On Sundays my grandpa Emmanuel would take the kitchen table out on the lawn and turn it into a buffet table for his 10 children and the whole neighborhood. He would make Sunday gravy (marinara sauce) filled with slow-cooked meats that flavored the sauce: braciole, pork chops, chicken thighs, rabbit, sausages and meatballs. He would simmer the meats for hours, then pull them from the sauce pot and separate them into stacks on a large platter. He would toss spaghetti, which he referred to as macaroni in English, with half of the remaining sauce and add lots of cheese to it. The extra sauce would be ladled on top of dinner plates of meat and macaroni. This recipe is all I can do to imitate Sundays with Emmanuel in 30 minutes.

1 pound spaghetti
1/4 cup extra-virgin olive oil, 2 turns of the pan, for both meats and sauce
3 thin cut pork loin chops, 1/2-inch thick, cut in 1/2
Salt and pepper
2 each sweet and hot Italian sausage links
1/2 to 1 teaspoon crushed red pepper flakes, for moderate to spicy marinara
5 cloves garlic, chopped, 3 for sauce, 2 for meatballs
1 small onion, minced
1 cup beef broth
1 (28-ounce) can crushed tomatoes
1 (14-ounce) can diced tomatoes
1/4 cup chopped flat-leaf parsley, a couple of handfuls of leaves
Several leaves fresh basil, torn or chopped, a handful
1 pound meat loaf mix, ground beef, pork and veal combined, from butcher counter
1 egg
1/3 cup grated Parmigiano-Reggiano, 2 handfuls, plus extra for tossing pasta and to pass at table
1/2 cup Italian bread crumbs, 3 handfuls
1 loaf crusty Italian bread, for serving

Steps:

  • Heat water for pasta to boil. Salt and cook pasta 7 to 8 minutes, to al dente.
  • Preheat oven to 425 degrees F.
  • Heat a deep skillet or medium heavy bottomed sauce pot over medium high heat. Season pork chops with salt and pepper. Halve sausages. Add 1 tablespoon, 1 turn of the pan, extra-virgin olive oil to pan or pot. Place chops in pan or pot and brown 2 minutes on each side, remove. Add another tablespoon oil, 1 turn of the pan, and sausages. Brown sausages 2 minutes on each side and transfer to plate with pork. Add pepper flakes, 3 cloves chopped garlic and onion to the pot and saute 1 minute. Add broth to the pan and scrape up drippings. Add tomatoes and herbs and bring sauce to a bubble. Add meats back to the pot and reduce heat to simmer. Simmer sauce until ready to serve, 12 to 15 minutes.
  • Combine ground meat, egg, remaining 2 cloves chopped garlic, 1/3 cup cheese, and bread crumbs. Season with salt and pepper and roll into balls, 1 1/2 to 2 inches in diameter. Place balls on nonstick cookie sheet. Roast meatballs 10 minutes, then slide into Sunday sauce and turn off oven. Add bread to oven to crisp crust.
  • To serve, place pork, sausages and meatballs on serving dish. Pour 1/2 of the sauce into a serving dish to ladle over pasta and meats at the table. Toss cooked spaghetti with remaining sauce in sauce pot, adding a few handfuls of grated cheese to the pot as you toss it. Transfer pasta to a serving dish.

  • Stir in the Alfredo sauce, sage and black pepper. Bring to a simmer, stirring occasionally; reduce heat and simmer for 10 minutes.

8 ounces unsalted butter
2 ounces extra-virgin olive oil, plus more for searing
1 Vidalia onion, thin julienne
1 cup diced celery
4 cloves garlic, split in 1/2 and sliced paper thin
1 pound sweet Italian sausage, removed from casing
8 ounces baby spinach
1/2 cup croutons
3 cups chicken stock
3 ounces heavy cream
1/2 bunch flat-leaf Italian parsley, chopped
1 1/2 cups grated Parmigiano-Reggiano
Kosher salt and freshly ground black pepper
4 (8-ounce) bone-in center cut pork chops, frenched, marinated in extra-virgin olive oil, sliced shallots and Italian herbs

