oil to the skillet and cook the next batch the same way; repeat for the third batch.
- Stir the tomato paste and the rest of the water into the slow cooker; cover. Cook on High for 4 to 5 hours (or on Low for 6 to 9 hours).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles, and cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain.
- Serve goulash over noodles with a dollop of sour cream and a sprig of parsley.

- Heat half the oil in a large frying pan and fry the pork for 5 minutes or until browned. Remove and set aside. Use the remaining oil to fry the onions for 8-10 minutes or until soft and starting to brown. Add the garlic and paprika and fry for another 2 minutes.
- Return the pork to the pan and pour in the stock, tomatoes and sugar. Bring to the boil, then turn down and simmer for 20-30 minutes until the sauce has thickened.
- For the dumplings, combine all the ingredients, except for the oregano, with enough cold water to make a scone-like dough. Roll into approximately 30 walnut-sized balls.
- Stir the peppers into the goulash. Tuck in the dumplings and cover the pan with a lid and cook for another 25-30 minutes until the dumplings are puffed up.
- Serve scattered with oregano.

- Put your meat in your 4-quart slow cooker (I used Mr. Big, my 4-quart Crock Pot)
- Place your onion slices on top of your meat
- Mix together your garlic, ketchup, Worcestershire sauce, brown sugar, salt, mustard and paprika until well combined
- Add your water to you mixture, stirring gently until completely combined
- Pour your mixture over your meat and onions
- Cover and cook on low for 9-10 hours
- Mix together your flour with a small amount of water and stir into your crock pot

- In a medium skillet on the stove top cook the ground beef, onion and garlic until the ground beef is cooked through and crumbled. Drain off the excess cooking fat.
- Add the cooked ground beef, onion and garlic mixture to the bottom of a 6.5 quart or larger slow cooker. Add the marinara sauce, corn, diced tomatoes with green chilies and Italian seasoning.

- Heat oven to 160C/140C fan/gas 3. Heat 1 tbsp oil in a large, deep casserole with a lid. Brown the pork all over (this will take about 10 mins), set aside, then pour away any excess fat. Put the onions in the pan and cook for 5 mins until softened. Stir in the paprika, caraway and chilli and cook for 30 secs. Pour over the tomatoes, add the pepper, then top up with 400ml of water. Cover tightly with a lid, then cook for 3 hrs. Uncover the pan and cook for 30 mins more until tender.
- Boil the potatoes for 15 mins until tender. Mash 300g, cool, cover and keep in the fridge for Monday's fish cakes. Now stir the remaining potatoes into the casserole and leave to cook for 5 mins. If your sauce is a little watery, remove the meat and boil the sauce hard for 5 mins to thicken.
- Heat 1 tbsp oil in a large pan. Tip in the cabbage and cook for 1 min. Pour over 3 tbsp water, cover and leave to cook for 10 mins until soft. Slice the meat, serve with sauce, potatoes and cabbage and spoon over some soured cream. Save about 500g of the pork to use in Mexican pork wraps (see 'Goes well with').

- Trim fat from roast. Cut roast into 2-inch cubes. In a large bowl combine paprika, caraway seeds, garlic powder, pepper and salt. Add pork cubes and toss to coat. CZECH GOULASH - CESKY GULAS

- Warm the oil in a large pot on medium heat. Add the onion and garlic. Add the beef and allow it to brown on the outside.
- Top with paprika and stir till meat is covered. Add Wondra flour and tomato paste just until the juice is soaked up then add water to cover meat with some extra. Make sure to mix the flour in well to remove all lumps.

CZECH PORK GOULASH RECIPE
This is a simple recipe for a delicious Czech-style pork goulash. It tastes best made with pork shoulder, slightly spicy thanks to sweet paprika and caraway seeds. The goulash comes together in under an hour and a half and pairs great with pasta.

- Cut the pork into 1 inch (2-3 cm) cubes-season with salt and pepper.
- Peel and finely chop the onion. Crush or press the garlic cloves.
- Heat the lard in a broader, higher-sided pan and fry the meat in it. If it releases its juices, it's okay. Let it simmer and wait until the meat cubes get a golden crust on all sides. Do not forget to stir the meat. Remove the roasted pork from the pan and set it aside.
- In the same fat, fry the onion over medium heat. If the onions tend to stick to the bottom of the pan, baste them with a tablespoon of water. The onions should be sautéed within five minutes.
- Return the meat to the fried onions, add the caraway seeds, crushed garlic, ground paprika, and tomato paste. Stir and sauté for a minute (do not stop stirring).
- Cover with water until the meat is about ¾ submerged. Bring to a boil, then turn the heat down to a minimum. Cover with a lid and simmer for just under an hour. The meat should be almost tender - test with a fork.
- Add water to the pan so that the meat is almost submerged. Stir, bring to a boil. Dust the surface of the goulash with all-purpose flour using a sieve. Do not stir! Cover with a lid and let the flour steam inside the pot over low heat for 15 minutes. Then turn the heat down to low again.
- Remove the lid, stir the goulash and add salt to taste. And we are done!
