6 pork chops
Salt and pepper to taste
1 small onion, diced
1 (10.75 ounce) can cream of mushroom soup
1 cup dry white wine
1 (8 ounce) package sliced mushrooms, cleaned

Steps:

  • Heat a fry pan to medium-high. Season the pork chops on both sides with salt and pepper. Quickly brown the pork chops in the pan, 3 to 4 minutes per side. No need to cook them all the way, as they'll finish cooking in the oven. Remove them from the pan and set aside.
  • Preheat oven to 350 degrees F.
  • Leave the juices from the browned pork chops in the pan. Add the diced onion and saute until tender, about 5 minutes. Add the soup, white wine, and mushrooms. Stir until mixed. Remove from heat.
  • Add the browned pork chops, and any juices that may have accumulated, back into the pan with the sauce. Spoon some sauce on top of the pork chops. Cover and place in the oven; bake for about 45 minutes. Take the lid off and bake an additional 15 minutes. Serve with the sauce.

I am not a big fan of pork. However, my husband and children love pork chops. I came up with this recipe after I got tired of frying them in oil. I like to serve this on a bed of buttered pasta, with a nice mixed salad on the side.Enjoy!

6 boneless pork chops
2 tablespoons butter
2 tablespoons vegetable oil
1 small onion, minced
2 crushed garlic cloves
1 teaspoon Lawry's Seasoned Salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 cup dry white wine
1/4 cup water

Steps:

  • Season the pork chops with the seasoned salt, garlic powder, and pepper.
  • Melt butter over med. heat in a nonstick skillet, and when it is melted, add the oil.
  • Sear the pork chops three at a time, cooking about five minutes on the first side, and three to four minutes on the other side.
  • Transfer the seared pork chops to a plate or bowl while you sear the others.
  • After you are done searing, and have removed all of the pork chops to a plate, add the onions and garlic to the pan, and cook for three minutes.
  • Add the white wine, and reduce by half. Add the water, and pork chops, and lower the heat to low, and cover the pan.
  • Cook for about 20 minutes on low heat, or until the chops are tender, being sure to not let anything get stuck to the bottom of the pan.
  • Or,you can also take your pan, and put it in the oven on 325 degrees,for 20 minutes and you won't have to worry about anything getting stuck!

4 pork chops (about 1-inch thick)
Kosher salt and freshly ground black pepper
1 large onion (thinly sliced)
1/8 teaspoon dried thyme (about 1/2 teaspoon fresh)
1/8 teaspoon dried rosemary (crumbled, or about 1/2 teaspoon fresh chopped)
3/4 cup dry white wine (such as sauvignon blanc or chardonnay)
1/2 cup chicken broth, low sodium
1 teaspoon cornstarch
1 tablespoon water
1 teaspoon butter

Steps:

  • Heat the oven to 350 F/180 C/Gas 4.
  • Heat the olive oil in a large skillet or sauté pan over medium heat.
  • Sprinkle the pork chops lightly with salt and pepper. Brown the chops on both sides, about 8 to 10 minutes total. If the skillet is not oven safe, arrange the pork chops in a baking dish that is large enough to hold the chops in one layer. Cover with sliced onion.
  • In a bowl combine the thyme and rosemary with wine and chicken broth; pour over pork chops.
  • Cover the pan with a lid or cover the baking dish tightly with foil, and bake in the preheated oven for about 30 to 45 minutes or until tender and fully cooked. The minimum safe temperature for pork is 145 F.
  • Remove the pork and onions to a serving platter, and keep warm.
  • Use a gravy separator to remove the excess fat from the liquids. Strain the liquids into a saucepan or back into the skillet, and place the pan over medium-high heat. Bring the juices to a boil and boil for 1 minute to reduce slightly and concentrate the flavors.
  • In a small cup or bowl, whisk the cornstarch with the 1 tablespoon of water until smooth. Stir in the juices and continue cooking until thickened. Whisk in 1 teaspoon of butter and stir until melted.
  • Spoon the sauce over the pork chops and onions.

