A swipe of Dijonnaise with honey and cilantro is all you need for juicy and flavorful salmon.

2 tablespoons Dijon mustard
1 tablespoon light mayonnaise
2 teaspoons honey
2 tablespoons finely chopped fresh cilantro
Four 5-ounce skinless center-cut salmon fillets
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Mix together the mustard, mayonnaise, honey and 1 tablespoon of the cilantro in a small bowl. Put the salmon fillets on the prepared baking sheet and sprinkle with 1/4 teaspoon each salt and pepper. Spread some of the mustard mixture evenly over each fillet.
  • Bake until just cooked through, 10 to 12 minute. Sprinkle with the remaining 1 tablespoon cilantro and serve.

4 salmon fillets ((about 1.5 pounds or 700 grams))
1/4 cup honey
1/4 cup lemon juice
3 tablespoons olive oil
1/2 teaspoon dried thyme
2 tablespoons butter
sea salt and pepper, to taste

Steps:

  • Combine honey, lemon juice, olive oil, and thyme in a large zip lock bag. Add salmon and marinate 4-6 hours in the refrigerator.
  • Remove salmon from marinade and place on a buttered or parchment lined baking sheet. Sprinkle with salt and pepper. Roast salmon at 400°F (200°C) for 10-12 minutes.
  • While salmon is cooking, put marinade in a small saucepan and simmer for about 5 minutes or until thickened. Add butter and stir until butter is melted.
  • Drizzle the sauce over the salmon and serve immediately. Enjoy!

3 medium jalapeños, thinly sliced crosswise into rings
2 tablespoons apple cider vinegar or rice wine vinegar

Steps:

  • Heat the oven to 400 degrees. While the oven heats, combine the honey, jalapeños, vinegar and soy sauce in a small saucepan. Bring to a boil, then turn the heat to low and simmer for 10 minutes. Set aside.
  • Pat the salmon fillets dry using paper towels. Brush a 9-by-9-inch baking pan (or other similar-size baking pan or dish) with olive oil, then place the fillets in the pan, arranging them evenly without crowding. Brush the fillets generously with olive oil and sprinkle with salt. Pour the glaze and jalapeños over the salmon, spooning some of the glaze onto the fish as it collects in the bottom of the pan.
  • Roast the salmon for 6 minutes, then baste with the glaze. Return to the oven and roast until the salmon is cooked through but still slightly rare in the center, another 6 to 8 minutes.
  • Spoon the glaze in the pan over the salmon, then squeeze the lime over the salmon, and sprinkle with salt and cilantro, if using. Serve hot with rice on the side, pouring any glaze that remains in the pan over the rice.

Four 6-ounce portions skin-on salmon fillets
1/4 cup honey
Zest and juice of 1 lime
1 tablespoon light brown sugar

Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

Steps:

  • Place the salmon fillet or steaks skin-side down on the prepared baking sheet.
  • Stir together the sauce ingredients and spoon or spread the mixture over the salmon.
  • Use either the lime zest or the fresh thyme.
  • Bake for 11-12 minutes per inch, until the fish flakes with a fork.
