Steps:
- In a bowl, season the pork chunks and shrimp with salt and pepper.
- Prepare a non-stick wok on high heat and sauté the shrimp in vegetable oil for 3 minutes or less.
- When the shrimp is cooked, set aside.
- Using the same wok, add more oil and sauté the pork chunks until it is fully cooked.
- Later, transfer the cooked pork onto a separate bowl
- Then, pour some more vegetable oil into a wok lower to medium heat.
- Add in the frozen peas, diced onions and garlic.
- Stir fry them until the peas are soft and the onions are almost clear.
- Once that is done, add in the cooked rice and mix them together. Constantly mix the ingredients so that the rice does not stick to the wok.
- Add more oil if needed then add in the soy sauce and sesame oil and keep mixing.
- Then add in the beaten eggs. Stir well so that the egg scrambles and combines well with the rice.
- Add in salt and pepper to taste.
- Finally, throw in the already sautéed pork and shrimp.
- Stir for about 2 to 4 minutes, ensuring the egg is cooked all the way and that the ingredients are well mixed.
- Transfer the fried rice onto a plate or bowl, top it with some chopped green onions and serve!

- Bring water and bullion cubes to a boil.
- Add rice and return to a boil, reduce heat, cover, and simmer 5 minutes.
- Remove rice from heat, let stand 3 minutes. (The rice should be slightly undercooked so that it won't be sticky to work with).
- In a small bowl, combine soy sauce, oyster sauce and sesame oil.
- Heat oil in a wok or frying pan over high heat.

SHRIMP FRIED RICE

- Heat a wok or large heavy skillet over high heat. Add 2 tablespoons of the peanut oil and swirl to coat the wok. Add the shrimp and stir-fry just until pink, about 2 minutes. Remove shrimp and reserve. Add eggs to wok and scramble until set, but still slightly runny. Remove from pan, breaking into bite-sized pieces, and wipe wok clean.
- Return wok to heat, add remaining 2 tablespoons peanut oil, and swirl to coat the wok. Reduce the heat to medium-high, add the onions, garlic, and ginger and stir-fry until onion is half-cooked, 1 minute. Add the red pepper and stir-fry until just tender but still crisp, about 2 minutes. Add the cold rice, quickly spreading it all over the wok and tossing it to heat through, then fry for about 5 to 7 minutes. (Add a little more oil if the rice is sticking.) When the rice is hot, add the peas and toss to heat through, about 1 minute. Add the pork, reserved shrimp, eggs, and salt, and stir fry to heat thoroughly, 1 to 2 minutes. Serve immediately on a large platter.

- Pork: In medium bowl, add soy and oyster sauce, ginger and garlic, and sesame oil. Add pork and let marinate for 1 hour in the refrigerator.
- Heat grill to medium-high, and grill pork on both sides until done. Heat remaining marinade to 165 degrees F and use to baste meat as it cooks. When meat is almost cooked through, glaze both sides with sweet and sour sauce and let finish cooking while sauce caramelizes on meat. Remove from grill, allow to stand for 10 minutes, and cut into 1/2-inch pieces.
- Rice: While pork is standing, heat oil in wok or large skillet on high heat until oil almost begins to smoke. Add ginger, as well as all vegetables except garlic. Cook for 3 minutes, or until vegetables are cooked, then add garlic. Before garlic browns, add rice and mix rapidly so rice does not stick to sides of wok or pan.
- Once entire mixture is thoroughly combined, pour beaten eggs over rice and vegetables, and toss again rapidly until all egg is cooked. Add the soy sauce, oyster sauce, and sesame oil. Mix thoroughly and then add pork.
- Garnish with green onions and sesame seeds. Serve immediately.

- In a large wok, heat oils on high heat. Add garlic, ginger, and pork. Stir-fry until pork is nearly cooked - about 2 minutes. Add shrimp, and stir-fry until shrimp is nearly opaque. Be careful to not overcook. Remove to a large bowl.
- Add bell pepper and sugar snap peas to the hot wok. Stir-fry 1-2 minutes, until the bell pepper barely begins to soften. Add the bean sprouts, and stir-fry an additional minute. Remove to the bowl with the shrimp and pork.
- In a separate non-stick saute pan coated with cooking spray, cook the eggs as for an omelet. Flip when the eggs are set, and turn off the heat.
- At this point, you may wish to add a bit more oil to the wok. Whisk the soy sauce, oyster sauce, and sriracha sauce together. When the wok is hot, add the cooked rice to the wok. Give it a good stir, and then add the soy sauce, sriracha sauce, and oyster sauce. Stir-fry over high heat to combine the sauces with the rice. Continue stir-frying the mixture until the ingredients are well-combined.
- Return the shrimp, pork, and vegetables to the wok. Stir-fry to combine all ingredients. Turn off the heat on the wok.
- Slide the omelet on to a cutting board. Cut in half and then julienne.
- Garnish the fried rice with scallions and julienned egg. Serve.

SHRIMP AND EGG FRIED RICE
This fried rice is a favorite of Hubby's and also was well-received by guests. It's easy to whip up quickly if you need to. I try to use the minimal amount of meat needed to give it good flavor to the whole dish when I make it just for the two of us. You may want to increase to 1/2 lb shrimp if serving to guests. Hubby actually prefers this using 1/2 lb pork in place of the shrimp, but this is healthier. Sometimes I sub fake crab for the shrimp. It ends up a little sweeter but still good. Scallops are also a delicious option.

- If using frozen shrimp, defrost under cold running water, then clean, de-vein, and remove tails of shrimp. If using cooked shrimp or crab, add it when the veggies are almost done.
- Heat 1 tablespoon of sesame oil in wok on medium high heat. When oil is hot, add shrimp and stir-fry until pink. Then remove them from wok.
- Add garlic and white onion to wok, and after they are soft add the other veggies. You can really use just about any veggie with this.
- When veggies are mostly done, move them to the sides of the wok, creating a hole of bare pan on the bottom. Pour in beaten egg. Let it scramble a bit and break it into smaller pieces.
- Add rice to the wok, and return shrimp to the wok. Add the green onions, and the five spice powder and soy sauce to taste. Add 1 tablespoon more oil to the rice. Stir to fry the rice and combine the seasonings. Add vegetable oil if you need more oil.

The inspiration for this dish came from when I was attending college back at home in Ireland and I would always order a 5-spice chicken with noodles at a lunch spot in between classes. Ever since then I've just loved the sweet, spicy and earthy flavor of 5-spice; it also pairs beautifully with pork.

- Preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the hoisin sauce, soy sauce, brown sugar, vinegar and 5-spice powder in a small saucepan. Cook over medium heat, stirring, until the sugar dissolves, 2 to 3 minutes. Set aside and let cool.
- Put the tenderloin on the prepared baking sheet. Brush all over with the sauce and roast in the oven until the internal temperature on an instant-read thermometer reaches 140 degrees F, 15 to 20 minutes. Slice 1/2-inch thick.

This is a fried rice that I have been making for a long, long time. You can add whatever you want to this basic recipe. We like it as is, but you may add chicken, shrimp, pork, or beef. Also, you may add scallions instead of onions, two eggs instead of one, grated carrots or zucchini or more mushrooms. You may add canned bean sprouts or sliced green pepper if you want. It is so versatile. If you add a lot of extras, you may need more soy sauce and brown sauce. This is the basic recipe.

- Combine rice and water in a bowl and swish with your hands until water is cloudy. Drain and repeat several times until water is clear. Combine the rice with 11/4 cups water and cook, covered, over medium heat until tender, 25 to 30 minutes. Fluff and set aside.
