1 tablespoon vegetable oil
2 tablespoons fresh lime juice
1 teaspoon soy sauce
1 teaspoon peeled and grated fresh ginger
Coarse salt and freshly ground pepper
4 ounces thinly sliced cooked chicken breast, (1 cup)
1/2 red bell pepper, (ribs and seeds removed), thinly sliced lengthwise into 2-inch strips
2 ounces snow peas, ends trimmed, thinly sliced lengthwise (1/2 cup)
1 medium carrot, thinly sliced crosswise

Steps:

  • In a small bowl, combine oil, lime juice, soy sauce, and ginger; season with salt and pepper. Transfer to a small airtight container; set aside.
  • Combine chicken, bell pepper, snow peas, and carrot in a separate airtight container.
  • Refrigerate chicken salad and dressing separately until ready to serve, up to overnight. Just before serving, toss salad with dressing.

1 package (12 ounces) tricolor spiral pasta
2 cups cubed part-skim mozzarella cheese
2 cups cubed cooked chicken
1 large green pepper, chopped
1 large sweet red pepper, chopped
1 cup sliced fresh mushrooms
2 cans (2-1/4 ounces each) sliced ripe olives, drained
6 green onions, sliced
1 package (3-1/2 ounces) sliced pepperoni, halved
1/2 cup canola oil
1/3 cup red wine vinegar
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain well. In a large serving bowl, combine the cheese, chicken, peppers, mushrooms, olives, green onions, pepperoni and pasta. , In a small bowl, whisk together the remaining ingredients. Pour over salad; toss to coat. Cover and refrigerate until serving. Toss before serving.

400g can black beans , drained and rinsed
1 avocado , cut into chunks
200g cherry tomatoes , halved
4 spring onions , roughly chopped
100g feta cheese , crumbled
lime wedges, to serve (optional)
1 tsp ground cumin
1 tbsp chipotle Tabasco sauce (use regular Tabasco if you can't find this)
juice and zest 2 limes
1 tbsp sherry vinegar
2 tbsp extra-virgin olive oil

  • Boil the corn for 10 mins in salted water, rinse in cold water, then cut the kernels off. Tip the beans into a bowl with the cooked corn, avocado, tomatoes and spring onions.
