6 (6 ounce) boneless pork loin chops
3 tablespoons butter
¾ cup white wine vinegar
¼ cup water
salt and pepper, to taste
4 anchovy fillets, chopped
2 teaspoons softened butter
½ teaspoon all-purpose flour

Steps:

  • Pound pork chops to 1/4 inch thickness. Melt 3 tablespoons of butter in a skillet over medium-high heat and brown pork on both sides, about 2 minutes per side. Drain fat. Pour water, vinegar, salt, and pepper in pan. Bring to a simmer, then reduce heat to medium-low, cover, and cook chops until tender, about 30 minutes. Remove chops from skillet, leaving juices, and place on a platter to keep warm.
  • Mash the anchovy fillets together with 2 teaspoons butter, and 1/2 teaspoon flour. Whisk this paste into the simmering liquid to thicken. Cook and stir until the liquid has thickened and the flour is no longer grainy, 3 to 4 minutes. Pour sauce over pork chops to serve.

1 1/2 lbs pork shoulder or 1 1/2 lbs pork butt, cut into 1-1/2" cubes
1/3 cup vinegar
2 tablespoons soy sauce
1 teaspoon salt
3 cloves garlic, minced
1 small bay leaf
1/4 teaspoon pepper
1 tablespoon sugar
1/2 cup water
2 tablespoons cooking oil

Steps:

  • Combine all ingredients except cooking oil in a pot and let stand for at least 30 minutes.
  • Simmer covered for 1 hour or until meat is tender.
  • Drain and reserve the sauce.
  • Heat cooking oil in a skillet.
  • Brown meat on all sides.
  • Transfer to a serving dish.
  • Pour off all remaining oil from skillet.
  • Add reserved sauce and cook for a minute or two scraping all browned bits sticking to pan.
  • Pour sauce over meat and serve.

1 (3 1/2 pound) pork belly
2 tablespoons sea salt, plus more as needed
Extra-virgin olive oil, as needed
Freshly cracked black pepper
Caramel Vinegar, recipe follows
Bok Choy with Sweet Soy and Lime, recipe follows
Freshly chopped red chile, for garnish
1/2 cup brown sugar
1/3 cup red wine vinegar
2 star anise
1 cinnamon stick
1 cup chicken stock
Juice of 1 orange and 4 wide strips of orange peel
Sea Salt and freshly ground black pepper
1/2 cup soy sauce
1 1/2 tablespoons caster sugar (superfine)
1 1/2 tablespoons lime juice
3 bunches baby bok choy (pak choy)

Steps:

  • Score the skin of the pork belly in a criss-cross pattern using a sharp knife. Rub the sea salt into the pork skin, and set the meat aside for 30 minutes.
  • Preheat the oven to 425 degrees F.
  • Wipe the salt from the pork skin with a paper towel and dry well. Drizzle a large roasting pan with enough olive oil. Place the pork belly in the pan, skin-side down, and drizzle with additional olive oil and season with salt and pepper, to taste. Sear the pork in the preheated oven for 30 minutes. Then, reduce the oven temperature to 375 degrees F and continue roasting for another 1 1/2 hours. At this point, carefully turn the pork over and roast for another 20 minutes, or until the skin is crisp.
  • Remove the pork from the oven, tent the meat loosely in foil and set it aside to rest for at least 15 minutes. Slice the pork belly and drizzle it with some caramel vinegar. Serve with steamed rice, Bok Choy, and freshly chopped red chile.
  • Serving suggestion: steamed rice.
  • Put the sugar, vinegar, star anise and cinnamon in a small saucepan and cook, stirring, over medium heat until the sugar has dissolved. Bring to the boil and simmer for 5 minutes, or until the mixture is syrupy.
  • Stir in the chicken stock and simmer for another 5 minutes, or until slightly reduced. Add the orange juice and peel, reduce the heat to low and simmer gently until thick and syrupy. Season to taste.
  • Put the soy sauce and sugar in a small saucepan over low heat and stir to dissolve the sugar. Simmer until the soy sauce has reduced by half. Remove from the heat and stir in the lime juice.
  • Blanch or steam the bok choy until it is bright green and tender crisp. Drizzle with the sweet soy and lime and serve immediately.