Steps:

  • Stuffing: In large a rondeau or heavy bottomed pot over medium-low heat, add butter and olive oil, then sweat onion, celery and garlic until translucent, about 3 minutes. Add sausage, and allow it to cook through, stirring often. Add spinach and toasted croutons. Mix well then add chicken stock, cream and parsley. Cook until thickens. Add cheese and season with kosher salt and freshly ground black pepper. Allow stuffing to cool.
  • Pork Chops: Preheat oven to 400 degrees F.
  • Make a 1-inch incision with a knife right next to the bone of the pork chop. Work the knife inside the pork chop to make a pocket for the stuffing. With a piping tool or simply with your hands, stuff the pork chop with the stuffing mixture until the pocket is packed well. Season the pork chop with salt and black pepper. Heat a large skillet and add oil. Sear both sides, about 1 minute. Place skillet in oven to roast for about 10 to 12 minutes, turning chops over half way through so as not to burn. Cook pork chop to medium, and the internal temperature registers 165 degrees F on an instant-read thermometer. Anything more than medium may dry out the chop.

Kirsten Goldberg was one of the pantry cooks at Boulevard. One night when I was eating at the counter opposite her station, I asked her if she had a favorite pork recipe to contribute to my book. She didn't hesitate a second and replied, "The pork chops with country gravy my mom served for breakfast." null Most times when I've had fried chops, I've been disappointed because the meat is always ends up dry from overcooking. The solution is to give the chops a quick soaking in a simple flavor brine of salt, sugar and water. If you're serving them for breakfast, brine them the night before for 2 to 4 hours. Remove the chops from the brine and keep them, wrapped, in the refrigerator until you're ready to cook them. Otherwise make breakfast a little later ? 2 hours in the brine should be enough to make them succulent. null Serve these chops in true Midwestern style with warm biscuits ? some folks spoon the gravy over the biscuits as well as the chops ? and fried or poached eggs. If you're really feeling like going "whole hog", serve up a mess of grits, too.

1/4 cup kosher salt
1/4 cup sugar
2 cups ice cubes
6 bone-in pork rib chops (each 1/2-inch thick) or 6 boneless pork chops
1/2 pound bulk fresh sausage, such as Brown Sugar and Sage Breakfast Patties
2 tablespoons all-purpose flour
2 cups half-and-half, plus additional if needed
Freshly grated nutmeg
1/4 teaspoon Worcestershire sauce
Kosher salt
Freshly ground black pepper
Hot sauce (recommended: Tabasco)
1/2 cup all-purpose flour
Sausage fat or bacon fat, lard, or canola or safflower oil

Steps:

  • To make the brine: Put the water in a large bowl and stir in the salt and sugar until the sugar is dissolved. Add the ice cubes and cool the mixture to at least 45 degrees F. Submerge the pork chops in the brine. Refrigerate for 2 hours or up to 4. Remove the pork chops from the brine, pat dry, and wrap in plastic wrap. Store in refrigerator until ready to cook. To make the gravy: In a large skillet, cook sausage over medium heat, breaking it up with a spatula or fork. Pour off all but 2 tablespoons of the fat and discard. Reserve the fat in a cup for cooking chops. Sprinkle the flour over the cooked sausage in the skillet; stir to coat. Gradually stir in the half-and-half, nutmeg and Worcestershire sauce. Cook, stirring, until the sauce thickens, scraping up any browned bits from the bottom of the pan. Add more half-and-half if the sauce becomes too thick. Season, to taste, with salt, pepper and hot sauce. Cover the skillet and set aside while you cook the chops. Sprinkle the chops generously with pepper. Dredge then in the flour, shaking off excess. In a large, heavy skillet, heat the reserved fat plus additional oil to a depth of 1/8-inch over medium-high heat. Put the chops in the pan, as many as will fit without crowding, and fry until golden brown, about 2 to 3 minutes. Turn and cook on the other side, 2 to 3 minutes. If you're cooking more than one batch of chops, keep the fried chops warm in a preheated 250 degrees F oven. To serve, put 1 chop on each diner's plate (you will have 2 remaining for second helpings) and spoon the gravy over them. Serve extra gravy on the side to pour biscuits or grits.;