2 (1-inch thick) bone-in blade pork chops

  • Reduce heat to medium and add chopped onion to the same skillet. Cook until almost tender, 1 to 3 minutes. Add garlic and cook until fragrant, about 1 minute more. Add wine and bring to a boil; cook until reduced by half, 3 to 5 minutes more. Add tomatoes, chicken broth, and capers.
  • Return chops to the skillet, top with sliced onion, and spoon sauce on top. Reduce heat to low, cover skillet, and simmer until meat is tender when a knife is inserted in the center, 30 to 45 minutes.

2 pork chops
1 -2 tablespoon olive oil
1 head garlic
1 small apple, peeled and sliced
2/3 cup white wine
salt and pepper, to taste

Steps:

  • Preheat the oven to 200 C and put a baking dish in the oven while you preheat it.
  • Meanwhile, separate the cloves from the garlic head but do not peel them.
  • Smash the cloves with a knife.
  • Heat the oil in a pan and add in the garlic.
  • Fry for a couple minutes and put in the pork chops. Season with salt and pepper.
  • Brown for just 1-2 minutes on each side.
  • Put the chops and garlic in the pan that has been heating in the oven.
  • Meanwhile, put the apple in the pan and fry for a couple minutes.
  • Add the wine and let bubble until reduced by half.
  • Pour over the chops and bake for 12-15 minutes, braising with the juice if you like.
  • Take out and serve immediately with your choice of veggies.

3/4 cup flour
1 teaspoon salt
1/8 teaspoon pepper
1 tablespoon butter
2 medium onions, peeled and thinly sliced
3/4 cup dry white vermouth or 3/4 cup white wine (or broth)
3/4 cup water
2 sprigs fresh rosemary (4-inch) or 1/2 teaspoon dried rosemary

Steps:

  • Preheat oven to 350°.
  • Dredge chops by shaking in a paper bag with flour, salt, and pepper.
  • Melt butter in a heavy Dutch oven or large oven proof frying pan over moderately high heat and brown chops well on both sides, about 8-10 minutes.
  • Remove from heat.
  • Remove chops to pour in vermouth and water and scrape up any bits from bottom of pan.
  • Put chops back in pan and pan back on heat source and lay onion slices over chops.
  • Top with rosemary sprigs (if using dried rosemary, sprinkle evenly over all).
  • Cover and bake 1 hour or until chops are tender (or cover and simmer on top of stove on low heat for about 45 minutes to an hour).
  • Remove herb sprigs and serve, topping each portion with onions and a generous ladling of pan juices.

SIRLOIN PORK CHOPS BRAISED WITH HOT CHERRY PEPPERS



Sirloin Pork Chops Braised with Hot Cherry Peppers image

2 tablespoons extra-virgin olive oil
1/4 pound spicy cured sausage, (chorizo, andouille or soppressata) cut into 1/4-inch dice
1 medium yellow onion (about 6 ounces), chopped into 1/2-inch pieces
Coarse salt and freshly ground pepper
Coarse salt and freshly ground pepper
3 garlic cloves, minced
1/2 cup dry white wine or dry white vermouth
2 tablespoons white wine vinegar
3/4 cup chicken stock, homemade or store bought
2 1/2 pounds boneless pork sirloin chops (1/2-inch thick)
1 to 3 small pickled hot cherry peppers, with juice to taste

Steps:

