- Preheat the oven to 450 degrees F.
- In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
- In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

- Cut pork into 2-in. slices; flatten to 1-1/2-in. thickness. Sprinkle with pepper. In a large skillet over medium heat, cook pork in oil and butter for 5 minutes on each side or until meat is no longer pink. - Place the pork between 2 sheets of greaseproof paper and flatten with a mallet or rolling pin until thin.
- Melt the butter and oil in a large saucepan, add the pork and brown on both sides. Add the pepper and onion and lightly cook for 8-10 minutes, until softened.
- Stir in the flour and coriander and cook for 1 minute. Gradually add the stock and wine, stirring until the sauce thickens, boils and is smooth.
- Season to taste. Simmer gently for 5-10 minutes, until the pork is tender and cooked through.

POT-ROASTED PORK IN WHITE WINE WITH GARLIC, FENNEL, AND ROSEMARY
This pork recipe takes me about 5 minutes to prepare and get in the oven, so it's nice and quick, as well as being unbelievably light, fresh and tasty. Also, pot-roasting the pork as opposed to straight roasting gives you a lovely natural sauce made with the meat juices and the wine.

- Preheat the oven to 400 degrees F (200 degrees C).
- With 2 or 3 bits of string, tie up your pork loin, do this any way you like. It doesn't have to be fussy, you just want to keep the meat in a snug shape while it's cooking. Season generously with salt and pepper, then roll the meat in the fennel seeds until covered.
- In a casserole pan or roasting tray, fry the meat for a couple of minutes in half the butter and a little olive oil, until nice and golden.
- Throw in the garlic, herbs, fennel, and wine, then cover the tray loosely with some wet greaseproof paper and cook until an inserted meat thermometer reaches 150 degrees F. As the pork loin is off the bone it cooks very quickly. Remove from the oven and allow the meat to rest on a plate. Then, without using any more heat, finish off your sauce in the pan, scraping any goodness off the bottom and adding the rest of the butter. Remove any large bits.
CORIANDER PORK ROAST

- Combine 2 tablespoons salt, 1 teaspoon pepper, the coriander, red pepper flakes, sage, thyme, rosemary, bay leaf and garlic in a food processor and pulse to make a paste. Pierce the pork all over with a paring knife, then rub with the spice paste. Tie the roast with kitchen twine so it keeps its shape.
- Transfer the meat to a 6-quart slow cooker. Add the juice of 1 orange and 1 lemon along with the chicken broth, potatoes and rutabaga. Cover and cook on high, 7 1/2 hours.
- Transfer the meat to a cutting board; cover with foil and set aside. Skim off the fat from the cooking liquid. Add the tomatoes, sugar and the juice of the remaining orange and lemon to the slow cooker; cover and cook on high, 30 more minutes. Stir in the mint just before serving.
- Remove the twine from the pork and slice. Serve with the vegetables and cooking liquid.
PORK STEAKS WITH GIN & CORIANDER SAUCE

- Crush the juniper berries coarsely using a pestle and mortar or rolling pin.Warm the gin in a small pan then pour over the juniper berries and leave to soak for 20 minutes. Trim the pork - leave on a little fat for flavour and to keep it moist. Drain the juniper berries, reserving the gin.
- In a mini blender, or using a pestle and mortar, pound the garlic, rosemary and coriander seeds with the juniper berries and 2 tbsp olive oil. Spread the mixture over the pork. Cover and marinate for as long as possible (preferably overnight if you have the time).
- Heat the remaining oil in a small non-stick frying pan until very hot. Add the pork and cook quickly on both sides until golden. Pour in the gin - boil fast until it disappears or set light to it and let the flames burn down - this removes the raw alcohol taste. Pour in the apple juice. Scrape the pan to loosen any sticky bits. Bring to the boil.
- Half cover with a lid and simmer for 10 minutes until the pork is cooked and the sauce reduced but not too thick. Remove the pork to a warm plate. Swirl the crème fraîche into the sauce. Bring back to boil and boil rapidly for 1-2 minutes until it's syrupy, then season to taste. Serve the pork and sauce with mashed potatoes and savoy cabbage, tossed with butter and finely sliced garlic.

PORK WITH RED WINE AND CORIANDER
This dish nicely combines the Mediterranean trio of garlic, red wine, and coriander. I first had it in southern Spain, where the culinary influence of North Africa remains strong. Like most braises, it takes time but, once the initial browning is done, very little work. There are a couple of ways to deal with the coriander: You can leave the seeds whole and wrap them in cheesecloth or just leave them in the sauce and eat them. Or you can crack them first, either with a mortar and pestle or by putting them in a plastic bag and crushing them with a rolling pin or the bottom of a pot. I like crusty bread here, plus a salad or steamed vegetable; the dish is complex and attention-grabbing enough not to bother with much more. Other cuts of meat you can use here: lamb shoulder is a great substitute; chunks of beef chuck or brisket are also good.

- Put the oil in a large deep skillet with a lid and place over medium-high heat. A minute later, add the pork and cook, undisturbed, until brown on one side, about 10 minutes. Stir once and add the garlic; cook, stirring occasionally, for about a minute. Add 1 1/2 cups of the wine, then the cheesecloth with the coriander.
- Turn the heat to low and cover. Adjust the heat so the mixture simmers gently. Cook for about an hour, until the pork is just about tender (You can prepare in advance up to this point; then cover and refrigerate for up to 2 days before proceeding.)
- Stir in the remaining red wine; cook for 2 or 3 minutes. Stir in the butter, then taste and add lemon juice as necessary. Stir in half the cilantro, then serve, garnished with the remaining cilantro.

This is a Greek recipe for Pork that I copied from a magazine a few years ago. Unfortunately, I do not remember the name of the magazine. It was on Mediterranean Cooking, and I have since given it away to a friend.

Steps:
- Season the pork cubes with the salt, and pepper.
- Combine the coriander seeds with the wine in a large dish, add pork, and cover.
- Refrigerate for 2-4 hours, stirring once or twice.
- Heat oil in a large enough pot.
- Using a slotted spoon, remove pork from the wine marinade, and reserve the marinade.
- Brown pork, turning frequently,until well browned on all sides, about 10 minutes.
- Add reserved marinade back into pot.
- Add enough water to just cover the meat.
- Bring to a boil.
- Reduce heat, cover pot, and simmer 30-45 minutes, until meat is fork tender and most of the liquid has evaporated.
- Taste, and re season with more salt and pepper, if desired.
