PORK POT ROAST
Steps:
- Preheat oven to 350 degrees F.
- Place stock in a sauce pan and heat to hot. Keep burner on low while you sear the pork.
- Salt and pepper all sides of the pork butt. You may use all or some of the salt and pepper listed.
- Heat the olive oil over high heat in a large Dutch Oven and once shimmering hot, start searing the pork. Sear it for 4-5 minutes on each side, including top and bottom. Remove to a platter and lower heat to medium.
- Add the onion, celery and tomato paste and cook for three minutes, stirring often.
- Add pork back in along with hot stock and the parsley.
- Cover and place in the oven for two hours.
- While the roast is cooking, prepare the vegetables and make the roux.
- To make the roux, in a small sauce pan over medium low heat, melt the butter and add the flour. Stir with a wooden spoon and cook for 4-5 minutes until starting to a turn golden color. Set aside.
- After the two hours, remove the pot from the oven and remove the pork and parsley. Discard the parsley.
- With an immersion blender, puree the liquid, onion and celery.
- Add the carrots, potatoes and red onion back into the pot with the liquid and place the pork on top. Cover and cook 40 more minutes.
- Remove from oven and add the green beans. Cover and cook 20 more minutes.
- Remove the pot from the oven and remove the pork to your cutting board and the vegetables to a platter.
- Over medium heat, add all of the roux to the liquid in the pot while whisking and then add the gravy color. Cook for a few minutes and pour into gravy boats. Strain if necessary.
- Slice the pork against the grain into thick slices and serve with the vegetables and gravy.

- Sprinkle chops on all sides with thyme, salt, and pepper. Place on a baking sheet.
- Bake in the preheated oven until a meat thermometer inserted into the thickest part of a pork chop reads 165 degrees F (74 degrees C), about 20 minutes. Tent aluminum foil over the chops and let rest 5 to 10 minutes before serving.

- Heat oven to 200C/180C fan/gas 6. Put the potatoes, fennel, pepper, thyme and garlic in a large roasting tin. Mix together the tomato paste and stock, then pour into the pan. Tightly cover with foil and cook for 30 mins. Take out of the oven and increase the temperature to 220C/200C fan/gas 7.
- Remove the foil and place the pork in the roasting tin, nestling in between the veg. Season well and return to the oven for 15-20 mins more or until golden brown and cooked through. Serve with the pan juices drizzled over.

ONE POT PORK ROAST DINNER (OR BEEF)
This was a favorite of mine growing up that my Mom used to make (likely still does). It is really good, a great tasing gravy type sauce, a whole meal in one and it tastes like you worked hard. Great meal for company when you dont want to spend the day in the kitchen. The meat can also be cup up, mixed with the veggies and made into a stew for freezing afterwards, good on bread too. I have done beef and pork roasts this way.

- Put meat in a roasting pan surrounded by onions, carrots and celery.
- Sprinkle all over the top of meat and veggies: oregano, garlic powder or use a clove or 2 of fresh, onion powder, salt, pepper, thyme or rosemary pour 2 cans cream of anything soup (like mushroom) on top.
- dump a 24 oz can of whole or stewed tomatoes over top.
- Bake covered at 300 til tender (usually 3-4 hours like any pot roast).
- When done throw all veggies in a bowl with sauce and roast on a plate.

- In a small bowl, whisk the first nine ingredients until blended. Place onion in a 5-qt. slow cooker. Place roast, potatoes and carrots over onion. Pour sauce mixture over top. Cook, covered, on low 6-8 hours or until pork and potatoes are tender., Remove roast and vegetables from slow cooker; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Bring to a boil; cook and stir 1-2 minutes or until thickened. This is how my mother-in-law taught me how to cook a pork roast when I was a new bride - 1959! I have updated it a little. At that time, I didn't know how to boil an egg.

- Rub the roast all over with thyme, sage and salt and pepper.
- Heat a heavy dutch oven over medium-high heat. Add oil to pan and brown the roast on all sides. Remove roast and saute the onion and garlic. Put the roast back in the pan and add water and reduce heat to medium or medium-low. Cover and simmer until done - about 2 hours. Turn the meat occasionally as water evaporates and then add a little more water.
- To make gravy, remove roast and add the wine and 1/2 cup water to pan. Bring to boil and scrape up brown bits on the bottom of the pan. Bring to a boil until reduces a bit and then add the flour-water paste and whisk in slowly to avoid lumps till reaches the desired thickness. Taste for seasoning.
- If desired, cook 6 small potatoes, 2 medium onions, quartered, 4 medium carrots, peeled and cut into 3 inch pieces and 1 pound button mushrooms in with roast. Add the last hour of cooking.

- 1. In lg dutch oven brown the floured and seasoned chops until brown. Add onions, celery and thyme to pan and saute until onions are translucent. Add cut carrots first, return chops as next layer and finally potatoes. Add gravy mix to water and stir to mix well. Pour mixture over other ingredients in dutch oven. Bring to a boil and simmer, stirring occasionally to prevent stickiing. Dinner is ready when potatoes are fork tender. This can also be cooked in the oven for 30min at 375 until potatoes are done.
