2 tablespoon light margarine
1 yellow onion, diced
3 clove garlic, minced
4 cup kale, chopped into bite-sized pieces
1 (9-ounce) package refrigerated cooked chicken strips or shredded chicken
1 (10.75-ounce) can 98% fat-free, reduced-sodium condensed cream of chicken soup
1 cup fat-free shredded mozzarella cheese
1/4 cup reduced-fat grated Parmesan cheese
1 teaspoon lemon zest
1/4 teaspoon black pepper
2 tablespoon chopped sundried tomatoes

Steps:

  • Preheat oven to 350 degrees F. Coat a 3-quart casserole dish or 8-inch square baking dish with cooking spray. Cook pasta according to package directions; drain and set aside.
  • Meanwhile, in a large skillet over medium heat, melt margarine. Add onion and garlic and cook 2 to 3 minutes, or until onion is softened, stirring frequently. Add kale and cook about 5 minutes, or until tender. Add remaining ingredients; mix well. Spoon mixture into casserole dish.
  • Bake 30 minutes, or until heated through.

1/2 cup mayonnaise
1/3 cup milk
1/4 cup white wine
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder

4 cups chopped kale, steamed
2 1/2 cups shredded cooked chicken
1 cup shredded Swiss cheese
1/2 cup French fried onions

Steps:

  • Preheat oven to 350 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
  • In a large bowl, combine soup, mayonnaise, milk, white wine, mustard, garlic powder, salt and pepper; mix well.
  • Spoon 1/3 of cream sauce in the bottom of the baking dish. Layer evenly with half of kale, half the chicken and half of the cheese. Repeat layers with 1/3 of cream sauce, remaining kale, chicken, cream sauce and cheese.
  • Top with French fried onions and bake uncovered 35 to 40 minutes or until hot.

Steps:

Add onion and garlic; cook until onion is beginning to soften, 4 minutes. Add kale, cover, and cook until almost tender, about 5 minutes. Transfer to pot with pasta.

2 bunches kale, tough center stems removed, chopped into 2-inch pieces
2 to 3 tablespoons extra-virgin olive oil
1 pound boneless, skinless chicken breasts, cut into 1/2-inch pieces
Kosher salt and freshly ground black pepper
1 small onion, finely chopped
2 tablespoons all-purpose flour
3/4 cup 2 percent milk
1 cup low-sodium chicken broth
8 ounces frozen artichoke hearts, thawed and roughly chopped
1/4 teaspoon cayenne
4 tablespoons grated Parmesan
Nonstick cooking spray, for spraying the baking dish
2 tablespoons panko breadcrumbs

Steps:

  • Bring a large pot of water to a boil. Add the kale and cook until tender, about 2 minutes. Drain, squeeze out any moisture and dry very well.
  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Season the chicken with salt and pepper, then add it to the skillet and cook, stirring occasionally, until golden on some sides and most of the pink is no longer visible, about 4 minutes. Transfer to a bowl with a slotted spoon (the chicken will not be fully cooked).
  • Reduce the heat to medium. Add another tablespoon of oil if the skillet is dry, then add the onions. Cook, stirring occasionally, until softened, about 4 minutes. Sprinkle the flour over the onions and cook, stirring, 1 minute. Slowly pour in the milk while stirring constantly to dissolve the flour, then stir in the chicken broth. Increase the heat to medium high and bring to a simmer while stirring. Simmer until slightly thickened, about 2 minutes. Add the kale, artichokes and cayenne, then add the chicken and any collected juices. Cook, stirring, until the kale and artichokes are hot and the chicken is just cooked through, about 4 minutes. 16 ounces uncooked fusilli or casarecce pasta
4 tablespoons (2 ounces) unsalted butter, divided
1 cup onion, chopped
2 tablespoons all-purpose flour
1/2 cup dry white wine
1 cup chicken broth
1/2 cup heavy cream
1/2 teaspoon dried leaf thyme
1 tablespoon fresh parsley , chopped
2 cups diced cooked chicken
2 cups frozen kale , cooked, well-drained
2 cups shredded cheddar cheese
Salt, to taste
Freshly ground black pepper, to taste
1 cup soft fresh breadcrumbs

Steps:

  • Cook the pasta in salted boiling water as directed on the package, then drain and rinse with hot water. Set aside.
  • In a sauté pan or large saucepan, melt 2 tablespoons of butter over medium heat. Add onion and cook, stirring, until onion softens, becoming slightly clear. Add the flour and cook, stirring, until the flour is well incorporated and cooked, about 2 minutes. Add the wine and chicken broth. Continue cooking, stirring, until mixture is thickened and bubbly.
  • Add the cream, thyme, parsley, chicken, and kale. Stir to blend.
  • Stir in the cheese until melted. Add salt and pepper to taste.
  • Combine with the pasta and transfer to a lightly greased 2- to 2 1/2-quart baking dish .
  • Melt the remaining 2 tablespoons of butter and toss with the breadcrumbs . Spread over the casserole.
  • Bake at 350 F for about 25 minutes, or until the casserole is hot and ​the top is lightly browned. To further brown the crumbs, turn the broiler on for a few seconds. Watch carefully, though: They can burn very quickly on broil.

4 bunches Tuscan kale, tough center stems removed, leaves chopped into 2-inch pieces
3 to 4 tablespoons extra-virgin olive oil
2 pounds skinless, boneless chicken breasts, cut into 1/2-inch pieces
Freshly ground black pepper
1 large onion, finely chopped
1/4 cup all-purpose flour
1 1/2 cups whole or 2% milk
2 cups low-sodium chicken broth
16 ounces frozen artichoke hearts, thawed and roughly chopped
Pinch of cayenne pepper
1/2 cup grated parmesan cheese
Cooking spray
1/4 cup panko

Steps:

Steps:

  • Arrange a rack in top of oven; preheat to 450°F. Cook pasta in a large pot of boiling salted water according to package directions.
  • Meanwhile, mix panko, 1/4 cup Parmesan, 2 Tbsp. oil, 1/4 tsp. salt, and 1/4 tsp. pepper in a medium bowl.
  • Toss kale and tomatoes with 1/2 tsp. salt and remaining 2 Tbsp. oil on a rimmed baking sheet.
  • Drain pasta, reserving 1/2 cup pasta cooking liquid. Return pasta to pot. Add sour cream, mustard, 1 tsp. salt, 1/4 cup pasta cooking liquid, and remaining 3/4 cup Parmesan and 1/2 tsp. pepper; stir until smooth. Stir in chicken and 1 cup mozzarella, adding more pasta cooking liquid if needed, until evenly coated. Transfer to sheet with kale and tomatoes and toss to combine. Top with panko mixture and remaining 1/2 cup mozzarella.