  • Frying the sausage: Heat 1 tablespoon of the oil in a large deep skillet or shallow braising pan (12-inch) over medium heat. Add the sausage and fry, stirring often, until browned on most sides, 6 to 8 minutes. With a slotted spoon, transfer the sausage to a paper towel-lined plate to drain.
  • The aromatics and braising liquid: Pour off and discard the fat from the pan. Add the remaining tablespoon of oil and heat over medium heat. Add the onion, season with salt and pepper and saute, stirring, until the onion begins to soften and brown on the edges, 4 to 5 minutes. Add the garlic, stir and saute for another minute, until fragrant. Add the white wine, stir and scrape the bottom of the pan with a wooden spoon, and boil until the wine is reduced by about half, about 4 minutes. Add the vinegar, stir, and boil for a minute or two. Add the stock and bring to a simmer.
  • The braise: Season the pork all over with salt and pepper. Add the chops to the skillet, and immediately reduce the heat to a gentle simmer. One by one, tear the peppers into small pieces, discard the seeds and stems, and adding the pieces to the skillet. (I like to hold them over the skillet while I tear them so that the juices fall directly into the pan. The only trouble with this approach is that a few errant seeds will fall in too, making the dish spicier still. If you'd prefer to minimize the peppers' heat, tear them over a cutting board so that any juices drip onto the board, then scrape every last seed to the side, and add the peppers and as much of the juices as you like to the skillet.) Cover the skillet and braise the pork quietly, checking after 5 minutes to see that the liquid is not simmering too furiously. If it is, lower the heat or set a heat diffuser beneath the pan. After 20 minutes, turn the pork with tongs. Continue to braise at a gentle simmer until the pork is fork-tender, about 40 minutes total.
  • The finish: Transfer the chops to a platter or plates and cover loosely with foil to keep warm. Bring the cooking juices to a boil over medium-high heat. Skim any surface fat with a large spoon. Boil until the juices are tasty and slightly thickened, 8 to 10 minutes. Lower the heat to a simmer, add the sausage to the sauce, and simmer for about 3 minutes to heat through. Taste for salt and pepper. Spoon over the pork and serve.

1 teaspoon dried sage, crumbled
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon fresh garlic, finely chopped
1 teaspoon salt

4 pork loin chops, very lean about 1-inch thick center-cut
2 tablespoons margarine
1 tablespoon olive oil
3/4 cup dry white wine
1 tablespoon fresh parsley, finely chopped

Steps:

  • Trim all visible fat from chops. Combine first 5 ingredients and press into both sides of the pork chops.
  • Melt margarine with olive oil in a skillet over moderate heat. Brown chops for 2 or 3 minutes on each side. When chops are golden brown, remove from the pan.
  • Pour off all but a thin film of fat from the pan and add 1/2 cup of the wine and bring to a boil. Replace pork chops in the pan and cover reducing heat to the barest of simmers. Baste chops occasionally with pan juices and cook for 25 to 30 minutes or until tender.
  • Transfer pork chops to a heated serving platter and keep warm. Pour remaining wine into pan and boil briskly scraping browned bits from the bottom of the pan until sauce has reduced to a few tablespoons of syrupy glaze. Remove pan from heat and stir in parsley.
  • Pour sauce over the pork chops and serve.

4 slices pork chops ( , around 1 cm in thickness)
4 tbsp. starch ( , cornstarch or sweet potato starch)
1.5 tbsp. water
2 green onions ( , cut into 1-inch section)
1 green onion ( , finely chopped)
1 small thumb ginger ( , sliced)
2 tbsp. light soy sauce
1/2 tsp. sugar
oil for frying
1 tbsp. light soy sauce
1/2 tbsp. rice wine
1/8 tsp. white pepper
a small pinch of salt

Steps:

  • Pound the pork chops back and forth with a pounder or the back of a knife (Chinese way) then marinate with rice wine, white pepper, salt and light soy sauce for 10 to 15 minutes.
  • Mix 4 tbsp. of starch with 1 and 1/2 tbsp. water in a small bowl. Then mix with marinated pork chops.
  • Heat oil to 160 degree C (almost smoky) and then fry the pork chop one by one until well browned.
  • Heat around 1 tbsp. of oil in a pan and fry ginger and green onion over slow fire until aroma. Then place fried pork chops in, add a small pinch of salt, sugar and light soy sauce. Simmer for 1 to 2 minutes. Pick the pork chops out, discard the ginger and green onion, and keep the sauce to pour over.
  • Sprinkle chopped green onion and serve directly. Recommend serving with steamed rice.

