1/4 cup all-purpose flour
4 boneless pork loin chops (3/4-inch thick and 4 ounces each )
5 tablespoons olive oil
1 large onion, thinly sliced
1/2 cup finely chopped green pepper
1 celery rib, finely chopped
2 garlic cloves, minced
2 cups stewed tomatoes
1/2 teaspoon salt
1/2 teaspoon sugar
1 to 1-1/2 teaspoons dried thyme
1/4 to 1/2 teaspoon pepper
1/4 to 1/2 teaspoon hot pepper sauce
Minced fresh parsley

Steps:

  • Place flour in a large resealable plastic bag. Add the pork chops, one at a time, and shake to coat. , In a large skillet, brown pork chops, over medium-high heat, on both sides in oil. Remove chops and keep warm. , In the drippings, saute onion, green pepper, celery and garlic until vegetables are tender. Stir in the tomatoes, salt, sugar, thyme, pepper and hot pepper sauce., Return pork chops to the pan. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until a thermometer reads 160°. Serve sauce with pork chops; sprinkle with parsley.

Steps:

  • Sprinkle pork chops with creole seasoning.
  • Dredge pork chops in flour, shaking off excess.
  • Cook pork chops in hot vegetable oil in a large skillet over med-high heat 1-2 minutes on each side or until golden brown.
  • Remove from skillet and keep warm.
  • Add in onions and water, stirring to loosen particles from the bottom of the skillet; saute 10 minutes or until golden brown.
  • Return pork chops to skillet; lower heat to low; cover and simmer 5 minutes.

2 Granny Smith apples, peeled, cored and cut into thick wedges
2 cups thinly sliced onions
3 pounds savoy or napa cabbage (1 head)
1 cup chicken stock
4 double cut pork chops
2 teaspoons Essence, recipe follows
2 teaspoons kosher salt
1/4 cup all-purpose flour
1 cup Calvados
1/2 teaspoon caraway seeds
2 bay leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon freshly chopped thyme leaves
1 teaspoon freshly chopped marjoram
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Season both sides of the pork chops with the Essence and kosher salt. Lightly dredge in the flour.
  • Heat the olive oil in a large Dutch oven or heavy pot over high heat. Add the pork chops 2 at a time, and cook until lightly browned, about 2 minutes per side. Remove the pork chops and transfer to a platter. Repeat with the remaining pork chops and set aside.
  • Reduce the heat to medium-high, and add the apples and onions. Cook, stirring occasionally, until the apples and onions are golden brown, 3 to 4 minutes. Add the cabbage and cook, stirring, until wilted, about 5 minutes. Stir in the chicken stock, Calvados, caraway seeds, bay leaves, salt, pepper and herbs. Cook uncovered until sauce comes to a boil. Add the pork chops, cover, reduce the heat to a simmer and cook until the pork chops are fork-tender, about 1 1/2 hours.
  • Serve the pork chops with the cabbage and pan juices.

3 tablespoons cooking oil
1 cup finely chopped yellow onion
1 cup finely chopped green pepper
1 cup finely chopped celery
2 cloves garlic, finely chopped
1 (28 ounce) can whole canned tomatoes, undrained
3 tablespoons tomato paste
3 cups beef stock or 3 cups beef broth
1 teaspoon sugar
1 bay leaf
1 teaspoon ground oregano

2 tablespoons finely chopped parsley

Steps:

  • In a large, deep, heavy skillet with a lid, over moderately high heat, heat the oil and brown the pork chops for 3 minutes on each side.
  • Remove the chops as they brown, and keep warm in a 180 degree oven.
  • Reserve 3 tbls.
  • of the pan drippings, and pour off the excess.
  • Over moderate heat, with the pan drippings saute the onion, green pepper, celery and garlic, stirring for 5 minutes.
  • Add the tomatoes, tomato paste, beef stock, sugar, bay leaf, oregano, salt and pepper, and stir.
  • Reduce to moderately low heat, cover, and simmer for 30 minutes, stirring occasionally.
  • Return the chops to the skillet and cook covered for 30 minutes more, turning chops once.
  • Transfer the chops to a large, deep, heated platter, pour the sauce over the chops, sprinkle with pasrley and serve.

This is one of my dream-it-up recipes. I had some pork loin chops from a pork loin that I had had cut into chops on sale and an onion that I was worried would go bad before we got back from vacation. The preparation and cooking times are an estimate. The onion idea comes from a fast food restaurant that used to be in the area, Short Stop, that served Diablo Burgers: cheeseburgers with onions and bell peppers sauteed in butter and Tony's. I didn't have any bell pepper (plus I don't think it would have worked flavor-wise here).