Salt and freshly ground black pepper
1 tablespoon peanut oil
1 tablespoon unsalted butter, plus 1 tablespoon
7 tablespoons sherry wine vinegar
3 tablespoons sherry
1 cup brown veal stock
1 tablespoon barbecue sauce
1 1/2 tablespoons Dijon mustard
2 tablespoons peeled, seeded, and chopped tomatoes
1 teaspoon minced chives

Steps:

  • Preheat the oven to 425 degrees F.
  • Pat the pork chops dry with paper towels and season on both sides with salt and pepper. Place a heavy saute pan over high heat. When the pan is hot, add the oil and 1 tablespoon butter to the pan and swirl to coat the pan evenly. Add the pork chop to the pan and sear for 2 to 3 minutes on the first side. The chops will turn golden brown as the natural sugars in the pork caramelize and create a nice crust. Turn the chops and sear on the second side for 1 minute. Transfer to the oven and cook to desired doneness. It should take about 10 to 12 minutes in the oven for the pork to be just cooked through and juicy.
  • Remove the pork from the oven and place the pork chops on a plate to rest while you make the sauce. Loosely cover with foil. Remove the excess fat from the pan and return the pan to the burner. Turn the heat to medium high. Carefully deglaze the pan with the sherry vinegar and sherry and scrape up the brown bits on the bottom of the pan with a wooden spoon. Add the veal stock and barbecue sauce and bring to a boil. Reduce the heat to a simmer and reduce until slightly thickened, about 4 minutes. Whisk in the Dijon mustard and the remaining 1 tablespoon butter and whisk to combine. Garnish with chopped tomatoes and minced chives.
  • Serve the pork with the sauce.

1 ½kg pork shoulder , cut into 4cm/11/2in pieces
3 tbsp soy sauce
200ml Shaohsing rice wine (or dry Sherry)
2 tbsp vegetable oil
2 garlic cloves , thinly sliced
5cm/2in piece ginger , peeled and julienned
50g light brown soft sugar
3 tbsp oyster sauce
125ml Chinese black vinegar (see tip)
500ml vegetable stock
1 long or 2 bird's-eye red chillies , sliced
1 shallot , thinly sliced
75ml rice wine vinegar
toasted sesame seeds
julienned spring onions
steamed rice

Steps:

  • Put the pork in a bowl and add 1 tbsp each of the soy sauce and rice wine. Toss to combine, then cover and chill for 1 hr, or overnight if time permits.
  • To make the pickled chillies, put the chilli, shallot and rice vinegar in a small bowl with a big pinch of salt, and let stand for 1 hr or more.
  • Heat the vegetable oil in a heavy- based saucepan over a medium heat, add the garlic and ginger, and sauté for 2-3 mins or until golden. Add the pork and all the remaining ingredients, and bring to the boil. Reduce the heat to low, cover and simmer for 45 mins. Remove the lid from the pan to allow the liquid to reduce, and cook for a further 45 mins or until the meat falls apart.
  • Serve scattered with the sesame seeds and spring onions, with steamed rice and the pickled chillies on the side.

1/4 cup minced shallots

1 cup canned low-salt chicken broth
6 fresh ripe figs, quartered
1/2 cup whipping cream
1 tablespoon minced parsley

Steps:

  • Preheat oven to 200°F. Sprinkle pork with salt and pepper. Heat 1 tablespoon oil in heavy large skillet over medium-high heat. Add 4 pork slices and sauté until brown, about 2 minutes per side. Transfer pork to baking sheet. Add remaining 1/2 tablespoon oil to skillet. Repeat with remaining 4 pork slices. Transfer pork to oven to keep warm.
  • Melt 1 tablespoon butter in same skillet over medium-high heat. Add shallots and sauté until tender, about 2 minutes. Add 2 tablespoons vinegar. Simmer until vinegar evaporates, scraping up any browned bits on bottom of skillet, about 1 minute. Add chicken broth. Simmer until mixture is reduced by half, about 4 minutes. Add figs and whipping cream. Simmer until sauce thickens slightly, about 4 minutes. Add remaining 1 tablespoon vinegar and any accumulated juices from pork. Simmer until sauce thickens enough to coat spoon, about 2 minutes longer. Season sauce to taste with salt and pepper.
  • Arrange pork on plates. Spoon sauce over. Sprinkle with parsley and serve.