1 lb sweet Italian sausage
1 large can diced tomatoes, do not drain
1 medium can or jar mushroom buttons, do not drain
1/2 cup burgundy wine
1 1/2 teaspoon s minced fresh garlic
1 medium onion, chopped
1/2 teaspoon Italian seasoning
Salt & pepper to taste
Rice or pasta cooked as desired

Steps:

  • Brown chops in 2 tablespoons oil to done. Drain, set aside, and keep warm. Crumble and brown sausage to medium done in 1 tablespoon oil. Drain and set aside.
  • Combine tomatoes, mushrooms, wine, garlic and onion in large skillet. Cook at medium-low heat until onions are clear. Add sausage and spices; cook at medium-high heat stirring occasionally about 3 minutes or until sausage is done.
  • Cover pork chops with Italian sausage gravy.

4 slices tomato

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.

I think you could use the same basic sauce for chicken and shrimp dishes as well. The sauce is to die for! Adapted from recipe in "New New Orleans Cooking" by Emeril Lagasse and Jessie Tirsch.

8 thinly cut pork chops (about 3 pounds cut about 1/2-inch thick)
1 teaspoon paprika
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 cup olive oil
1/4 cup all-purpose flour, plus 2 tablespoons all-purpose flour
4 cups thinly sliced onions (or more! they cook down so you hardly notice them in the sauce)
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon chopped garlic
4 bay leaves
2 (14 1/2 ounce) cans reduced-sodium chicken broth
2 1/3 cups water (1 1/2 cans if you measure in chicken broth can)
1 lb smoked sausage (I used kielbasa) or 1 lb andouille sausage, cut crosswise into 1 1/2 inch slices (I used kielbasa)
1 lb russet potato, peeled and cut into 1 inch cubes

Steps:

  • Mix ingredients for seasoning mix together in a small bowl and sprinkle generously on both sides of pork chops.
  • (Save the extra seasoning mix to add to the sauce later if you think it needs more seasoning--I tossed it out, and then wished I had a little bit more to make it a little spicier).
  • Heat the oil in a Dutch oven or large pot over medium-high heat.
  • Add the pork chops, a few at a time and cook them until they are lightly browned on both sides (about 2 minutes per side).
  • Remove the pork chops to a platter and set aside.
  • Reduce the heat to medium.
  • Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes.
  • Add the onions, salt, and pepper.
  • Cook, stirring, until the onions are slightly soft, about 5 minutes.
  • Add the garlic, bay leaves, chicken broth and water.
  • Bring to a boil.
  • Return the pork chops to the pot.
  • Reduce the heat to medium-low, cover and simmer for 45 minutes.

By the by, if your grocer doesn't stock pancetta (an Italian-style cured bacon), you can substitute a fatty prosciutto or ordinary bacon in a pinch, but it won't be as subtle a dish. 1 lb mild sausage
1/2 lb hot Italian sausage
6 thinly sliced pork chops (about 3 pounds)
2 cups dry red wine
2 tablespoons chopped garlic
2 onions, diced
1 cup diced pancetta (or a fatty prosciutto or regular bacon)
1 tablespoon crushed red pepper flakes
1 gallon italian tomato
2 cups chopped basil
2 lbs cooked meatballs (suggest my Authentic Italian Meatballs recipe)
1 lb rigatoni pasta

Steps:

  • In a large pot over medium heat, heat the oil and sauté the sausage and pork chops until brown, about 10 minutes - Don'’t worry if the meat is not cooked through because the meat will cook through in the sauce.
  • Remove the meat from pan and set aside; Deglaze the pan with 1 cup red wine.
  • In the same pot, add the garlic, onions, pancetta, and crushed pepper and cook until the onions and garlic are lightly browned, about 2 minutes.
  • Add the remaining cup of red wine and reduce by half. Add the tomatoes and simmer for 1 hour over low heat. Add the basil, sausage, pork chops, and meatballs to the tomato sauce and simmer for an additional hour over low heat.
  • In a large pot of boiling, salted water, cook the pasta for 10 to 12 minutes or until al dente. Drain the pasta, toss it with the Sunday Sauce, and serve immediately.

