1.33 lbs lean boneless pork chops
3/4 cup basil
2 garlic cloves
2 tbsp lemon juice
2 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper

Steps:

  • Add the basil, garlic, lemon juice, olive oil, salt, and pepper to a food processor or blender. Save about one fourth of the marinade for drizzling on top. Use the remaining the pork in this mixture for 45-60 minutes.
  • When ready to cook, remove the pork from the marinade letting excess drip off. To bake, preheat the oven to 425. Place the pork chops in a glass baking dish sprayed with cooking spray and cook for 15-20 minutes until cooked through. To grill, cook for 4-6 minutes per side until cooked through.
  • Drizzle the saved marinade on top.

Here's my favorite recipe in Toni Tipton-Martin's excellent and invaluable "Jubilee: Recipes From Two Centuries of African American Cooking" (2019). It's a remix of one that the chef Nathaniel Burton collected into his 1978 opus, "Creole Feast: Fifteen Master Chefs of New Orleans Reveal Their Secrets," and one that Tipton-Martin glossed-up with lemon zest, juice and extra butter, a technique she learned from the restaurateur B. Smith's 2009 collection of recipes, "B. Smith Cooks Southern-Style." It's a dish of smothered pork chops, essentially, made into something glorious and elegant. "The food history of Blacks in America has been a story of the food of survival," she told me in an interview. "We need to start celebrating the food they made at work."

4 bone-in pork chops (about 8 ounces each)
Kosher salt and freshly cracked black pepper, to taste
1/2 teaspoon dried thyme leaves
2 tablespoons olive oil
4 tablespoons unsalted butter
1 very small shallot, minced (about 1 tablespoon)
2 garlic cloves, minced (about 1 teaspoon)
2 teaspoons all-purpose flour
1 cup dry white wine
1 1/2 cups chicken stock, homemade or low-sodium, if store-bought
2 tablespoons drained capers
2 tablespoons minced fresh parsley, plus more for garnish
1 teaspoon freshly grated lemon zest, plus 2 tablespoons juice
Hot sauce (optional)

Steps:

  • Dry the chops with paper towels, and season aggressively with salt, pepper and the thyme. Swirl the olive oil into a large skillet, and heat over medium until the oil begins to shimmer. Add chops, and cook until well browned on each side and cooked through, about 5 minutes per side. Transfer chops to a plate, and cover to keep warm.
  • Drain the fat from the skillet, then melt 2 tablespoons of butter in it over medium heat until sizzling. Add the shallot and garlic, and sauté until the aromatics soften, reducing the heat if necessary, about 1 minute. Sprinkle in the flour, and cook, stirring, for 2 minutes. Whisk in the wine and chicken stock, raise heat to high and bring the liquid to a boil, scraping up the browned bits on the bottom of the pan. Reduce heat to medium-high and cook, uncovered, until the liquid is reduced by half, 7 to 10 minutes.
  • Stir in the capers, parsley, lemon zest and juice and hot sauce to taste (if you're using it), and simmer for 1 to 2 minutes. Stir in the remaining 2 tablespoons of butter until it's melted and the sauce looks smooth. Nestle the pork chops into the sauce, and allow them to warm up for a couple of minutes, then serve, pouring sauce over each pork chop to taste. Garnish with more fresh parsley.

1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves
1/2 cup all-purpose flour
2 large eggs, beaten
2 tablespoons unsalted butter
For the lemon basil cream sauce
2 tablespoons unsalted butter
2 cloves garlic, minced
1/4 teaspoon red pepper flakes, or more, to taste
1/2 cup chicken broth
1 cup heavy cream
1/4 cup freshly grated Parmesan
1/4 cup basil leaves, chiffonade
Zest of 1 lemon
Kosher salt and freshly ground black pepper, to taste

Steps:

  • 1.Preheat oven to 400 degrees F. 2.Season pork chops with salt and pepper, to taste. 3.In a large bowl, combine Panko, Parmesan and parsley; set aside. 4.Working one at a time, dredge pork chops in flour, dip into eggs, then dredge in Panko mixture, pressing to coat. 5.Melt butter in a large oven-proof skillet over medium high heat. Add pork chops and sear both sides until golden brown, about 2-3 minutes. 6.Place into oven and roast until completely cooked through, reaching an internal temperature of 140 degrees F, about 8-10 minutes; set aside and keep warm.* 7.To make the lemon basil cream sauce, melt butter in the skillet. Add garlic and red pepper flakes, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in chicken broth, heavy cream, Parmesan, basil and lemon zest; season with salt and pepper, to taste. 2 medium pork chops
1/2 teaspoon dried sweet basil leaves
1/4 teaspoon basil
1 tablespoon lemon juice
1/2 cup coconut milk
1/4 cup chicken stock
2 tablespoons extra virgin olive oil

Steps:

  • In a pan at medium heat heat up your cooking oil and fry the pork chops until crispy around the edges for about 8 minutes each side.
  • Take them off the pan and set them aside to start the sauce.
  • Add the garlic to the pan and fry for about a minute then add the basil.
  • Mix the basil in and add the lemon juice in and the broth.
  • Bring to a simmer then add the coconut milk, stirring with a spoon in fast circular motion until the sauce is smooth.
  • Bring to a simmer and season with salt, then add the pork chops back into the sauce.
  • Simmer for about a minute or until the sauce has thickened to your preference.
  • Take it off the heat ready to serve over some mash or with any side of your choice.

2 tablespoons butter
2 cloves garlic, minced
1 cup half-and-half
1 cup chicken broth
1/4 cup lemon juice
2 tablespoons cornstarch
1/2 teaspoon pepper
3 tablespoons chopped fresh basil

Steps:

  • MELT butter in a large skillet over medium-high heat; add garlic, and saute 1 to 2 minutes.
  • Add half-and-half and chicken broth.
  • Bring to a boil, and cook 8 minutes or until reduced by half.
  • WHISK together lemon juice and cornstarch until smooth.
  • Whisk lemon juice and 1/2 teaspoon pepper into butter mixture, and cook, whisking constantly, 2 minutes or until thickened.
  • Remove from heat.
  • DO NOT ADD BASIL UNTIL READY TO SERVE.