Steps:

  • Heat the oil in a large skillet over medium-high heat. When the oil is very hot, pat the chops dry with paper towels. Sprinkle with salt and pepper. Cook the chops, turning once, for about 5 minutes on each side, or until browned.
  • Lower the heat to medium and scatter the garlic around the chops. Cover the pan. Cook for 5 to 8 minutes more, or until the chops are just slightly pink when cut near the bone. Do not overcook, or the chops will be dry. Transfer the chops to a plate and keep warm.

Coarse salt
1 teaspoon fennel seeds, toasted
1/2 teaspoon red-pepper flakes
3/4 cup orange marmalade
1/4 cup red-wine vinegar
1 sprig rosemary
4 cloves garlic, peeled and smashed
2 cups uncooked couscous
2 teaspoons extra-virgin olive oil
2 cups boiling water
1 bunch watercress, tough stems removed, 1/2 cup finely chopped, the rest left in whole sprigs, for serving
Flaky sea salt, such as Maldon, for serving
1 small orange, cut into wedges, for serving

Steps:

  • Very generously season pork with coarse salt and place in a 5- to 6-quart slow cooker. In a small bowl, mix together fennel seeds, red-pepper flakes, marmalade, vinegar, rosemary, and garlic; pour over pork. Cover and cook on low until meat is pull-apart tender, about 8 hours.
  • Meanwhile, combine couscous, 1/2 teaspoon coarse salt, and oil in a bowl; add boiling water. Stir, cover, and let stand 10 minutes. Fluff with a fork; stir in chopped watercress.
  • Transfer pork to a large bowl with a slotted spoon. Strain sauce through a fine sieve, discarding solids. Skim fat from surface of sauce.
  • Spoon pork and sauce over couscous in serving bowls. Sprinkle flaky salt over pork, and top with watercress sprigs. Squeeze orange wedges over dish and serve immediately.

3kg boned and rolled pork shoulder , skin scored
200g salt
100g caster sugar
300ml cider vinegar
3 tbsp dried sage
1 tsp dried thyme
2kg Maris Piper or King Edward potatoes, peeled and finely sliced - a mandoline is good for this
10 garlic cloves , thinly sliced
3 onions , sliced
1 tbsp picked thyme leaves
500ml chicken stock

Steps:

  • The day before roasting, mix the salt, sugar, vinegar, sage and thyme in a large mixing bowl, then roll the pork in the brine, cover and chill overnight, or for up to 24 hrs.
  • Heat oven to 140C/120C fan/gas 1. Tip the potatoes, garlic, onions and thyme into a large roasting tin and toss together with some cracked black pepper, then pack down with your hands and pour over the stock. Remove the pork from the fridge, pat dry with kitchen paper and sit it skin-side up in the middle of the potatoes. Roast for 4 hrs, pushing the potatoes down occasionally so they don't burn.
  • If you're happy with the crackling, leave to rest for 15 mins. If not, sit the pork on a shallow roasting tray and turn the oven up to 220C/ 200C fan/gas 7 and roast for 20 mins more or until the skin is crisp, then leave to rest for 10 mins. Check your potatoes - if they are swimming in pork juices, pour some off. Carve the pork and serve with the potatoes, rhubarb compote and stir-fried cumin carrots.

This is a very good dish. The balsamic vinegar is delicious when you reduce it, very sweet. The tenderloin is moist and fork tender.

olive oil
1 large onion, roughly chopped
3 -4 garlic cloves, roughly chopped
1 (1 lb) pork tenderloin
balsamic vinegar
kosher salt
fresh ground pepper

Steps:

  • Pre-heat oven to 350 degrees.
  • In a large skillet, I use 12" skillet, pour enough olive oil to coat the bottom of the pan. Sweat the garlic and onion together, do not burn the garlic, it will become too nutty. Once the garlic and onion is cooked down, the onion is tranparent, remove from the oil and place in a 9X13 pan. I usually take the ground pepper and salt and mix them together so that coating the pork is easier. Take the pork out of the vacume sealed bag, rinse and pat dry. Take the salt and pepper and pat onto the pork, sear on all sides. After searing on all sides, place in the 9X13 pan on top of the garlic and onions. Deglaze the pan with the balsamic vinegar, reduce and then pour over the pork, onions, and garlic. Place in middle rack for about 20-25 minutes until middle of pork is about medium well to well done.
  • When serving, I slice the pork and then take the glaze and onion/garlic mixture and pour over the pork. It's delicious -- ENJOY.