2 medium green peppers, cut into 1/4-inch strips
1/2 pound sliced fresh mushrooms
1 tablespoon plus 1-1/2 teaspoons olive oil, divided
4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 cups marinara or spaghetti sauce
1 can (3-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.

Amazing and absolutely delicious Sunday gravy passed down from my great grandmother. Italian red sauce with lots of meats and fresh herbs. Great recipe for a family meal or to impress guest with your authentic Italian cooking.

4 lb ground beef/veal/pork (can make with just beef and pork)
4 bone in pork chops
2 lb penne rigate
1 gigantic yellow onion
1 head of garlic
1 fresh batch of basil
1 batch fresh parsley
1 egg
6 hot italian sausage links
4 slices white bread
1 c milk
1 c parmigiano-reggiano
extra virgin olive oil
1 1/2 c dry white wine (holland house cooking wine works just fine)
3 29 oz cans tomato puree
1 can(s) tomato paste
2 Tbsp oregano leaves
2 Tbsp suger

Steps:

  • 1. Dice the onion and 5 cloves of garlic. Chop your basil and set aside.
  • 2. Put your ground beef/pork/veal in a big bowl. Add salt, pepper, a little bit of oregano, 1/2 cup of cheese, and egg.
  • 3. Put you slices of bread in a cereal bowl can cover with milk.
  • 4. In a large frying pan saute 1/2 of your onions, 1/2 your garlic and 1/2 your basil in 2 tablespoons of evoo. Slow and low here, do not burn your garlic. Saute until onions are translucent approximately 15 mins. When done add to your bowl of meat. Set aside pan to cook meats in a bit.
  • 5. Squeeze out half your milk from the bread and add to meat. With your hands mix your meat mixture together for about 5 mins. Get it good and mixed up. Set aside.
  • 6. Time to start the sauce. In a BIG sauce pan add another 2 tablespoons of evoo, saute the rest of your onion, garlic, basil slow and low. When onions are translucent add 3 cans tomato sauce and 1 1/2 cans water (don't worry water will cook out over the next few hours. It will not water down your sauce.) Add your oregano leaf and sugar stir and simmer sauce on med low heat.
  • 7. Time to brown your meatballs. In your frying pan add about one inch of oil. Roll your meatballs out by hand med to large size. Brown meatballs on both sides. Do not have to cook them all the way through. They will finish cooking in your sauce and add flavor to the sauce by not cooking through. You will have to do this in batches most likely. Once finished browning add to the sauce.
  • 8. In same pan you cooked the meatballs brown your chops. Add them to your sauce. Now brown your sausage links in same pan. Cut browned sausage links into pieces and add to sauce.
  • 9. Time to deglaze your pan all the meats were cooked in. Drain excess oil from the pan. Put the empty oily pan on med heat. Pour wine in pan once hot. The pan will smoke at first. This is okay. Simmer for a couple of mins until the alcohol has cooked off. Now pour this into your sauce.
  • 10. Let your sauce simmer on low heat for the next 3 hours. During this time you will have fats rise to the top. You can skim most of the fat off if you choose. I stir it all back in for this is where a lot of your flavor comes from.
  • 11. Sauce close to done. Time to cook pasta. Cook your pasta al dente for about 11-12 mins. Drain then toss with some of your cheese to the sauce will adhere to the pasta better. Remove pork chop bones ( you will prob have to look for these because the fell of the chop)
  • 12. Place pasta on a big serving platter or bowl. Spoon sauce over pasta. Top with parsley and additional cheese. Put extra sauce in a separate bowl and place on the table for quest to add extra if they choose.
  • 13. Serve with a loaf of bread and butter and enjoy.
