LEMON GARLIC PORK CHOPS WITH PARMESAN TATER TOTS



Lemon Garlic Pork Chops with Parmesan Tater Tots image

Number Of Ingredients 10

1 pound frozen Tater Tots
2 tablespoons grated parmesan cheese
Kosher salt and freshly ground pepper
12 ounces green beans, trimmed and halved
4 tablespoons unsalted butter
Finely grated zest and juice of 1 lemon
2 tablespoons extra-virgin olive oil
4 3/4-inch-thick boneless center-cut pork chops (1 1/2 pounds)
3 cloves garlic, finely chopped
1/2 cup low-sodium chicken broth

Steps:

  • Bake the Tater Tots as the label directs. Transfer to a bowl; add the parmesan, season with salt and pepper and toss. Set aside.
  • Meanwhile, bring a medium pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and transfer to a medium bowl; toss with 1 tablespoon butter, the lemon zest, and salt and pepper to taste. Cover to keep warm.
  • Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper; add to the skillet and cook until browned, about 4 minutes per side. Transfer to a plate and let rest.
  • Add the garlic to the skillet and cook until lightly browned, about 30 seconds. Add the lemon juice and chicken broth; cook until reduced by half, about 3 minutes. Swirl in the remaining 3 tablespoons butter. Spoon the pan sauce over the pork chops and serve with the Tater Tots and green beans.

4 pork loin chops
30 g butter (10z or 1 tablespoon oil)
2 1/2 cm ginger (1inch grated)
1 teaspoon dry sherry
1 tablespoon soy sauce
2 tablespoons lemon juice
2 1/2 teaspoons sugar
1 1/2 teaspoons cornflour
1/4 cup water
4 spring onions (sliced diagonally)

Steps:

  • Heat butter or oil in pan and add chops and cook gently until meat is well browned on both sides and cooked to your liking, remove and keep warm.
  • Combine grated ginger, dry sherry, soy sauce, lemon juice, sugar, cornflour and water.
  • Drain excess butter or oil from pan and add the combined sauce ingredients and stir until sauce boils and thickens and then add the spring onions, stir to combine and then add the chops covering with the sauce and heat through and then serve.

4 thin-cut pork loin chops with bone (about 1 1/4 pounds)
salt & freshly ground black pepper
1 tablespoon unsalted butter
1 garlic clove, minced
2 tablespoons drained capers
1 tablespoon fresh lemon juice
1 tablespoon chopped chives

Steps:

  • Heat the oil in a large nonstick skillet. Lightly season the pork chops with salt and pepper and cook over high heat until browned, 3 to 4 minutes.
  • Turn the chops and sear until just cooked through, about 2 minutes; transfer to a platter.
  • Add the butter and garlic to the skillet and stir over moderate heat until the garlic softens, about 1 minute.
  • Stir in the capers, lemon juice and chives. Spoon the sauce over the chops and serve.

Steps:

  • Preheat Grill to High Heat.
  • Melt butter in small pan over Medium, Stir in lemon juice and garlic. Heat till garlic is tender.
  • Arrange chops on plate and coat top side with mixture. Place on grill butter side down.
  • Sear on high for 1 minute coating top side with mixture while other is grilling.
  • Flip chops and sear the other side for one minute.
  • Turn meat and grill 3-5 minutes per side. Adding more mixture as it cooks.
