STEAMED PORK BUNS WITH HOISIN DIPPING SAUCE

Steamed Pork Buns with Hoisin Dipping Sauce image

Provided by Sandra Lee

Time 35m

Yield 4 servings

Number Of Ingredients 7

1 cup prepared pulled pork
1 teaspoon chopped ginger
2 scallions, finely chopped
2 (7.5-ounce) canisters refrigerated biscuit dough (20 total biscuits)
1/4 cup hoisin
1/4 cup low-sodium soy sauce
1 tablespoon apple cider vinegar

Steps:

  • Special equipment: 1 (2 1/2 or 2 3/4-inch) biscuit cutter; steamer, steamer basket or bamboo steamer
  • For the pork buns: Bring 2 cups water to a simmer in a pot that will fit a steamer basket or a bamboo steamer.
  • In a medium bowl, mix together the pork, ginger and scallions. Set aside
  • Working with 1 dough canister (10 biscuits) at a time, roll out the biscuits with a rolling pin until they are about 3 to 3 1/2 inches in diameter. Place 1 heaping tablespoon pork mixture in the center of 5 of the biscuits. Cover each with a remaining rolled-out biscuits. Gently press the biscuits together all the way around the filling and to the edges. Place a (2 1/2 or 2 3/4-inch) biscuit cutter on top so that it is centered on the bun. Press down on the cutter to form a clean, sealed edge and remove the excess dough from around the outside of the biscuit cutter. (If you do not have a biscuit cutter then just pinch together the edges of the buns with your fingers.) Place the sealed buns onto a sheet tray and cover with plastic wrap. Repeat with the remaining ingredients.
  • Place the buns into the steamer basket. Depending on the size of your steamer, you may have to cook the buns in batches of 5. Place the steamer basket over the pot of simmering water, cover and steam, about 10 minutes. The buns will be puffed and the tops will look somewhat dry and shiny. Let cool 1 to 2 minutes.
  • While the buns are steaming, make the hoisin dipping sauce: In a small bowl, stir together the hoisin, soy sauce, 2 tablespoons water and the vinegar. Serve with the buns.

EASY GRILLED PORK TENDERLOIN W/DRY RUB & MOP SAUCE

Easy Grilled Pork Tenderloin w/Dry Rub & Mop Sauce image

I was really nervous to grill pork tenderloins for the first time! But found out that they are actually very easy! I was so afraid I'd overcook them and they'd turn out dry, but they were tender, VERY juicy and succulent! We will be having this often throughout the summer! *Remember, pork is DONE when slightly pink in the middle....

FOR DRY RUB:
1/4 c smoked sweet paprika
2 Tbsp dried thyme
2 Tbsp dried crushed rosemary
2 Tbsp garlic powder (not garlic salt)
1/2 tsp coarse ground black pepper
1/2 tsp nutmeg
1/4 tsp cayenne
FOR THE MOP SAUCE:
1 c Heinz ketchup
1/3 c honey
1/4 c apple juice
2 Tbsp cider vinegar
1/2 tsp soy sauce (i use regular for this, not low-sodium)
REST OF INGREDIENTS:
2 pork tenderloins, about 3 lbs. total, 2 1/2 lbs. ok
1/2 c of the dry rub (above)
1 c of the mop sauce (above)

Steps:

  • 1. In small bowl, mix dry rub ingredients and set aside. Cut off any excess fat from the pork and remove any sinew (the tough fibrous tissue). Cover the pork tenderloins on all sides with dry rub and refrigerate overnight or for at least 8 hours. (*I coated them each on 2 separate sheets of plastic wrap and wrapped them tightly, placed them in a 9x11 baking dish and marinated them overnight.) In small bowl, mix mop sauce ingredients. Heat in microwave until hot to melt honey. Stir well, set outside by grill. Pre heat gas grill 5 minutes before cooking. Place pork tenderloins on hot grill (medium-high) with tongs. Close lid and grill the pork for 5 minutes, turn over and grill 5 minutes longer. Turn again and heavily baste with mop sauce, close lid and grill 5 minutes. Turn over, baste again and close lid for 5 more minutes. (*Total cooking time is 20 minutes.) Remove to a baking dish, cover, and let rest 5 minutes. Remove to cutting board and slice to serve.
  • 2. *Leftover rub and mop sauce is also good on chicken, wings, and fish!

ALL PURPOSE MARINADE/MOP/DIPPING SAUCE

All Purpose Marinade/Mop/Dipping Sauce image

This is a Chef Paul recipe. Very versatile! The marinade is great for brisket. Just reserve some, add some beer and you've got a good mop. Reserve some more, add a few ingredients and you've got a good dipping or BBQ sauce. Cooking time does not include the marinating time or the time to cook the brisket. This is primarily a recipe for the marinade.

Categories     Sauces

Time 40m

Yield 15-20 serving(s)

Number Of Ingredients 20

8 -10 lbs beef brisket
1 1/2 cups beef stock, not bullion
3/4 cup red wine vinegar
6 tablespoons Worcestershire sauce
1 tablespoon dried chipotle powder
1 tablespoon onion powder
2 tablespoons garlic powder
3 tablespoons brown sugar
1 teaspoon cumin powder
3/4 cup oil
3/4 cup Bourbon
1 cup reserved marinade
6 ounces beer
balance reserved marinade
1 (16 ounce) can tomato sauce
3 tablespoons white vinegar
2 tablespoons brown sugar
1/2 cup catsup
1 teaspoon mustard powder
5 garlic cloves (roasted)

Steps:

  • Mix everything except bourbon in a saucepan, bring to a boil, simmer afor a minute or two.
  • Cool and add the bourbon.
  • This should be enough to marinade a brisket in it's cryovac packaging. Snip off a corner of the cryovac just large enough to insert the tip of a funnel. Drain out any blood, and carefully pour the marinade inches Reseal the packaging (I use duct tape), place in a pan (just in case), and refridgerate one or two days.
  • Drain and reserve the marinade.
  • Put the brisket in the smoker. For instructions on how to smoke a brisket, see my Real Texas Brisket recipe#152445.
  • For the mop: Measure 1 cup of reserved marinade and set aside. Put the rest of the marinade in a large saucepan and boil for about 5 minutes. Cool slightly, Strain, if using a spray bottle, and add in the beer. If you strain out the solids, you can add them back to the marinade reserved for the sauce, for a little extra zip.
  • Mop every half an hour, up to every hour, as your pit requires.
  • For the sauce: Put the ingredients in a large saucepan, bring to a boil, and simmer until thick. I roasted the garlic and onion in my pit while smoking the beef, added it to the sauce later, and then simmered it for another half an hour or so. Pour the sauce into the blender and process until smooth. If it's too thick, add some of the mop. Serve warm.