2 tablespoons olive oil
3 tablespoons butter
Kosher salt and freshly ground black pepper
4 bone-in T-bone pork chops, 1 inch thick
16 cloves garlic, peeled
1 1/2 cups red wine
1 bay leaf
1/2 cup beef broth, plus more if needed
1 tablespoon balsamic vinegar
Lemony Green Beans, recipe follows, for serving, optional
1 pound thin green beans
2 tablespoons butter
Zest and juice of 1 lemon
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the oil and 2 tablespoons of the butter in a heavy skillet over high heat. Salt and pepper both sides of the pork chops and sear them until they're nice and golden, about 2 minutes per side. (No need to completely cook the chops at this point.) Remove the chops from the skillet and set aside.
  • Reduce the heat to medium high, then throw in the whole cloves of garlic. Stir them around and cook until they get nice and golden brown, a couple minutes. Pour in the red wine, then add the bay leaf. Stir it around and cook, raising the heat if necessary, until the sauce is reduced and thick, several minutes.
  • Stir in the beef broth (you can add more if it needs the liquid) and add the chops back to the skillet, arranging them so they're swimming in the sauce. Cook the chops in the sauce for a few minutes, then add the balsamic. Shake the skillet to get it to distribute, then cook for a couple more minutes, or until the pork chops are done.
  • Remove the chops from the skillet once more, then let the sauce reduce a little more if needed, until it's very thick and rich and the garlic is soft. Swirl in the remaining 1 tablespoon butter and sprinkle in a little salt and pepper.
  • Arrange the pork chops on a platter, then pour the whole skillet of sauce (including the garlic) over the top. Serve with Lemony Green Beans if desired.
  • Snap off the stem ends of the green beans or cut them off in a big bunch with a knife.
  • Heat a pan over a medium heat and add the butter. (It helps to use a pan with a light-colored bottom, so you can keep track of the color.) Swirl the pan occasionally so the butter cooks evenly. As the butter melts, it will begin to foam. The color will progress from lemony yellow to golden tan to, finally, a toasty brown.
  • Once you smell that nutty aroma, add the green beans and saute for 3 to 4 minutes so the beans take on a little color. Add the lemon zest and juice, salt and pepper, then transfer to a platter in batches with tongs.

  • Dissolve salt into water and bring to room temperature; add pork chops and brine for at least half-hour. If brining for more time, place chops in brine and then into a refrigerator. Take out from the fridge a half hour before cooking.
  • While your meat is brining, cut up bacon and add it to a clean pan on a low heat; cook until crispy for about 5 minutes; set aside;

  • In a large enameled cast-iron casserole, heat the olive oil until shimmering. Season the pork chops with salt and pepper and add them to the casserole. Cook over moderately high heat, turning once, until golden, about 7 minutes total. Transfer the chops to a plate.
  • Add the onion, carrot, celery, garlic and a generous pinch each of salt and pepper to the casserole and cook over moderately high heat, stirring, until the vegetables just start to soften, about 5 minutes. Add the stock, thyme, bay leaves and 2 cups of the milk and bring to a simmer. Return the pork chops to the casserole, cover and braise over very low heat until tender, about 2 hours.
  • Meanwhile, in a large saucepan, cover the potatoes with water and bring to a boil. Add a generous pinch of salt and simmer over moderate heat until the potatoes are tender, about 20 minutes. Drain. Add the cream and 4 tablespoons of the butter to the saucepan and warm over low heat until the butter is melted. Pass the potatoes through a ricer into a bowl, then stir in the warm cream-butter sauce. Season the mashed potatoes with salt and pepper; keep warm.
  • Transfer the pork chops to a platter and cover with foil. Spoon 4 cups of the braising liquid and vegetables into a blender, discarding the bay leaves, thyme sprigs and remaining vegetables and liquid. Puree the vegetable sauce until smooth.

Cover, transfer to preheated oven, and roast until a thermometer inserted in thickest portion of meat registers 130°F, about 30 minutes.
  • Remove pan from oven. Transfer pork to a cutting board; let rest 5 minutes. Meanwhile, add orange peel strips to mushroom mixture in pan. Bring to a boil over medium-high; boil until sauce has slightly thickened, about 3 minutes. Discard orange peel strips, rosemary, and thyme.
