This Pork Giniling recipe is made by simmering ground pork and vegetables in a delicious tomato sauce made more flavorful with butter and cheese! It is a popular Filipino comfort food that is hearty, economical, and so easy to make!

1 tablespoon oil
3 cloves garlic (minced)
1 medium onion (diced)
3-5 tablespoon tomato sauce
1 -2 tablespoon tomato paste
500 grams ground pork
1 1/2 tablespoon soy sauce
1 tablespoon calamansi juice (or lime juice)
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup water
1/2 cup butter
1 medium carrot
1 medium potato
1 medium red bell pepper
1/2 - 1 cup grated cheese
1 cup green peas
6 pieces hard-boiled eggs

Steps:

  • Saute garlic and onion in a pan over medium heat until limp and aromatic. Add the tomato sauce and tomato paste. Cook until the oil starts to separate from the sauce.
  • Add the ground pork and cook until meat is lightly brown. Add water and simmer for 10 minutes.
  • Add soy sauce, calamansi juice, salt, and pepper. Cook for 10 minutes. Add butter and cover pan with lid. Let it simmer for 5 minutes.
  • Add carrots, potatoes, and bell pepper. Cover the pan with lid and simmer for 5 more minutes or until vegetables are cooked.
  • Add grated cheese and mix until completely melted. Add green peas and cook for another minute then put in hard-boiled eggs and mix.
  • Transfer to a deep serving dish and serve with rice.

500 grams ground pork (washed and drain excess water)
1 large potato (diced)
1 medium carrot (diced)
1 pc pork broth cube
8 ounces tomato sauce
2 cloves garlic (chopped)
1 onion (sliced)
salt and pepper (seasoning)
1 tsp sugar
2 tbsp cooking oil
½ cup water
4-5 hard-boiled eggs (peeled, optional)

Steps:

  • Heat oil in a deep pan over medium heat.
  • Fry diced potatoes and carrots until half cooked. Remove from pan and set aside.
  • Using the same pan. Saute garlic until fragrant then add onion and cook until translucent.
  • Put in the ground pork and cook for a few minutes or until light brown in color.
  • Add the pork cube and tomato sauce. Stir some to dissolve the pork cube then add water and bring to boil and simmer for 20 minutes.
  • Add a pinch of salt and pepper and 1 tsp of sugar. Stir to evenly distribute. Taste and adjust seasoning.
  • Let simmer for 2 minutes for flavors to incorporate and remove from heat.
  • Transfer to a serving dish and add peeled boiled eggs and gently fold into the dish.
  • Serve with steamed rice or bread rolls. Bon Appetit!

1 tablespoon canola oil
1 small onion, peeled and finely chopped
2 cloves garlic, peeled and minced
2 pounds ground pork
1 tablespoon fish sauce
3 large Roma tomatoes, chopped
1 1/2 cups water
2 medium potatoes, peeled and cubed
2 large carrots, peeled and cubed
1/2 green bell pepper, seeded and cubed
1/2 red bell pepper, seeded and cubed
1/2 cup raisins
salt and pepper to taste

Steps:

  • In a pan over medium heat, heat oil.
  • Add onions and garlic and cook until softened.
  • Add ground pork and cook, breaking into pieces with the back of a spoon, until lightly browned. Drain any excess grease.
  • Add fish sauce and continue to cook for about 1 to 2 minutes.
  • Add tomatoes and cook, mashing with the back of a spoon, until softened and release juices.
  • Add water and bring to a boil. Lower heat, cover and continue to simmer until meat is tender and fully cooked. Add more water in 1/2 cup increments as necessary to maintain 1 cup of liquid.
  • Add potatoes, carrots, and raisins and cook until liquid is mostly reduced, vegetables are tender, and raisins are softened.
  • Add bell peppers and cook until tender-crisp. Season with salt and pepper to taste. Serve hot.

This is my mom's basic pork giniling (also a variation to her Corn Giniling). The annato powder (or achuete/achiote) can be found in ethnic supermarkets. It adds a mild flavor and a rich color to the dish. Leftover giniling can be used to combine with scrambled eggs to pan-fry and make torta.

4 medium raw potatoes, finely-cubed
1 medium onion, finely-chopped
5 garlic cloves, minced
1/2 red bell pepper, finely-chopped

fresh ground pepper

Steps:

  • In a large pan, saute onion and garlic in oil.
  • Add pork and brown, making sure to separate ground pork thoroughly.
  • Add patis, cover and simmer over medium heat for 10 minutes.
  • Peel and chop the potatoes into small 1/4 inch cubes. Soak chopped potatoes in a large water bath to wash off excess starch.
  • Drain and add potatoes and red bell pepper to pan.
  • Mix and cook for another 10 minutes.
  • Add pepper to taste.

This is a Filipino dish that my mom taught me. It's one of my favorite comfort foods. You can add extra water/broth to make the dish more soupy, so you can pour over it your rice.

4 -5 corn on the cob
1 lb ground pork
1 medium onion, coarsely chopped
5 garlic cloves, minced
1 1/2 tablespoons patis
2 tablespoons olive oil
1 cup chicken broth
1 cup water

Steps:

  • In a large pan, heat oil and saute onion and garlic over medium-high heat.
  • Add ground pork and brown for 2 minutes (separating pork thoroughly).
  • Add patis. Mix and reduce to medium heat.
  • Cover and simmer for 10 minutes.
  • While waiting, cut the corn kernels from the cob into a bowl, making sure to scrape the stripped corn with the back of your knife to get all of the juices.
  • Add corn and simmer for another 2 minutes.
  • Add water and broth and simmer for 15 more minutes.