4 boneless pork loin chops (1/2-3/4 inch thick)
1 -2 onion, halved lengthwise and sliced into half-moon slices, half rings separated
2 -3 tablespoons butter
1/2-1 tablespoon creole seasoning (such as Tony's)
1/2 cup flour (for dredging, NOT self-rising)
1/2-3/4 cup water

Steps:

  • In your largest, widest NONSTICK skillet, melt the butter over medium-high heat (I have a ten-level electric stove top -- so I melt it on 8).
  • Once it bubbles, add in the onion. Stir-fry/saute the onion in the butter. The key here is to make the edges of the onion brown and crispy. If the onion starts to get too dark for you, you can turn down the heat, but the goal is for the onion to brown -- not caramelize -- but turn mahogany.
  • Once the onion is softened and brown, dredge the chops lightly in flour. You are not making chicken fried pork steak here, so lightly is the key (a fine dusting).
  • Scoot the onion to one side of the pan with a nonstick-skillet safe spatula and place chops in the pan. Sear both sides of the chops.
  • Meanwhile, on the other side of the skillet, sprinkle Tony's over the onions and toss lightly to spread that Creole-y goodness. If you wish to reduce the sodium, you can use Tony's more spice or one of the Creole seasoning recipes on 'Zaar.
  • Once pork chops are cooked through, pour water over the contents of the whole pan and let the skillet simmer until the water and browned bits form a yummy pan sauce of the consistency you wish.
  • Note: You are NOT making gravy. That is why you don't want to use self-rising flour or too much flour. A little dab will do 'ya.
  • Note Part 2: It is extremely important that all of this be done in a single skillet because otherwise the pan sauce won't have the mixture of the onion, butter, pork browned bits, and Creole Seasoning. An electric skillet on a fairly high setting should be okay, as well.
  • Note Part 3: I served this with one of my twice-baked potato OAMC concoctions, but I think the pan sauce would be good over mashed potatoes or rice.

Since I don't really prefer cider as a beverage of choice, I thought it perfect that I could use it as an ingredient in a pork chop recipe I found in my Williams-Sonoma "Steak and Chop" book. Although I dont like to drink hard cider, I certainly enjoyed it in this pan sauce. I just used regular pork chops without the bone and thought they turned out fine. I'd defintely have this again, so I'm going to have to invite those friends over soon.....

1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dry mustard
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper

8 bone-in pork rib chops, about 1 inch thick, trimmed of excess fat or 8 pork loin
1 tablespoon olive oil
1 cup hard alcoholic cider or 1 cup apple juice
1/4 cup Dijon mustard or 1/4 cup creole mustard
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 -2 dash Tabasco sauce or 1 -2 dash other hot pepper sauce
1/4 cup heavy cream

Steps:

  • To make the spice rub, in a small bowl, mix together the paprika, garlic powder, onion powder, dry mustard, salt, black pepper, and cayenne.
  • Slash the edges of the chops in 2 or 3 places to prevent curling.
  • Sprinkle rub all over the chops and let stand at room temperature for at least 15 minutes or up to 1 hour.
  • Coat the bottom of a large, heavy frying pan with the olive oil and heat over medium-high heat. Add the chops, in batches if necessary to avoid crowding, and cook until lightly browned, about 3 minutes on each side.
  • Reduce the heat to medium and cook for 5-7 minutes longer, turning once or twice. Test the meat for doneness by inserting an instant-read thermometer away from the bone or by cutting into the meat close to the bone.
  • Remove from heat just before the meat is done, when the internal temperature is 145 degrees F (63 C). Pork loin is done when the internal temperature is 150F/65C, but it will continue to cook while resting).
  • Transfer to a platter and let rest, tented loosely with aluminum foil, while you prepare the pan sauce.
  • To make the pan sauce, add the cider to the same pan and deglaze by scraping up any browned bits from the bottom.
  • Bring to a boil and cook, stirring often, until reduced by half, about 5 minutes.
  • Reduce the heat to medium and whisk in the Dijon mustard, Worcestershire sauce, tomato paste, and Tabasco.
  • Cook for 2-3 minutes longer, whisking often.
  • Remove from the heat and whisk in the cream. Taste and adjust the seasoning.
  • Transfer the chops to individual plates. Spoon some of the sauce over the chops and serve. Pass additional sauce at the table.
